1 ½ cups ice
2 fluid ounces gin
2 fluid ounces cold half-and-half
½ fluid ounce lemon juice
½ fluid ounce lime juice
2 teaspoons white sugar
1 egg white
3 dashes orange flower water
1 dash vanilla extract
1 fluid ounce cold club soda, or as needed

Steps:

  • Fill a cocktail shaker with ice. Pour in gin, half and half, lemon juice, and lime juice. Add sugar, egg white, orange flower water, and vanilla extract. Shake vigorously; rest a second, then shake a little more. Strain into a tall cocktail glass. Top off with club soda.

50ml gin
25ml lemon juice
2 tsp sugar syrup
ice
sparkling water
lemon slice

Steps:

  • Pour the gin, lemon juice and sugar syrup in a cocktail shaker and fill up with ice cubes. Shake well until the outside of the shaker feels cold then strain into a tall glass filled with more ice and top up with sparkling water. Garnish with a lemon slice.

1/2 cup honey
1/2 cup chopped green apple, plus 2 apple slices, for garnish
4 ounces gin
1 ounce lemon juice
1 large egg white
Ice
Club soda, to serve

Steps:

  • For the honey simple syrup: Combine the honey with 1/2 cup water in a small saucepan and bring to a boil over medium heat. Turn down to a simmer and cook until the honey completely melts, 2 to 3 minutes. Remove from the heat and chill completely before using. Store in an airtight container in your refrigerator for up to 10 days.
  • For the cocktail: Muddle the chopped apple in a cocktail shaker. Add the gin, 1 teaspoon simple syrup, lemon juice and egg white. Shake vigorously until frothy, 1 to 2 minutes. Add ice to the cocktail shaker and shake again until chilled. Strain into martini glasses, then top each with a splash of club soda and garnish with the apple slices. Enjoy!

2 ounces gin
3/4 ounce​ lemon juice (fresh; or lime juice)
3/4 ounce simple syrup (1:1 ratio)
Optional: 1​ egg white
2 ounces soda water (or enough to fill)
Garnish:​ lemon peel

Steps:

  • Gather the ingredients.
  • Pour the gin, lemon or lime juice, simple syrup, and egg white (if using) into a cocktail shaker filled with ice.
  • Shake vigorously , about 15 seconds if using the egg white, to ensure it is mixed thoroughly with the other ingredients. For an extra-frothy drink, discard the ice and dry shake for a few more seconds.
  • Strain into a chilled highball glass over fresh ice cubes.
  • Top with soda and garnish with a lemon or lime peel. Serve and enjoy.

2 cups sugar
1 cup water
1 (5-inch) piece ginger, sliced
1/4 cup gin
2 tablespoons lime juice
Soda water

Steps:

  • In a small saucepan, over medium heat, add the sugar, water and ginger. Stir until the sugar dissolves. Reduce the heat and simmer, stirring continuously, until thickened. Remove from the heat and set aside to cool.
  • Pour the gin into a glass filled with ice. Add 1/4 cup of simple syrup and the lime juice. Top with soda water and serve.

MIDNIGHT FIZZ



Midnight Fizz image

While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink's froth and avoid its inevitable separation.
