Spicy chiles and sweet carrots make these pickled veggies a magnificent acidic accompaniment to top any taco.

1 medium red onion, halved through root end, thinly sliced
8 fresno chilies, stemmed, thinly sliced into rings
2 large carrots, peeled, cut into matchsticks (about 1 Â 1/2 cups)
1 tablespoon black peppercorns
1 tablespoon allspice berry
2 cups distilled white vinegar
1/3 cup sugar
4 teaspoons kosher salt
1 bay leaf
1 tablespoon dried Mexican oregano
1 lemon, zest removed in wide strips
1/4 cup fresh lemon juice
2 garlic cloves, lightly crushed

Steps:

  • Pack onion, fresno and carrots into a 1-qt. heatproof jar or a nonreactive container. Toast peppercorn and allspice berries in a dry large saucepan over medium heat, tossing constantly, until just fragrant, about 2 minutes. Add vinegar, sugar, salt and bring to a boil, stirring to dissolve sugar and salt. Remove from heat and stir in bay leaf, oregano, lemon zest, lemon juice, and garlic. Let cool slightly, then pour brine over onion, fresno and carrots to submerge. Seal jar and chill at least 3 hours before serving. The flavor will mellow as it sits.
  • Do Ahead: Vegetables can be pickled 3 weeks ahead. Keep chilled.

4 tablespoons oil
1/2 onion, finely diced
2 teaspoons garlic, minced
1 serrano chili, minced
1/2 green bell pepper, finely diced
2 cups rice
1 tomatoes, diced
1/4 cup frozen corn, thawed
1/2 carrot, grated
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
3 3/4 cups chicken broth
1/2 cup frozen peas, thawed
1 teaspoon salt
1/4 cup fresh cilantro, chopped, for garnish

Steps:

  • In a large nonstick frying pan or a dutch oven put the oil and onion.
  • Stir-fry over medium heat for 5 minutes.
  • Move the onion to the side of the pan and add the garlic.
  • Stir-fry the garlic until the edges are just starting to brown, and then incorporate the garlic into the onion.
  • Add the minced green chili and the green bell pepper and stir-fry for 3 more minutes.
  • Add the rice and stir-fry for 2-3 minutes, until all of the rice grains have gotten covered with the oil and the rice has had a chance to fry a bit.
  • Add the tomato, corn and the carrot, cumin and oregano.
  • Stir-fry for one more minute.
  • Add the chicken broth (or vegetable broth or water).
  • Bring the mixture to a good boil, cover, reduce heat to very low and cook for 20 minutes.
  • Remove from heat and let the rice rest, covered, for a few minutes.
  • Stir in the peas and salt.
  • Check for salt and then garnish with cilantro.
  • You may eliminate any of the vegetables that you don't like.

2 ¼ cups water, divided
1 cup quinoa
2 tablespoons olive oil
1 medium onion, finely chopped
4 cloves garlic, crushed, divided
1 teaspoon chili powder
1 teaspoon salt
½ teaspoon ground paprika
¼ teaspoon red pepper flakes
4 chicken tenders, cut into chunks
¼ cup frozen corn
¼ cup frozen green peas
¼ cup frozen mixed bell peppers
¼ cup coarsely chopped fresh spinach
1 tablespoon milk
1 tablespoon all-purpose flour
2 limes, juiced

Steps:

  • Bring 2 cups water and quinoa to a boil in a saucepan over medium heat. Simmer until quinoa is tender, 15 to 20 minutes.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat. Saute onion until lightly browned, 5 to 7 minutes. Stir in 3 garlic cloves, chili powder, salt, paprika, and red pepper flakes with a wooden spoon. Add chicken; cook and stir for about 5 minutes. Pour in remaining 1/4 cup water. Cover and cook for 15 minutes.
  • Stir corn, peas, peppers, and spinach into the skillet. Cover and cook for 5 minutes more. Mix milk and flour together and pour into the skillet; cook and stir for 2 minutes.
  • Divide quinoa among 4 serving plates. Scoop chicken and vegetable mixture on top. Whisk lime juice and remaining garlic together in a bowl; drizzle over each serving.

I had the opportunity to live near Mexico. I learned to cook many dishes from friends. This is just one type of Puchero. The flavors are more intense if you refrigerate,then heat.Two methods of cooking. For large groups the slow method. For small groups, cut in half or thirds and put all in a pressure cooker. Dinner in less than an hour for fast method.

2 lbs beef stew meat
2 lbs veal, cut up
1 veal knuckle, bone
2 teaspoons salt
2 teaspoons cumin
2 teaspoons chili peppers
1 (28 ounce) can chopped tomatoes with juice
1 (28 ounce) can yellow hominy, with juice
2 tablespoons white sugar or 2 tablespoons sugar substitute
6 ears corn, each cob cut into 3 pieces
6 yellow onions, peeled
1 lb fresh green beans, end cuts, kept whole
3 turnips, peeled, kept whole
6 pattypan squash or 6 crookneck yellow squash, vine end cut off
2 large green chili peppers, whole
2 hard green apples, peeled and sliced
1 fresh lemon, cut in half

Steps:

