EASY APPLE ENCHILADA DESSERT

Apples rolled in flour tortillas. VERY delicious, easy and fast to make. Substitute apples with peaches or cherries if desired. Serve with ice cream and enjoy!

2 (21 ounce) cans apple pie filling, coarsely chopped
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 (8 ounce) package reduced-fat cream cheese
½ cup confectioners' sugar
¼ teaspoon ground cinnamon
10 small flour tortillas
½ cup white sugar
½ cup brown sugar
⅓ cup water
⅓ cup butter
1 tablespoon cornstarch
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix apple pie filling, 1 teaspoon cinnamon, and nutmeg in a bowl.
  • Beat cream cheese, confectioners' sugar, and 1/4 teaspoon cinnamon in a separate bowl until whipped and smooth. Stir apple pie filling mixture into cream cheese mixture.
  • Spoon apple-cream cheese mixture into each tortilla; roll tortilla around filling. Arrange rolled tortillas, seam-side down, in a 9x13-inch baking dish.
  • Mix white sugar, brown sugar, water, butter, cornstarch, and vanilla extract in a saucepan; bring to a boil. Reduce heat and simmer, stirring constantly, until sugar is dissolved, about 3 minutes. Spread sauce over rolled tortillas.
  • Bake in the preheated oven on the top rack until enchiladas are bubbling, about 50 minutes.

Tortillas make wonderful "packages" for fruits, as well as beans. Mexican cooks often use combinations of fruits and cheese rolled up with hot fruit. This apple filling, laced with the flavors of lime and apricot is really delectable.

36 inches flour tortillas
2 large golden delicious apples, unpeeled, coarsely shredded
1/4 cup raisins
1/2 cup orange juice
2 teaspoons lime juice
1/2 teaspoon ground cinnamon
2 tablespoons fruit-only apricot jam
1 teaspoon confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Stack tortillas and wrap them tightly in alumimum foil. Heat in oven for 10 minutes.
  • While tortillas are heating, combine apples, raisins, orange juice, lime juice, and cinnamon in a small saucepan. Cook over medium heat, stirring frequently, 5 to 7 minutes until apples are tender.
  • To assemble, spread 1 teaspoon of jam on each of the heated tortillas. Divide apple mixture evenly and spoon it along the center of each tortilla. Roll tortilla up tightly into a cylinder and place each seam-side down on a serving plate. Sprinkle with confectioners sugar and serve right away.

1 (21 ounce) can apple pie filling
½ cup cinnamon sugar
15 (6 inch) flour tortillas
oil for frying

Steps:

  • Heat apple pie filling in a small pot over medium-low heat until warmed through, about 5 minutes.
  • Place cinnamon sugar in a shallow dish.
  • Spoon 1 1/2 tablespoons of filling onto each tortilla. Fold in opposing edges and roll up as you would a burrito.
  • Heat oil in a large, deep saucepan over medium heat.
  • Place a batch of rolled tortillas seam-side down in the hot oil and fry until browned and crispy, 1 to 2 minutes. Turn and continue frying until all sides are browned, 1 to 2 minutes more. Roll in cinnamon sugar to coat. Repeat with remaining batches.

1 package 10-inch flour tortilla
8 cups peeled and finely cut granny smith apples
1 cup raisins
4 ounces pecans or 4 ounces walnuts, chopped
3/4 cup sugar
2 teaspoons cinnamon
1/2 cup melted butter
1/2 cup crushed corn flakes or 1/2 cup granola cereal
powdered sugar

Steps:

  • Combine apples with raisins, nuts, sugar, and cinnamon.
  • Brush tortillas with melted butter.
  • Sprinkle tortillas with cereal, then 2 TBS apple mixture.
  • Roll tortilla up and brush each with melted butter.
  • Bake on buttered baking pan 350 degrees until browna and crisp (time depends on how hot your oven bakes, I bake mine about 15 to 20 minutes).
  • Dust with powered sugar.

1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
½ cup butter
½ cup white sugar
½ cup brown sugar
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish.
  • In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 30 minutes.
  • Bake in preheated oven 20 minutes, or until golden.
