BEEF EMPANADA RECIPE

These crispy, cheesy, 30-minute easy beef empanadas are so simple to make with refrigerated pie crust and a savory beef and cheese filling. Whip up these yummy empanadas and serve with creamy, authentic Mexican guacamole for a delicious meal!

1/2 pound ground beef
1/4 onion (diced)
1/2 teaspoon ground cumin
1/2 teaspoon chili powder (or chipotle chili powder)
1/2 teaspoon salt
4 ounces diced green chiles
4 ounces diced pimento peppers
2 tablespoons tomato paste
1/2 cup shredded sharp cheddar cheese (or Mexican blend)
2 refrigerated pie crusts
1 egg (whisked)
HERDEZ™ Traditional Guacamole (for serving)

Steps:

  • Preheat oven to 400 degrees and line a baking sheet with a nonstick baking mat or parchment paper.
  • Unroll pie crusts on a clean, flat surface. Use a 3-inch round pastry cutter to cut circles from the dough. (If desired, combine scraps, roll out, and cut again.)
  • In a skillet over medium-high heat, brown the ground beef.
  • Stir in onions, cumin, chili powder, salt, green chiles, and pimento peppers. Saute 2-3 minutes.
  • Stir in tomato paste, followed by the cheese. Remove from heat.
  • Spoon about 2 tablespoons of the beef mixture into the center of each pie crust circle.
  • Fold dough over and use a fork to seal the dough all along the curved edge.
  • Arrange in a single layer, not touching, on prepared baking sheet. Brush empanadas with egg wash.
  • Bake for 10 minutes or until golden brown.
  • Allow to cool slightly before serving with HERDEZ™ Traditional Guacamole. Enjoy!

I got this recipe from my friends mom who owns a Mexican Bakery. When they made these one day for my family they loved them - even my brother who is sooo picky. Now they ask for them all the time. Although they are a little time consuming it is well worth it at the end!

2 ½ teaspoons yeast
½ cup warm water
½ cup evaporated milk
⅜ cup white sugar
1 teaspoon salt
⅓ cup butter or margarine, melted
1 egg
4 cups all-purpose flour
½ teaspoon ground cinnamon
⅔ cup white sugar
½ cup butter or margarine
1 cup all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon vanilla extract

Steps:

  • In a large bowl, stir together the yeast and warm water. Mix in the milk, 3/8 cup sugar, 1/3 cup melted butter, salt, egg and half of the flour. Gradually mix in the remaining flour, and 1/2 teaspoon cinnamon. Turn the dough out onto a floured counter to knead as soon as it pulls together enough.
  • Knead for 6 to 8 minutes, until smooth and elastic. Place in a large greased bowl, and turn the dough to coat. Cover, and let rise in a warm place until doubled, about 1 hour.
  • Make the topping while the dough rises. In a medium bowl, beat 2/3 cup sugar and 1/2 cup butter until light and fluffy. Stir in the flour until the mixture is the consistency of thick paste. Divide into two parts, and place one part in a separate bowl. Mix cinnamon into one half, and vanilla into the other half.
  • When the dough is done rising, cut into 12 even-sized pieces. Shape into balls, and place on a greased cookie sheet, spacing about 3 inches apart. Divide each bowl of topping into 6 balls, and pat flat. Place circles of topping on top of the dough balls patting down lightly. Use a knife to cut grooves in the topping like a clam shell. Cover and let rise until doubled, about 45 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Bake for 20 minutes, or until lightly golden brown.

These Mexican fritters are very common at fairs. In my border hometown, the line at this stand is always overwhelming. People wait hours in line just to get a taste of these churros. I have run across several recipes but this is the best one by far.

1 cup water
2 ½ tablespoons white sugar
½ teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
2 quarts oil for frying
½ cup white sugar, or to taste
1 teaspoon ground cinnamon

Steps:

  • In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.
  • Heat oil for frying in a deep fryer or deep pot to 375 degrees F (190 degrees C). Pipe 5- to 6-inch strips of dough into the hot oil using a sturdy pastry bag fitted with a medium star tip. Do not overcrowd the oil. Fry until golden; drain on paper towels.
  • Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

Number Of Ingredients 7

1 lb ground beef or 1 lb ground turkey, for a lighter fat alternative
1 (1 1/4 ounce) package taco seasoning
1 cup cooked corn kernel
1 cup salsa
2 Pillsbury Refrigerated Crescent Dinner Rolls (Original Flavor)
1 cup shredded colby-monterey jack cheese
sour cream

Steps:

  • Preheat oven to 350°.
  • Cook ground beef (or ground turkey) according to taco seasoning package.
  • Stir in 1 cup salsa, 1 cup cooked corn.
  • Remove mixture from heat.
  • Unroll crescent rolls onto large ungreased cookie sheet.
  • Scoop approximately 2 heaping tablespoons of meat/salsa/corn mixture onto unrolled crescent rolls.
  • Roll crescent rolls tightly.
  • Cook in oven for approximately 10-11 minutes.
  • Remove from oven.
  • Sprinkle with shredded cheese.
  • Place back in oven for 1-2 minutes or until cheese is melted.
  • Remove from oven, and top with dollop of sour cream (or salsa), to your liking.
  • Enjoy your mexican doughboys.
