3 sticks unsalted butter
1 ½ cups caster sugar, divided, plus 2 tablespoons
2 large egg yolks
2 tablespoons amaretto
1 teaspoon lemon zest
1 teaspoon orange zest
3 cups cake flour
¼ teaspoon kosher salt
1 large egg white, beaten

Steps:

  • Preheat the oven to 325°F (170°C). Grease a 17 x 12 x 1-inch (43 x 30 x 2.54 cm)+ baking sheet with nonstick spray and line with parchment paper.
  • In a large bowl, cream together the butter and 1½ cups of caster sugar with an electric hand mixer on medium speed until smooth. Add the egg yolks and beat until fluffy.
  • Add the amaretto, lemon zest, and orange zest and beat until just combined.
  • Gradually add the flour and salt and mix on low speed until no dry spots remain, being careful not to overwork the dough.
  • Spread the dough evenly on the prepared pan, making sure the top is as smooth as possible. Brush the dough with the egg white, then sprinkle with the remaining 2 tablespoons of sugar.
  • Bake for 20-25 minutes, or until golden brown. Turn off the oven and let the cookies cool inside for 15 minutes, then remove from the oven and cut while slightly warm.
  • Serve immediately.

I didn't hear about the Presidential Cookie Bake-Off that Family Circle Magazine holds during election years until this year (you can find out more about that on their website). Apparently the spouses of the candidates submit a favorite cookie recipe for people to vote for. When I saw this recipe that Michelle Obama submitted, from a close family friend of hers, I knew I had to make it. I haven't quit making it since - friends, co-workers, and family are always asking for it. When I had my first bite of it out of the oven, I had to cut and wrap them quickly, or else the delicious smell would quite likely have me eating them all myself. This is definitely going on my Christmas cookie platter this year... and every year!

  • Spread dough evenly into pan, making it smooth and flat as possible.
  • Brush top of dough with egg white; sprinkle with remaining 2 tablespoons sugar. Bake at 325 degree F for 25 minutes or until brown.
  • Turn off oven and allow cookies to sit in oven, with door ajar, for 15 minutes. Cut while slightly warm.

1 cup (2 sticks) unsalted butter, softened
1 stick Crisco butter-flavored solid vegetable shortening
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1 teaspoon vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup each white chocolate chips, milk chocolate chips and mint chocolate chips (or Andes mint pieces)
2 cups walnuts, chopped

Steps:

  • Heat oven to 375°F. In a large bowl with an electric mixer, cream butter, vegetable shortening, granulated sugar, brown sugar and vanilla extract. Add eggs, 1 at a time, beating well after each addition. On low speed, beat in flour, baking soda and salt. By hand, stir in white and milk chocolate chips, mint chips and walnuts. Drop rounded tablespoons of dough onto un-greased baking sheets. Bake at 375°F for 10 to 12 minutes or until golden brown. Cool on baking sheets for 5 minutes; remove to wire racks to cool completely.
