In a large plastic bag in the reduced produce section of my grocery store I scored 10 lemons for a dollar. There were three Meyer lemons in the mix and I knew that I wanted to do something with them. This recipe only uses 1 lemon, Meyers are best but you could use a regular lemon too. This recipe is from the everyone likes sandwiches blog.

Number Of Ingredients 10

1/2 cup canola oil
1/2 cup sugar
1 egg
1 lemon, juice of, meyer
3/4 cup milk
1 3/4 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 lemon, zest of
1 cup cranberries, fresh

Steps:

  • Preheat over to 400 degrees. Oil a muffin tin or used paper liners. Mix together the first five ingredients in a large bowl.
  • In a smaller bowl, combine the remaining ingredients until the cranberries are coated in the flour mixture.
  • Add the dry ingredients into the wet and combine until just blended. Drop by spoonful into muffin tim until each tin is 3/4 full of batter. Bake for 20-25 minutes.

MEYER LEMON OLIVE OIL ROSEMARY MUFFINS WITH CANDIED PANSIES



Meyer Lemon Olive Oil Rosemary Muffins with Candied Pansies image

Number Of Ingredients 12

4 cups whole-wheat pastry flour
3 teaspoons baking powder
2 pinches salt
2 cups granulated sugar
2 Meyer lemons, zested and juiced
1/2 cup extra-virgin olive oil
6 eggs
Candied Pansies, recipe follows
4 tablespoons finely chopped fresh rosemary leaves
Pansy petals
1 egg white, beaten
1 cup sugar

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the flour, baking powder, and salt in a large bowl and set aside.
  • In the mixing bowl of a stand mixer, add the sugar and lemon zest and rub together to extract the oil from the zest. Put the bowl into the stand mixer and add the olive oil. Mix on high speed until a paste forms. Beat in the eggs, 1 at a time. Add 1/3 of the flour mixture and mix on low speed. Add some of the lemon juice and continue mixing. Repeat adding flour and lemon juice for each egg. Stir in the rosemary. Pour the batter into the muffin tins, filling about 3/4 full. Bake until a toothpick tester inserted in the center of a muffin comes out clean, about 16 to 20 minutes. Remove the tins from the oven and allow to cool. Arrange the muffins on a serving platter and garnish with candied pansies.
  • Brush the petals with egg white, removing the excess and dredge them in sugar. Arrange the petals on a sheet tray and leave out overnight to crystallize.
  • Alternately, heat the oven to 200 degrees F. Arrange the petals on a sheet tray and put it into the oven. Turn the oven off and allow them to crisp, but not color.

8 ounces all purpose flour (about 1 1/2 cups)
3/4 cup sugar
2 teaspoons baking powder
Pinch of salt
Zest of 2 Meyer lemons
1/3 cup vegetable oil
1 extra large egg
1/3 cup milk
2 cups blueberries
1/2 cup sugar
2 1/2 ounces flour (1/2 cup)
1/4 cup butter
1 teaspoon cinnamon (cinnamon goes beautifully with blueberries)

Steps:

  • Preheat the oven to 400 degrees F. Line a muffin tin with paper liners. In the meantime, make the streusel crumb topping. Dice up the butter into cubes, and work all of the ingredients together with your fingertips, until it forms a bunch of crumbs and clumps. Chill in the fridge until ready for use. Back to the muffins: Whisk to combine the flour, sugar, salt, baking powder and meyer lemon zest. Take a tbsp of the mixture and toss it with the blueberries. This ensures that the blueberries stay suspended throughout the muffin, instead of falling to the bottom. Place the vegetable oil, egg, and milk in a bowl, and whisk to combine. Add that to the flour mixture, and remember, leave lots of lumps. If there aren't any lumps whenever you are using the muffin method of baking, you have overmixed and invited more gluten (and toughness) to the party than was welcome. Don't worry, a few lumps will bake out. Dump in the blueberries, and fold them in gently. Use a disher to portion them out into the muffin cups, and sprinkle the crumb topping all over the tops. Bake for 20-22 minutes until a toothpick inserted into the center comes out with no wet batter. Let them cool, and enjoy!

I am a lemon fanatic! These exquisite lemony muffins make for a wonderful picnic or sack lunch treat. Meyer lemons are a cross between a true lemon and a mandarin or sweet orange. Recipe is from the L. A. Times.

2 cups flour
1 cup sugar, and
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon salt
3 meyer lemons, divided
2 eggs
1 cup milk
1/2 cup butter, melted
1/2 teaspoon ceylon cinnamon (regular cinnamon is fine)

Steps:

  • Heat the oven to 400°F Combine the flour, 1 cup sugar, the baking soda and salt in a large mixing bowl. Set aside.
  • Cut two lemons into 1-inch pieces (include the thin peel, but not the white pith!). Put them in a blender and pulse until the lemon is finely chopped. In a small bowl, lightly beat the eggs. Add the milk, butter and chopped lemon. Stir.
  • Make a well in the center of the dry ingredients and pour in the lemon mixture. Stir just until all ingredients are moistened.
  • Spoon the batter into well-buttered cups of muffin pans, filling each half full.
  • Combine the remaining 2 T. sugar and the cinnamon. Sprinkle about 1/4 t. over each muffin. Cut the remaining lemon into 9 paper-thin slices; cut each slice in half. Top each muffin with half a slice of lemon.
  • Bake about 20 minutes, until golden brown. Run a small spatula or knife around each of the muffins to loosen, remove from the pan and cool on a wire rack. Serve warm. Makes 18 muffins.

I modified my Fresh Raspberry muffin recipe one afternoon when I had blueberries and no raspberries on hand! I love the taste of lemons and blueberries together!

1/2 c butter, softened
2 c all purpose flour
1 1/4 c sugar
2 eggs
1/2 c milk
2 tsp baking powder
1/2 tsp salt
1 1/2 c blueberries, fresh
lemon zest, grated
1/4 c lemon juice, fresh

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C)). Line a 12 muffin pan with paper liners.
  • 2. Sift flour, baking powder, and salt together and set aside. Cream butter and sugar until light and fluffy. Add eggs and beat well. Add milk. Zest a small Meyer lemon and add to mixture. Squeeze lemon juice in to mixture. Add flour mixture and beat until just combined. Stir in blueberries.
  • 3. Evenly distribute amongst the 12 muffin cups and bake at 350 degrees F (175 degrees C) for 30 minutes.

We added lemon peel and juice to Betty Crocker cinnamon streusel premium muffin and quick bread mix to make these yummy muffins with a lemony twist.

1 box (15.2 oz) Betty Crocker™ cinnamon streusel premium muffin & quick bread mix
3/4 cup milk
1/4 cup vegetable oil
2 eggs
Grated peel and juice of 1 Meyer lemon
Meyer lemon peel strips, if desired

Steps:

  • Heat oven to 425°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In medium bowl, stir muffin mix, milk, oil, eggs, grated lemon peel and lemon juice until blended. Divide batter evenly among muffin cups, filling each about two-thirds full. Sprinkle streusel from packet over batter.
  • Bake 16 to 20 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Garnish with lemon peel strips. Serve warm.
