One 6 oz. package Farmhouse® Chicken Rice
3/4 lb. sliced, boneless, skinless chicken
1/2 cup chopped onion
1 Tablespoon butter or margarine
1-1/4 cups water
One 14.5 oz. can diced tomatoes, undrained
1 cup frozen corn kernels, thawed
One 4.5 oz. can diced green chilies
2 teaspoons chili seasoning
1/2 cup sour cream
1/4 cup chopped cilantro, divided
1-1/2 cups grated cheddar cheese

Steps:

  • In a large skillet, brown chicken and onion in butter or margarine. Add water, tomatoes, corn, chilies, chili seasoning, rice and contents of seasoning packet; bring to a boil. Reduce heat, cover and cook 20 minutes or until liquid has been absorbed. Stir in sour cream and 2 Tablespoons cilantro. Top with cheese, cover and let stand 5 minutes. Before serving, top with remaining 2 Tablespoons cilantro.

1 (1 1/4 ounce) package chili seasoning mix
1 (13 3/4 ounce) can chicken broth
1 1/2 cups dry instant rice
1 (8 ounce) can tomato sauce
1 (4 ounce) can chopped green chilies

Steps:

  • Brown ground beef in skillet.
  • Drain.
  • Add chicken broth, tomato sauce, and chili seasoning mix.
  • Simmer for five minutes.
  • Stir in rice and green chilies.
  • Cover and remove from heat.
  • Let stand five minutes.
  • Fluff with fork.

2 cans cream of corn soup
3/4 pound velveeta
1 4oz. can diced chilies
chile powder
durkee red hot
1 bag copes frozed white corn (thawed)
1 small jar pimiento diced
one small onion diced and sauteed
milk to thin

1 can (8 oz.) tomato sauce
1 pkg. McCormick Chili Seasoning mix
1-1/2 cups dry Minute Rice®
1 small green pepper, cut into small strips
4 cups shredded lettuce
1 medium tomato, cut into wedges
1 cup sour cream
3/4 cup shredded cheddar cheese

Steps:

  • Brown ground beef in skillet. Drain. Add chicken broth, tomato sauce and chili seasoning mix. Simmer 5 minutes. Stir in rice and green pepper. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Garnish with lettuce, tomato, sour cream and cheddar cheese. Serves 4.

1 (14 1/2-ounce) can chicken broth
1/3 cup cold water
2 tablespoons butter
1/2 cup onion, chopped
1 tomato, chopped
1/2 teaspoon turmeric
1-1/4 cups long grain rice
1/2 cup salsa
salt and pepper to taste
1/3 cup packed cilantro, garnish

Steps:

  • Melt butter in cooker. Saute onions and tomato. Stir in rice and coat with butter. Combine with remaining ingredients, except cilantro. Pour into a 1-quart casserole dish that fits easily into your cooker. Set trivet in cooker and pour in 1 cup water. Use a foil sling to lower bowl onto trivet. Lock lid and bring to full pressure. Adjust heat to maintain pressure and cook for 5 minutes. Naturally release pressure. Add chopped cilantro and fluff rice gently with a fork to mix. Adjust seasonings as desired. Cook's Note: If rice is still crunchy after cooking, return cooker to full pressure and cook for 1-2 minutes more. Or, cover bowl with plastic wrap and microwave for 1-2 minutes or until reaches desired tenderness.
