Done in 20 minutes on the stovetop; I like to serve this with my Low Carb Mexi Baked Chicken for a complete and festive low carb dinner. Also a tasty, easy side dish to serve with your tacos, fajitas, etc.

1 small onion, chopped
1 green pepper, chopped
2 cloves garlic, minced
1 teaspoon olive oil
2 (15 ounce) cans red kidney beans, drained and rinsed
1 cup water
2 tablespoons chili powder or 2 tablespoons taco seasoning (I prefer and use taco seasoning, homemade with no sugar)
low-fat Mexican cheese blend, for topping

Steps:

  • In a medium saucepan, sautee the pepper, onion and garlic in olive oil until crisp-tender.
  • Add beans, water and seasoning; simmer on low to medium heat until thickened (about 10 minutes).
  • Top with cheese upon serving.

These are my favorite! A lovely combo of my southern roots and my love of Mexican food...Make these as a side to your tacos and rice, a filling in your burritos, on a tostada, on brown rice, served over cornbread, or on their own. They are wonderful. They can also be adapted for whatever you are serving. Add whatever you like. I plan on adding tomatoes towards the end next time. This makes a lot and it freezes beautifully. (Prep time is soaking overnight...Also, I put 16 servings, but as a side it is more, I'm sure..I just freeze it...perfect for a party)

2 lbs dried pinto beans, soaked overnight and rinsed
4 garlic cloves, finely chopped
3 jalapeno peppers, finely chopped (can use different peppers for less heat)
1 large yellow onion, finely chopped
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon smoked paprika
1 1/2 teaspoons sea salt (or to your taste)
cilantro, for garnish

Steps:

  • Place pre-soaked and rinsed beans in a large stockpot. Fill with water to cover two inches above beans.
  • Add garlic, peppers, onion, cumin, chili powder and bring to a boil. Once it comes to a boil, lower the heat and simmer for 1 1/2 to 2 hours. I keep the lid off. Stir occasionally.
  • Keep checking the beans to taste until tender and lovely. Add salt little by little until it's perfect for you.
  • Add cilantro on top of individual servings. Yum!

Not bad for a diet cheesecake. Satisfies that sweet tooth. Phase 2 on The South Beach Diet. The 20 minutes prep times includes the 15 minutes cool-down phase before adding the sour cream topping.

2 (8 ounce) packages low-fat cream cheese
3 eggs
1 cup Splenda sugar substitute
1 teaspoon vanilla
1 pint low-fat sour cream
1/4 cup Splenda sugar substitute
1 teaspoon vanilla

Steps:

  • Beat ingredients for'cake' until smooth.
  • Pour into a 9" greased square pan.
  • Bake at 350 degrees for 35 minutes.
  • Remove from oven for 15 minutes-- leave oven on.
  • Meanwhile-- mix topping ingredients together and mix well.
  • After the 15 minutes has elapsed, pour topping over the cheesecake and spread evenly, and bake for 10 minutes more.
  • Chill.

Another personal South Beach Diet friendly favorite of mine. It's flavorful and easy to throw together, bakes in less than 1 hour. I serve this with a side of my Mexican Jumping Beans. For the taco seasoning, I like to make my own (no sugar added; there are plenty of taco seasoning Zaar recipes to choose from, if you would like to make your own.

2 (4 ounce) boneless skinless chicken breasts
2 teaspoons taco seasoning (I prefer homemade with no sugar added)
1/2 cup salsa, any degree (I prefer Newman's Own; it's low in sugar)
1/2 cup shredded low-fat cheddar cheese (I prefer the Mexi-blend)

Steps:

  • Preheat oven to 375 degrees.
  • Spray a shallow, small baking dish with non-stick spray.
  • Coat chicken lightly with taco seasoning, on both sides; spoon salsa over top of breast.
  • Bake, uncovered, about 45 minutes.
  • Sprinkle cheese on both breasts evenly; bake for another 5 minutes or until cheese is melted through.
