MEXICAN STACK-UP #RSC
Ready, Set, Cook! Reynolds Wrap Contest Entry. This recipe combines traditional Mexican flavors and creates a fun "stack up" meal. It uses Reynolds Wrap Aluminum Foil to steam off the skin of the poblano pepper, as well as tent the dish while baking. This can be served as a main dish casserole or a yummy appetizer if sliced into small pieces.....great football food. Six servings as a main dish casserole or 12-15 appetizer sizes. If you like things hotter, add some diced jalapenos and garnish with jalapenos as well. Enjoy!

- Preheat broiler to high broil. Set the rack 6 inches from the heating element. Place the poblano pepper on a baking sheet and broil for 4 minutes on each side, or until the skin is blistered and rising up.Watch closely so you don't scorch your pepper. Remove from the oven and place the poblano pepper on a sheet of Reynold's Wrap aluminum foil and wrap loosely to allow the pepper to steam for 10 minutes.
- Turn the broiler off and preheat the oven to 350 degrees. Add olive oil to a large skillet and heat over medium heat. Add the green onions and cook for 1 minute, then add the garlic and cook for 1 minute. Add the ground beef and cook until no longer pink. Drain all grease from the pan, using a paper towel to soak up any extra grease.
- While the onions and meat are cooking, remove the poblano from the Reynold's Wrap aluminum foil and let cool a bit. Peel the skin from the poblano and dice.
- Add the chicken stock, taco seasoning, cayenne pepper, diced poblano peppers, black beans, corn, cilantro, cream cheese and chives to the skillet. Cook while stirring until it is creamy. Taste and add salt and pepper as you feel is needed. Remove from heat.
- Choose a casserole dish that is at least 2 1/2 inches to 3 inches deep and can hold 2 stacks of 5 inch corn tortillas. Otherwise, you can make two separate casserole dishes. Spray with oil and place 2 corn tortillas (making 2 stacks!) in the casserole dish. Spread 1/4th of the meat mixture on top of the two tortillas. Top with 1/4 of the cheese. Repeat this step 3 times, ending with cheese.
- Loosely tent your casserole dish with Reynolds Wrap Aluminum Foil. Use no stick Reynolds Aluminum Foil if you are afraid your cheese will attach to the aluminum foil. Bake at 350 degrees for 20 minutes. Remove the Reynolds Wrap Aluminum Foil and bake for an additional 15 to 20 minutes. Let the dish sit for 5 minutes before slicing and serving. Enjoy!

CROCK POT MEXICALI CHICKEN
A good chicken Crock Pot recipe is essential in a recipe box and this is one of the easiest. Six ingredients and you have a delicious shredded chicken that can be used for tacos, served over rice, or just eat it alone (it's that hearty). The chicken just falls apart after being slow cooked. It reminds us of chicken tortilla soup....

- 1. Spray the Crock Pot with non-stick cooking spray.
- 2. Put in the chicken breasts.
- 3. Sprinkle with cumin (if desired).
- 4. Drain the corn and black beans. Add to Crock Pot.
- 5. Add the salsa to the Crock Pot.
- 6. Cook on low for 6-8 hours, or on high for 2-3 hours until chicken is tender.
- 7. Top with cheese and cook for about 20 minutes longer until the cheese is melted.

- In a small bowl, combine the tomato, onion, jalapenos, lime juice, garlic, salt and pepper. Chill until serving., Sprinkle chicken with taco seasoning; set aside. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain., If grilling the chicken, moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 165°., Top with bacon and cheese; cook 1 minute longer or until cheese is melted. SARCIE'S CHICKEN MEXICALI
This is my sister's favorite dish that my mom makes. It's a wonderful mexican-inspired casserole of layers of corn tortillas, cheese, and a creamy chicken, black bean, and green chili mixture. A great use for leftover chicken.*Edited per reviewers suggestions that it was too runny. Should set up fine now. Saucy but not runny.*

- Combine all the layer 2 ingredients in a large bowl.
- Put layer 1(the tortillas) in the bottom of a 9x13 baking dish.
- Spread layer 2(chicken mixture) over the tortilla's.

- Bake at 375* for 45 mins until hot and bubbly. Let stand 15 minute before serving.

- 1. Preheat oven to 375 degrees F. Brush chicken with olive oil and sprinkle with half of the Mrs. Dash® Extra Spicy Seasoning Blend. Arrange in a baking dish.
- 2. Bake 15 minutes. Turn chicken pieces over and sprinkle with remaining Mrs. Dash® Extra Spicy Seasoning Blend. Bake an additional 10-15 minutes or until cooked through.
- 3. Serve with lime or lemon wedges if desired.
LOADED MEXICALI CHICKEN
Subscribed to one of those recipe card subscriptions when we first got married--back in 1978. This recipe has been a family favorite for years now. We whip up a batch of long-grain brown rice and use the sauce from the chicken for a "gravy" (Mexican rice!). Leftovers are even BETTER than the first-runs!

- In a hot pan, melt butter and oil; immediately brown chicken on all sides (about 15 minutes total).
- Put rice and water into a covered large casserole pan--microwave for about 45 minutes until soft and plump--check your owner's manual. My microwave has "rice" cycle.
- Preheat oven to 350°F.
- Mix sauce ingredients--EXCEPT cheese.
- Place chicken in a 13x9-inch pan or a casserole dish, pour sauce over the chicken, then sprinkle with cheese; cover lightly with foil.
- Bake chicken for 35-40 minutes; remove foil, continue baking for 5-10 minutes.
- Serve with rice and use chicken sauce for a gravy.
MEXICALI CHICKEN STACK-UPS

- Place one tortilla in the bottom of a lightly greased 2-quart round casserole dish; set aside. In a bowl, mix chicken, salsa, olives, cumin and 3/4 cup cheese. Spoon 1/3 of chicken mixture over tortilla in dish. Repeat layering, ending with the last tortilla. Sprinkle with remaining cheese. Cover with aluminum foil. Bake at 350 degrees for 30 to 35 minutes, until hot and bubbly, uncovering for the final 5 minutes. Cut into wedges and serve with sour cream. Tip: Tortillas come in several different sizes and types...you may even be able to find sopes, which are small thick corn disks with a raised edge. Here's a handy size guide:For tacos, use 6-inch tortillas For fajitas, use 8-inch tortillas For burritos, use 10-inch tortillas
