I created this recipe last fall, and my family loved it! It is a nice warm side dish for those chilly autumn nights.

2 apples, diced
1 teaspoon white sugar
½ teaspoon ground cinnamon

Steps:

  • Place apples in a microwave-safe bowl; heat in microwave for 30 seconds. Sprinkle sugar and cinnamon over apples and stir to coat. Heat apples in microwave until soft and warm, about 1 minute more.

This is an easy and fast baked apple recipe. Great for brunch or snack. Stuff the apples with any additional fruits that you wish -- cranberries stuffed into apples are especially delicious.

2 apples
2 tablespoons brown sugar
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 teaspoons butter

Steps:

  • Core the apples, leaving the bottom intact.
  • In a bowl, mix the brown sugar, cinnamon and nutmeg. Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple. Place the apples in a deep casserole dish and cover.
  • Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving.

Microwave Apples and Cinnamon (For Small Children) image

This is more for the older baby that has graduated to finger foods. Like around 1 yr. old and older. It's super easy and quick and mom gets to control how sweet (or not sweet) it is. Just be sure to cool completely before serving. (Don't wan't to burn little ones hands or mouth!) I've even been guilty of snacking on this myself! I use about a medium sized apple that is good for baking.

1 apple
2 tablespoons water
1 dash sugar
1 dash cinnamon

Steps:

  • Peel, core and dice apple into bite sized (small) pieces.
  • Place apple pieces in microwave safe dish and add 2 tablespoons water.
  • Microwave apple on High 1-3 minutes.
  • Check on it and stir every 20-30 seconds or so until it reaches desired tenderness.
  • When apple is cooked and soft enough for baby to eat, remove from microwave and sprinkle with as much or as little sugar and cinnamon as you wish. (My personal experience has been that the younger the child the more bland they like it but it's up to you!).
  • Let apple cool completely or until slightly warmer than room temperature and serve.

Steps:

  • Remove core from apples, cutting through but not to bottom.
  • Peel to about 1 inch from stem so apples will stand upright.
  • Arrange in shallow glass baking dish.
  • Place 1 tablespoon cinnamon candies in cavity of each apple.
  • Microwave covered, on High for 6 minutes or until apples are tender.
