I had to come up with this quick. Every Thanksgiving my mom serves Green Giant Niblets corn in butter sauce and I promised I would pick it up for her and bring it on Thanksgiving day. When I went to the store, they were sold out! I made this recipe and brought it already prepared to Thanksgiving dinner. Nobody was the wiser! I saved some money too, because I used store brand corn! This recipe makes a lot...you may want to half it.

2 (16 ounce) bags frozen corn (yellow "or" shoepeg white, any brand)
2 teaspoons salt
1/2 cup butter, cut up
1 teaspoon sugar
1 cup water
1 1/2 teaspoons cornstarch

Steps:

  • Add corn to large sauce pan along with all ingredients except water and cornstarch.
  • Stir corn mixture over medium heat until butter is melted.
  • Combine water and cornstarch and stir until cornstarch is disolved.
  • Slowly add water to corn in sauce pan, stirring constantly.
  • Reduce heat to simmer and stir until sauce thickens.
  • Let simmer, stirring occasionally, until corn is tender, about 10 minutes.

Steps:

  • Wet a paper towel, and wring out. Wrap the ear of corn in the moist towel, and place on a dinner plate. Cook in the microwave for 5 minutes. Carefully remove paper towel, and enjoy!

Frozen corn in a butter sauce that sweet, tangy, and delicious! Great FAST side dish for any supper. . .it would even be perfect for a potluck or holiday. This is my twist on TISME's Recipe #302284 which we love, but we like the savory AND sweet and we don't always have the time to make corn on the cob (but we always have frozen corn on hand).

1 (16 ounce) bag frozen corn
4 tablespoons salted butter
1/4 teaspoon pepper (more to taste)
3 tablespoons fresh parsley, finely chopped
2 teaspoons honey
2 teaspoons Dijon mustard
1/2 teaspoon dried onion flakes

Steps:

  • In a glass bowl (large enough to hold your corn), melt butter in microwave using 20 second intervals and stirring in between.
  • When melted, stir in honey, mustard and pepper until smooth.
  • Add minced onion, parsley and corn; stir to combine.
  • Cook (covered) in microwave on high for 2 minutes, remove and stir. Continue to cook at 1 minute intervals (removing to stir in between) until corn is hot and ready to serve. Mine usually takes 4 minutes total.

I found this in a Food Ideas magazine, and clipped it out for keeping. I have only just got around to making it and this is now my favourite way to cook corn. The family loved it and the mustard and honey is just delicous! I have also made corn and instead of microwave I put it on the B.B.Q. also very very nice!

4 corn cobs, husks on
60 g butter, softened
1 tablespoon honey
3 teaspoons Dijon mustard
2 tablespoons flat leaf parsley, chopped

Steps:

  • Peel back corn husks and remove silks. Re-tie corn husks with un-waxed string. Soak corn in a bowl of cold water for 5 minutes. Remove. Shake off any excess water.
  • Place corn, on a microwave-safe plate. Microwave on HIGH (100%) for 5 minutes. Turn corn over and microwave on HIGH (100%) for a further 5 minutes. Stand for 5 minutes.
  • Using a wooden spoon, beat butter, honey, mustard, parsley and salt and pepper together until combined. Carefully remove husks from corn.
  • Cut corn in half (I leave mine whole). Place in a bowl. Add butter mixture and turn to coat.
  • Serve.

Simple and quick. Different from the other recipes in that the corn is wrapped in wax paper. Adjustable to any reasonable amount of corn. Would be ideal for someone cooking for one or two. From Kraft Food + Family. The butter is listed as an optional ingredient since you really don't need it, but I enjoy melting a huge blob of it on my corn after it's done :-)

4 tablespoons butter (optional)

Steps:

  • Shuck fresh corn. Wrap each ear in wax paper.
  • Microwave for 2 minutes per ear of corn. (For 4 ears, 8 minutes.) Remove from microwave, open carefully, and enjoy. I like to top mine with salt and butter, the magazine suggested a sprinkle of Parmesan cheese and lime juice.
  • To keep them warm awhile, leave wrapped and cover with a kitchen towel :-).
