Steps:
- In 1-quart saucepan, heat sugar, water, mint and lime peel to boiling; reduce heat. Simmer uncovered about 5 minutes or until sugar is dissolved.
- In heatproof medium bowl, place honeydew and cantaloupe balls; pour hot syrup through strainer over melon, removing lime peel and mint. Cover; refrigerate at least 1 hour or until chilled.
- To serve, divide melon balls and syrup among 4 parfait glasses or dessert dishes. Top with club soda.