  • Slow method for Large Groups:.
  • In large stockpot,add beef, veal and knuckle bone. (ask butcher to save you one).
  • Fill with cold water just to cover, no more.
  • Add salt, cumin and chili powder.
  • Cover and cook to a boil for 10 minutes.
  • Skim the white scum from water.
  • Add tomatoes and hominy to stockpot with juices. Add sugar. Stir.
  • In old clean pillowcase or cheescloth bag, layer the vegetables in the order given, starting with corn ending with chili peppers.
  • Take one lemon half, squeeze the juice out, as much as you can get, place the lemon cut side down.Add the apple slices and squeeze juice from other lemon half.Pul the lemon half in the sack. Close the sack with twist tie or string.
  • Simmer on low heat for 3 hours.
  • Dump out the vegies on a large platter and cut in serving pieces.
  • Serve meat and juice in a large tureen.
  • Serve with tortillas, mexican hot chocolate or beer.
  • Fast method:.
  • Place everything in a pressure cooker except the apple slices. Cook at 15 pounds pressure for 20 minutes. Take off burner and let steam decrease. After pressure is gone, release lid, and spoon out vegetables on platter, serve meat and broth in a tureen.

On a recent trip to Washington DC my sister took me to a place that does Mexican food with Californian style. This following recipe is an inspiration from our lunch (and dinner) that day. The vegetables are only limited by your palate.

1 yellow zucchini (sliced)
1 medium onion (cut into wedges)
1 green bell pepper (cut into strips)

1/2 package of old el paso taco seasoning
4 teaspoons cumin (slightly crushed)
4 tablespoons vegetables or 4 tablespoons corn oil

Steps:

  • Mix all the vegetables together with the oil.
  • Then add salt, garlic powder, garlic, cumin and Old El Paso seasoning.
  • Bake in the oven for approximately 25 minutes or until vegetables are tender.

2/3 cup chopped green bell pepper
1/2 cup chopped onion
1 cup rice
2 cups chicken broth
1 (4 ounce) can diced green chilies
1 large tomatoes, diced

Steps:

  • Heat oil in medium skillet.
  • Add bell pepper and onion; cook until tender.
  • Add rice: cook for 3 minutes.

12 ounces whole onion or 11 ounces chopped, ready-cut onion
2 teaspoons olive oil
16 ounces whole zucchini or 15 ounces sliced, ready-cut zucchini
8 ounces whole green pepper or 7 ounces chopped, ready-cut green pepper
1/2 to 1 whole jalapeno pepper
1 1/2 pounds ripe fresh tomatoes
1/8 teaspoon salt
Freshly ground black pepper

Steps:

  • Chop whole onion.
  • Heat nonstick skillet until it is very hot; reduce heat to medium-high, and add oil. Saute onion until it begins to soften.
  • Wash, trim and slice zucchini into 1/4-inch-thick rounds. Add to onion after onion has softened, and continue to stir-fry.
  • Wash, trim and seed green pepper and jalapeno; chop green pepper and mince jalapeno, and add to vegetables as they cook.
  • Wash, trim and coarsely cube tomatoes. When vegetables have softened, stir in the tomatoes and season. Simmer a few minutes longer, and serve over polenta (see below). If there is not enough liquid, add a few tablespoons of water.

1/3 cup vegetable juice
1/2 cup sour cream

1 medium zucchini, cut into 1/2-inch pieces
1 cup small cauliflower florets
1 cup fresh corn kernels (from about 1 medium ear), or thawed if frozen
2 tablespoons olive oil
1 medium white onion, sliced

1 , serrano chile kimmy, , minced with seeds
1 medium tomato, peeled and finely chopped

1 (14.5 ounce) can diced tomatoes

1 cup chicken broth

¼ teaspoon salt
⅛ teaspoon ground black pepper
½ cup shredded Mexican cheese blend

Steps:

How to make Elvia's Mexican Pickled Vegetables

Total Time: 2 3/4 hours (including 2 hours cooling time)
1 tablespoon black peppercorns
2 teaspoons allspice berries
2 teaspoons coriander seeds
1 teaspoon whole cloves
1 cup extra-virgin olive oil
1 medium onion, thinly sliced
10 cloves garlic, peeled
1 large head cauliflower, broken into small florets
1 pound pearl onions, fresh (peeled; see Tip) or frozen (thawed)
3 medium carrots, cut into 1/4-inch rounds
1 large red, yellow or orange bell pepper, cut lengthwise into 1/4-inch slices
1 small habanero, or 2 small jalapeño peppers, stemmed and thinly sliced
2 1/2 cups distilled white vinegar
6 bay leaves
2 tablespoons dried oregano
1 tablespoon salt
1 teaspoon cumin seeds

Steps:

  • Refrigerate for up to 1 month (leave the spice bundle in for flavor). The oil will solidify; let come to room temperature before serving. | Equipment: Cheesecloth and kitchen string (or a tea ball)
  • About 8 cups
  • Place peppercorns, allspice berries, coriander seeds and cloves on an 8-inch-square double layer of cheesecloth. Bring up the sides, making a bundle that encloses the spices, and tie at the top with kitchen string (or put the spices in a stainless-steel tea ball).
  • Heat oil in a Dutch oven over medium heat Add sliced onion and garlic cloves and cook, stirring, until soft, about 5 minutes. Add cauliflower, pearl onions, carrots, bell pepper and habanero (or jalapeños). Cook, stirring occasionally, until the vegetables are tender-crisp, 7 to 9 minutes. Stir in vinegar, bay leaves, oregano, salt, cumin seeds and the spice bundle and cook 2 minutes more.
  • Let cool for 15 minutes before transferring everything to a large nonreactive bowl (see Tip). Refrigerate, stirring occasionally, until cool, about 2 hours. Serve using a slotted spoon to leave behind excess oil.
