This is hands down the best salmon log I've ever had. My family makes it for every get together, and my boyfriend demands it randomly (and he doesn't like salmon!). You don't have to chill it for that long, just until it's set.

Number Of Ingredients 9

1 (1 1/2 lb) can salmon (use canned always)
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
2 teaspoons grated onions
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/2 cup chopped pecans (optional)
3 tablespoons snipped parsley (dried works best)

Steps:

  • Drain and flake salmon, removing skin and bones.
  • Combine salmon with next six ingredients; mix thoroughly.
  • Chill several hours.
  • Combine pecans and parsley (or, just use parsley, I never use pecans).
  • Shape salmon mix in 8x2 inch log; roll in nut mix; chill well.
  • Serve with Crackers.

2 6 oz. salmon filet
3 tablespoon butter, softened
2 tablespoon horseradish
1 cup fresh bread crumbs
Salt
Pepper
1 tablespoon olive oil

Steps:

  • Check that all bones have been removed from filets. In a small bowl, cream together butter and horseradish with a spoon. Stir in breadcrumbs and combine well. Season salmon and mound breadcrumb mixture on top and press down to cover top of salmon. Preheat broiler. Heat oil in nonstick skillet. Lay salmon pieces into skillet and cook over medium high heat until browned on bottom. Slide under broiler and cook for 3-4 minutes or until golden brown on top. Keep warm in oven until ready for service.

APRICOT - HORSERADISH SALMON

Slightly tangy way to make a perfectly moist and flavorful salmon. This recipe came from Wegmans supermarket. The original recipe calls for Wegmans Triple Fruit Spread (Apricot, Peach, Passion Fruit)but if you don't have that, just use apricot.

1/4 cup apricot jam
1/2 teaspoon fresh ground pepper
1/2 teaspoon prepared horseradish
24 ounces salmon, portions

Steps:

  • Preheat grill on HIGH 10 minutes.
  • Combine fruit spread, pepper and horseradish sauce in bowl, set aside.
  • Brush tops of salmon with mixture.
  • Turn grill to medium heat. Place skin side down onto lightly oiled grill (DO NOT turn).
  • Cook 12 -15 minutes until internal temp is 130 degrees. Remove salmon, leaving the skin on the grill.
  • CEDAR PLANK OPTION: soak cedar plank 1 hour in water. Place salmon on plank, and put into grill, close cover and cook as above.

My Mom loved having her family over for Christmas Eve, and would make all kinds of finger foods and treats. One of everybody's favorites was her Salmon Log. I never got her recipe before she passed away, but found this one online a few years ago, and its just like hers. There is nothing as comforting as a reminder of something...

16 oz can of salmon
1 tsp lemon juice
2 tsp onion grated
1 tsp horseradish
1/4 tsp salt
1/4 tsp liquid smoke flavoring
1/2 c chopped pecans
3 Tbsp snipped parsley
8 oz cream cheese

Steps:

  • 1. Mix all ingredients, except pecans and parsley a day ahead and refridgerate covered.
  • 2. Form into two logs and roll in pecans to coat log.Sprinkle with parsley and refridgerate until ready to serve. Serve with crackers of your choice.

This is an easy appetizer to make, using simple ingredients that can be found at any grocery store. But it makes a great presentation. Try it on tiny rye bread slices, or sesame-seasoned crackers.

1 lb canned alaskan salmon
8 oz cream cheese, softened to room temperature
1 Tbsp lemon juice
1 Tbsp finely minced onion
1 tsp prepared horseradish
1/2 tsp salt
1/4 tsp liquid smoke flavoring
1/2 c chopped pecans
1/4 c chopped fresh parsley

Steps:

  • 1. Drain, flake, and remove bones if desired, from the salmon. Combine salmon with cream cheese, lemon juice, onion, horseradish, salt, and liquid smoke flavoring. Mix thoroughly and chill several hours or overnight.
  • 2. Combine the chopped pecans and parsley on a sheet of waxed paper. Shape the salmon mixture into a log. Roll the log in the parsley and nuts. Place on appropriate serving dish and garnish with parsley leaves if desired. Refrigerate until serving time.
