1 box Betty Crocker™ Seasoned Skillets® hash brown potatoes
4 cups very hot water
2 tablespoons margarine, butter or spread, melted
1 egg, slightly beaten
2 cups shredded Colby-Monterey Jack cheese (8 ounces)
2 small jalapeño chiles, seeded and finely chopped
1 small red bell pepper, finely chopped (1/2 cup)
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
2 eggs
2/3 cup milk
Shredded lettuce, if desired
Sour cream, if desired
Sliced chile peppers, if desired

Steps:

  • Heat oven to 375°F. Cover potatoes with water. Let stand 15 minutes; drain thoroughly. Toss potatoes, margarine and 1 egg. Press potato mixture on bottom and up side of ungreased pie plate, 9x1 1/2 inches. Bake 20 minutes.
  • Reduce oven temperature to 350°F. Sprinkle half of the cheese, finely chopped chiles and bell pepper in potato crust; repeat. Beat flour, salt and 2 eggs until blended; stir in milk. Pour over cheese mixture.
  • Bake about 35 minutes or until center is set and top is golden brown. Let stand 10 minutes before cutting. Garnish with shredded lettuce, sour cream and sliced chile peppers.

This is a dish that I make about twice a month. My family loves this served with fresh cantaloupe and spanish rice.

1 onion, chopped
1 1/2 lbs ground beef
1 package taco seasoning mix
1 package medium flour tortilla
1 (16 ounce) can refried beans
taco sauce
1 (4 ounce) can peeled and chopped green chilies
2 cups shredded taco cheese (colby and monterey jack)
2 cups crushed tortilla chips
2 medium tomatoes, chopped

Steps:

  • saute onion in a small amount of oil until tender.
  • Add beef and brown, stirring.
  • Drain grease from meat and add taco seasoning packet along with 1/3 cup of water.
  • simmer, stirring occasionally.
  • Meanwhile, place 3 flour tortillas on bottom of a 9 inch pie pan, spreading tortillas out to cover the entire bottom of the pan.
  • Spread 1/2 of the refried beans over the tortillas.
  • Add 1/2 of the green chilies.
  • Cover with half of the meat mixtureand 1 cup of the cheese.
  • Repeat the layers and top with cruched tortilla chips.
  • Bake at 350 degrees for 30 minutes.
  • top with chopped tomatoes and serve with taco sauce, if desired.

8 oz tube refrigerated crescent rolls
1 lb. ground beef
1 onion (chopped)
8 oz. can tomato sauce
1 1/4 oz. pkg. taco seasoning mix
3 tbsp. sour cream
1/2 c. shredded cheddar cheese
Lettuce
Tomatoes
Olives

Steps:

  • Preheat oven to 350 F.
  • Separate crescent rolls and line an ungreased 9'' pie plate with them; press together to form a pie crust.
  • Brown ground beef and onion in a skillet; drain. Add tomato sauce and taco seasoning; simmer for 5 minutes.
  • Pour into pie plate. Spread sour cream over top; sprinkle with cheese. Bake for 20 minutes.
  • Top with lettuce, tomatoes, and olives.

1 can (8 oz.) refrigerated crescent dinner rolls
1/2 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Heat oven to 400°F
  • Cook turkey in nonstick skillet on medium heat 10 min. or until no longer pink, stirring frequently. Remove from heat; stir in salsa.
  • Unroll crescent dough; separate into triangles. Place in 9-inch pie plate, with short ends of triangles at outside edge of pie plate. Press seams together to seal.
  • Spoon turkey mixture into crust; sprinkle with cheese.

1 package pillsbury refrigerated pie crust
1 lb ground beef
1 (15 ounce) can spicy chili beans, undrained
1/2 cup salsa
6 ounces shredded cheddar cheese (1 1/2 cups)
1 cup shredded lettuce
1/2 cup chopped tomato
green onion, slices (optional)
sour cream (optional)
ripe olives (optional)
chopped jalapeno (optional)

Steps:

  • Unfold pie crust; place in 9" pie pan.
  • Prick bottom and sides with fork; flute edge.
  • Cut 13 (2") triangle pieces from remaining crust; place around crust edge.
  • Bake at 425 degrees for 9 to 11 minutes or until light golden brown.
  • Cook in large skillet: Brown ground beef, drain.
  • Add chili beans, salsa and 1 cup of cheese; mix well.
  • Cook over low heat for 2 to 3 minutes or until cheese is melted.

1 lb extra lean (at least 93%) ground beef
1/2 cup sliced green onions
1 cup Old El Paso™ Thick 'n Chunky Salsa
1 1/2 teaspoons chili powder
3/4 teaspoon cumin
1 can (11 oz) corn, drained
1 pouch (4.7 oz) Betty Crocker™ loaded mashed potatoes
Water, milk and butter called for on potatoes pouch
1/2 cup shredded Cheddar cheese (2 oz)
1 medium tomato, sliced into thin wedges
Tortilla chips, if desired

Steps:

  • In 10-inch skillet, cook ground beef and 1/4 cup of the green onions over medium-high heat 5 to 7 minutes, stirring occasionally until beef is thoroughly cooked; drain. Stir in salsa, chili powder and cumin. Spoon corn evenly over beef mixture in skillet. Cover and cook over low heat until mixture is thoroughly heated.
  • Meanwhile, make potatoes as directed on pouch, using water, milk and butter.
  • Spoon potatoes over corn in skillet; spread evenly. Sprinkle with cheese and remaining 1/4 cup green onions. Cover; cook over low heat about 5 minutes or until cheese is melted. Arrange tomato wedges in spoke fashion over potatoes. Garnish with tortilla chips around outside edge of skillet.
