Steps:

  • Preheat oven to 160C / 140C fan / Gas Mark 3. Line 2 x 9 inch loose bottomed cake tins with non-stick baking parchment.
  • Whisk egg whites, using an electric hand whisk until stiff peaks form. Gradually whisk in the caster sugar, a tbsp at a time, until glossy and thick peaks are left, when the whisks are lifted out.
  • Scatter Jordans Chocolate Country Crisp evenly over the base of the two tins, then divide the meringue mixture between the two, smoothing with a spoon. Bake for one hour until crisp. Remove from the oven and leave to cool in the tins.
  • Meanwhile whip the cream and icing sugar together until thickened. Stir in half of the passionfruit juice. Chill until ready to assemble.
  • To serve, place one meringue layer on a serving plate, held on with a blob of cream underneath. Spoon over the flavoured cream. Add second meringue layer and spoon over the papaya, kiwi and raspberries. Drizzle with remaining passionfruit juice.

Vegetable oil for greasing
3 tablespoons all-purpose flour plus additional for dusting
1/2 cup granulated sugar
5 large egg whites, at room temperature for 30 minutes
3 oz almonds or hazelnuts, toasted (see cooks' note, below), chopped, and finely ground in a food processor (3/4 cup)
5 1/2 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1/4 cup water
1 teaspoon instant-coffee granules
1 1/2 cups chilled heavy cream
3 tablespoons confectioners sugar
1 tablespoon kirsch or Cognac
Garnish: grated bittersweet chocolate or chocolate curls

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 425°F.
  • Oil 2 large baking sheets and dust with flour, knocking off excess. Trace 2 (8-inch) rounds on each baking sheet with a fingertip, using an inverted plate or a saucepan lid as a guide.
  • Whisk together flour and granulated sugar in a small bowl. Beat egg whites with a pinch of salt in a bowl using an electric mixer at medium-high speed until they just hold stiff peaks. Fold in sugar mixture gently but thoroughly, then fold in nuts. Divide meringue among circles, spreading to fill in circles thinly and evenly.
  • Bake meringues in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden brown, 8 to 10 minutes total (meringue will be soft). Loosen meringue rounds with a large metal spatula and transfer to racks to cool.
  • While meringues cool, heat chocolate, water, and coffee in a small heavy saucepan over moderately low heat, stirring until smooth. Cool to lukewarm, then spread chocolate evenly over tops of meringue rounds. Cool at room temperature until chocolate is set, about 3 hours.
  • Beat cream with confectioners sugar and kirsch in a bowl with cleaned beaters until it holds stiff peaks. Arrange 1 meringue round, chocolate side up, on a cake stand or plate, then spread 1/3 cup whipped cream over it. Top with a second round and spread with 1/3 cup whipped cream. Repeat, then top with remaining meringue round. Frost top and side of torte with remaining whipped cream.

CRISPY BAKED MERINGUES

I saw this recipe on a recent episode of "French Food at Home" on Food Network Canada. These meringues are crispy on the outside and fluffy in the middle. Note that I've reduced the amount of icing sugar as the original version is just a little too sweet.

4 egg whites
1 pinch salt
1 teaspoon vanilla
1/8 teaspoon cream of tartar
2/3 cup sugar
1/3 cup icing sugar
1 tablespoon cornstarch

Steps:

  • Whip the egg whites and salt into peaks.
  • Add the vanilla, and continue beating until the mixture forms stiff peaks.
  • In a separate bowl, stir the cream of tartar into the regular sugar and whisk into the whites very gradually, a spoonful at a time, until the meringue is stiff and the sugar has dissolved.
  • Sift together the icing sugar and cornstarch. Sift over the meringue and gently fold until fully incorporated.
  • Pipe or spoon the meringues onto a parchment-lined baking sheet. Each meringue should be about the size of a bar of soap.
  • Bake at 225ºF/110ºC until cream-coloured and crisp on top when tapped, 1 to 1-1/2 hours.
  • Remove from the oven. Cool on the trays. Store in an air-tight container.

2 egg whites
¼ teaspoon cream of tartar
¼ teaspoon salt
½ teaspoon vanilla extract
½ cup white sugar

Steps:

  • In a large bowl, beat egg whites, cream of tartar, and salt until soft peaks form. Add vanilla, and slowly beat in sugar until very stiff and glossy. Spread mixture into a 9 inch pie plate to form a shell.
  • Bake at 300 degrees F (150 degrees C) for 50 minutes. Turn oven off, and leave meringue in oven for 1 hour. Cool.
