1/2 cup orange juice
2 tablespoons olive oil
1 1/2 teaspoons cumin
1 teaspoon garlic salt
1/2 teaspoon coriander
4 (6 -8 ounce) halibut steaks

Steps:

  • In a 1 gallon resealable food storage plastic bag, combine all ingredients except halibut steaks; shake to mix well.
  • Add halibut, seal bag and turn to coat. Let stand at room temperature for 20 minutes in marinade.
  • Meanwhile heat grill.
  • When ready to grill, remove halibut from bag and discard marinade. Place halibut on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals.
  • Cook 8 to 12 mimutes or until fish is no longer translucent in center and flakes easily with fork, turning once.
  • Note: To broil halibut, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.

HALIBUT CHEEKS WITH SPICY AIOLI

6 ounces halibut cheeks
8 ounces buttermilk
1 cup all-purpose flour
1 egg
1 cup Japanese breadcrumbs (panko)
4 cups canola oil
1 teaspoon cayenne pepper
1/2 teaspoon kosher salt
Spicy mayonnaise (homemade or store-bought), for dipping

Steps:

  • Soak the halibut in the buttermilk for several minutes, then remove and dredge in the flour. Whisk together the buttermilk and egg in a stainless-steel bowl. Dip the halibut into the liquid, and then remove and dredge in the breadcrumbs until coated. Refrigerate for 1 hour.
  • Heat the canola oil in a straight-sided saucepot to 325 degrees F. Submerge the cheeks in the oil and fry until golden brown. Season with the cayenne and salt and serve with spicy mayonnaise for dipping.

6 tablespoons olive oil
3 small garlic cloves, peeled and minced
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons lemon juice
4 6-ounce halibut fillets, skin removed
1 tablespoon light olive oil or vegetable oil
Chopped parsley, for garnish, optional

Steps:

  • In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
  • In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

½ cup grated Parmesan cheese
¼ cup butter, softened
3 tablespoons mayonnaise
2 tablespoons lemon juice
3 tablespoons chopped green onions
¼ teaspoon salt
1 dash hot pepper sauce
2 pounds skinless halibut fillets

Steps:

  • Preheat the oven broiler. Grease a baking dish.
  • In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
  • Arrange the halibut fillets in the prepared baking dish.
  • Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.
