1 acorn squash
2 Tbsp water
2 Tbsp butter ((1 tablespoon portion each))
2 Tbsp light brown sugar ((packed - 1 tablespoon portion each))

Steps:

  • Prepare your acorn squash by cutting it in half and coring out the seeds. Leave as much flesh as possible in each half of the acorn squash. Rinse after coring.
  • Place the acorn squash halves facing downward in a microwave-safe bowl or dish with 2 tablespoons of water. Heat on high for 5 minutes.
  • Transfer the heated acorn squash halves to individual bowls then add 1 tablespoon each of light brown sugar and butter. Heat on high for an additional 5 minutes in the microwave. Use a fork to check for tenderness after heating, if needed heat in additional 1-minute increments until the squash reaches your desired level of tenderness.
  • Remove from the microwave and allow to cool for about 5 minutes before serving.

1 acorn squash, about 1 1/2 pounds

Steps:

  • To cook squash in the microwave, cut squash in 1/2, scoop out the seeds as if you were cleaning cantaloupe only it will be a little harder. Lay cut side down on a piece of microwave safe plastic wrap placed directly on microwave bottom or plate. Cook on high in 5 minute intervals until completely softened and cooked through, about 5 to 7 minutes for 1/2 an acorn squash. Cook times will vary depending upon the size and variety of your squash.

1 acorn squash
1 large granny smith apple, peeled and chopped
1/4 cup chopped celery (optional)
2 tablespoons dried cranberries (or cherries, I have also used dried apricots)
2 tablespoons butter, melted
1 tablespoon brown sugar (or Splenda)
2 tablespoons chopped walnuts
1/4 teaspoon pumpkin pie spice (can substitute 1/4 tsp cinnamon with a dash of nutmeg if need be)

Steps:

  • Cut acorn squash in half, lengthwise. Remove and discard seeds and fiber.
  • In a shallow microwave-safe dish, place squash cut-side down. Put 1 tbsp of water in bottom of dish. Microwave covered on high power 7 minutes until almost tender.
  • In the meanwhile, combine apple, celery, cranberries, brown sugar, spice and butter in a mixing bowl.
  • When squash is done, turn them over. Fill centers with apple mixture. Microwave covered on high power 5 minutes longer until squash and apple filling are tender. Let stand 3 minutes in microwave after done cooking.

2 large acorn squash (about 1-1/2 pounds each)
4 tablespoons butter, divided
2 tablespoons maple syrup
1 medium onion, quartered and sliced
1 large Golden Delicious apple, cut into 1/2-inch pieces
1 large Red Delicious apple, cut into 1/2-inch pieces
1 banana, sliced
1 orange, sectioned and cut into 1-inch pieces
1/2 to 1 teaspoon curry powder
1/4 to 1/2 teaspoon pepper
1/4 teaspoon salt
2 tablespoons chopped toasted almonds

Steps:

  • Cut ends from squash. Slice each squash widthwise into four rings; remove seeds. Place rings on a greased foil-lined baking pan. In a small saucepan, bring 2 tablespoons butter and syrup to a boil. Brush each ring with syrup mixture. , Cover and bake at 350° for 30 minutes. Uncover and bake another 10-15 minutes, basting with syrup mixture. , In a skillet, saute onion in remaining butter. Add apples and cook until crisp-tender, about 3 minutes. Stir in banana, orange and seasonings; heat through. Place rings on serving platter; fill centers with apple mixture. Sprinkle with almonds.

Just toss slices of acorn squash with honey, olive oil, freshly ground black pepper and salt and pop into a hot oven for about a half hour.

2 tablespoons honey
4 teaspoons olive oil, plus more for greasing the pan
1/2 teaspoon freshly ground black pepper

  • Heat oven to 375 degrees. Cut 1/4 inch from stem end and bottom of each squash, and discard. Cut each squash in half crosswise. Discard seeds and membrane.

4 teaspoons butter or 4 teaspoons margarine, use vegan margarine if desired
salt, to taste
pepper, freshly ground, to taste

Steps:

  • Microwave squash on high (100%) for 2 minutes.
  • Pierce squash several times and microwave on high (100%) for 15 to 18 minutes, turning 1/4 turn every 4 minutes, until soft and fork tender.
  • Slice into 1 inch thick rings and remove fibers and seeds.
  • Arrange in a circle on a large plate.
  • Microwave butter in a small container on high (100%) for 20 seconds until melted and brush over tops of squash rings.
  • Cover with waxed paper and microwave an additional 2 to 4 minutes on high (100%) until very hot.
