MEXICAN FIESTA DIP MIX
Another dip mix from "Gifts in a Bag" recipe book. Don't forget the gift tag. You can make this one as hot as you like by adding crushed red pepper. Gift tag should read: Combine the Mexican Fiesta Dip Mix with the mayonnaise and sour cream. Stir until well blended. Cover and refrigerate. Dip is better if made 8 hours before serving. Serve with chips, crackers, or fresh vegetables. Cook time is chill time.

- Combine the dry ingredients and stir until well blended.
- Place in a 3x4-inch ziplock bag and seal.

- In a nonstick skillet coated with cooking spray, cook turkey until no longer pink; drain if necessary. Stir in taco seasoning and water; cook and stir for 2-4 minutes or until most of the liquid has evaporated. , Spread refried beans on a 12-in. serving platter. Top with the turkey, lettuce, salsa, cheese, jalapenos, sour cream and olives. Serve with chips.

- Take a large platter and spread out a layer of refried beans on the bottom. Combine the avocados, lemon juice, salt and pepper and spread the mixture on top of the beans. Combine the sour cream and chipotle. Spread that mixture on top of the avocado mixture. Chop and combine the green onions, tomatoes and olives. Spread the mixture in a ring around the outside of the platter. Garnish the top with cheddar cheese and serve with tortilla chips.

Steps:
- 1. Drain Salsa slightly. Mix the 2 packages of cream cheese and beat together with Salsa. Use a mixer.Blend until cheese is not lumpy.
- 2. spread evenly in a square 8x8 pan,or glass bowl.
- 3. Refrigerate for a couple hours,or keep in fridge a day or 2 before serving. It will keep just fine. Before serving. Chop up the grape tomatoes,and green scallions. mix scallions with tomatoes.
- 4. Take a large bag of shredded Mexican cheese and sprinkle evenly or Cream cheese salsa mixture. Top with tomato mixture.
- 5. That's it. It is ready to serve with your Tortilla chips
MEXICAN FIESTA DIP MIX (IN A JAR)
Another great mix that makes life easier (see also "my" Hot Mexican Rub recipe #132796). I included this as part of a gift basket for my friend and of course I had to try it before giving it away. Too bad I din't read the whole recipe before making it. When not only the mix but also the dip was finished, I realised it should go in the fridge for two hours or so. I couldn't wait that long and ate it immediately. Loved it and prepared a second batch. This time I had some leftovers and I put it in the fridge. The next day it tasted even better! Yes, chilling does improve the dip! As I wanted to prepare the dip just for myself, I mixed 2 tablespoons sour cream with 2 tabelspoons low fat mayonnaise and 2 teaspoons Mexican Fiesta Dip Mix. I am considering to prepare the next batch without the dry herbs but add fresh herbs to the mix when preparing the dip. I love fresh herbs and I grow so many on my balcony. When typing this recipe I realised that I forgot to add the salt into my mix. I didn't even miss it! That's why I wrote optional next to the salt. Serve this dip with tortilla chips or fresh vegetables.

- In a large bowl, combine the spices and store in an airtight container.
- Attach this to the jar: Mexican Fiesta Dip. Makes two cups. In a medium mixing bowl combine 3 tablespoons of the Dip Mix with the mayonnaise and sour cream. Whisk the mixture until smooth. (Check if you want to add more of the Dip Mix or more mayo/sour cream.).
- Refrigerate for 2-4 hours or overnight (best).
- If you do this at home and you have some fresh herbs around then add some. I like to add fresh chives, parsley or coriander.
- Serve with tortilla chips (works best!)or fresh vegetables.
DELICIOUS BAKED MEXICAN SPINACH FIESTA DIP
We love this warm, creamy, cheesy dip year round. Always the first to go at our football parties. You can adjust the level of heat by adjusting the amount of jalapeno you use. We're fine at 2 tablespoons. But, if you're daring and like it devilishly hot, you may go up to 4 tablespoons, but have some Margaritas ready!

- 1. Preheat oven to 400 degrees. In a 10" skillet, cook onion in oil until tender. Add 2/3 of the chopped tomatoes and all of the jalapeno peppers; cook 2 minutes more. Transfer mixture to large bowl. Stir in spinach, 2 cups Monterey Jack cheese, cream cheese, half and half, olives, vinegar, salt and pepper. Mix well.
- 2. Spoon into a 1 1/2-2 qt. baking dish. Bake about 35 minutes or until hot and bubbly. Top with remaining Monterey Jack cheese, chopped fresh tomato and freshly chopped cilantro or parsley.
- 3. Serve with tortilla chips and/or fresh veggies to dip. (I like to serve a platter with red, yellow, orange and green peppers along with tortilla chips.)

- In a large stove top pot over medium-high heat, cook the sausage, ground beef, diced onion and jalapeno. Add a little oil, if needed, and season with salt and pepper.
- Drain any excess fat from the pan, then add the taco seasoning, lime juice, minced garlic and worcerstershire sauce.
- Continue to cook for a couple of minutes, until no pink remains in the meat.
- Add all of the softened cream cheese, the white queso dip and 1 1/2 cups of salsa.
- Lower the heat to medium-low, and slowly melt all of the ingredients together.
- Stir often to prevent the dip from sticking to the bottom of the pot. Simmer for a total of 25 minutes.
- Stir in 1 1/2 cups of grated pepper jack cheese and chopped cilantro.
- Remove the dip from the heat, and pour carefully into your slow cooker to keep w.
- arm, or serve immediately with lots of tortilla chips for dipping. Sprinkle the remaining shredded cheese on top to melt and a sprinkle of chopped green onion.
