I've been fixing this "queso dip" for years. It's quick and easy to fix, and it tastes a lot better than most. Don't replace the Velveeta with "real cheese". You need it for good texture.

Number Of Ingredients 10

2 (4 ounce) cans diced green chilies
2 -3 pickled jalapeno peppers, drained,seeded if desired,and chopped,to taste
2 (1 lb) cans peeled whole tomatoes, drained well and coarsely chopped
1 medium onion, finely,more to taste
1 teaspoon salt, to taste
1/2 teaspoon fresh ground black pepper, to taste
1 lb velveeta process American cheese, cubed
1/2 lb sharp cheddar cheese, shredded
1/2 lb monterey jack cheese, shredded
tortilla chips, as accompaniment

Steps:

  • Combine everything except cheeses in a medium saucepan over medium heat, and bring to a simmer just until onions soften.
  • Reduce heat to low, fold in cheeses, and continue to cook, stirring frequently, until cheese is melted and smooth.
  • Serve hot with tortilla chips.

4 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 large tomato, chopped
1 jalapeño pepper, seeded, minced
1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
1 green onion, sliced
2 Tbsp. chopped fresh cilantro

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add tomatoes and peppers to reserved drippings in skillet; cook and stir 3 min. or until tomatoes are softened and most the liquid is cooked off. Stir in cheese; cook and stir 1 min. or until melted.
  • Spoon into shallow serving dish; top with bacon, onions and cilantro.

I came up with this one Sunday when I had unexpected company coming after church. I stopped at a convenience store and they had no dips to go with chips, but they did have the ingredients and I just threw them together and made this dip. My family loves it.

This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

2 pounds lean ground beef
1 (16 ounce) jar taco sauce
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.
