4 oz smoked sausage, chopped
3 Tbsp all-purpose flour
1 tsp salt
1/2 tsp pepper
4 bone-in center-cut pork chops, 1.25" thick
3 Tbsp vegetable oil
1 pkg gumbo frozen vegetable mix, 16 oz (mix of onion, celery, and bell pepper)
1 can(s) chicken broth, 14 oz
1/2 tsp dried thyme
1 Tbsp corn starch
2 Tbsp water
hot cooked rice
4 green onions, sliced
hot sauce (optional)

Steps:

  • 1. Saute sausage in a large skillet over medium-high heat until browned.
  • 2. Drain sausage, reserving drippings in pan.
  • 3. Combine flour, salt, and pepper in a large Ziploc bag; add pork chops. Seal bag and shake to coat.
  • 4. Add oil to drippings in skillet.
  • 5. Cook pork chops in hot oil over medium-high heat for 3 minutes on each side or until browned.
  • 6. Transfer pork chops to a 5 or 6-quart slow cooker.
  • 7. Layer vegetables and sausage over pork chops.
  • 8. Add broth and thyme.
  • 9. Cover and cook on LOW for 6 hours.
  • 10. Remove pork chops from slow cooker; cover and keep warm. Increase temperature to HIGH.
  • 11. Combine corn starch and 2 tablespoons water, stirring until smooth. Stir corn starch mixture into vegetables in slow cooker.
  • 12. Cook, uncovered, 10 more minutes or until thickened.
  • 13. Spoon rice onto serving plates; top with pork chops. Spoon vegetables and sauce over pork chops. Sprinkle vegetables with green onions and serve with hot sauce, if desired.

Nana's Melt in Your Mouth Blue Cheese Pork Chops image

My Mom,(called Nana by her Grands), made these for us for years. They truly do melt in your mouth . If you are a Blue CHeese fan, these are for you. A fix and forget main dish. I always serve either rice or noodles with it so I don't miss any of the yummy gravy. Also, she used very thick bone in chops, I mostly use the boneless ones, but they really should be thick ones, no matter which type you choose.

4 pork chops, thick cut
1 (10 1/2 ounce) can chicken broth
4 tablespoons flour, seasoned
4 ounces blue cheese, crumbled
2 tablespoons oil

Steps:

  • Pre-heat oven to 250.
  • Season the chops on both sides with salt, pepper and a little garlic powder.
  • Lightly coat the chops in the sesoned flour.
  • Heat oil in skillet and brown chops on both sides.
  • Remove from pan and place in a Dutch Oven or an oven proof pan with a tight fitting lid or one that can be covered with foil.
  • place the chops in the pan in a single layer and pour the chicken broth around them.
  • Sprinkle the cheese evenly on top of the chops and cover the pan.
  • Bake 3 hours on low, checking every so often to make sure they are not getting too dry. If need be add more broth,. but it should be okay. It will make it's own gravy to serve along side or over noodles or rice. We love this dish, my husand frequently requests it for his bithday dinner. Hope you enjoy it too.
