Trixie's Salmon Patties With Creamed Peas image

This was my mom's recipe (Trixie was my dad's nickname for her; sure to get a reaction!). It's quick, easy, inexpensive, and true comfort food. Be sure to serve with homemade mashed potatoes to get the full effect.

1 (15 ounce) can salmon, drained, bones & skin removed
4 ounces saltine crackers (one tube)
2 -3 eggs, depending on size
1 small onions, finely diced or 1 small onion, pureed
1 teaspoon poultry seasoning
fresh black pepper, to taste (don't add salt unless your crackers are unsalted)
2 tablespoons butter (for frying)
2 tablespoons vegetable oil (for frying)
1 (10 ounce) bag frozen peas, thawed, drained, but not cooked
3 tablespoons butter
1 1/2 cups milk or 1 1/2 cups half-and-half
3 tablespoons flour
salt and pepper

Steps:

  • In a medium mixing bowl combine all salmon patty ingredients.
  • Using your hands, mix well and shape into 8 patties.
  • In a large fry pan, melt butter and oil over medium heat until hot.
  • Add patties and saute 2 minutes per side, or until crisp and well browned.
  • Hold in a warm oven while preparing creamed peas.
  • In a medium sauce pan over medium heat, melt butter.
  • Add flour and cook, stirring constantly, for one minute.
  • Gradually add milk or half& half while whisking to prevent lumps.
  • Cook until the sauce bubbles and thickens.
  • Add the thawed, drained peas and stir until peas are hot.
  • Serve two patties per serving, topped with the creamed peas.

Dress your salmon patties with the Creamed Pea sauce to give them a new flavor dimension and set them apart from the ordinary! Asparagus can be substituted for the peas.

2 -4 tablespoons all-purpose flour
2 -4 teaspoons canola oil or 2 -4 teaspoons olive oil
1 (16 ounce) can salmon, reserve liquid
1 cup instant mashed potatoes
1/4 cup onion, grated or diced
2 teaspoons lemon juice
1/4 teaspoon ground black pepper
2 large eggs
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon dried dill weed
1/2 teaspoon seasoning salt
3/4 cup milk (skim, 2% or whole)
1 (8 ounce) package frozen green peas

Steps:

  • PATTIES: Drain liquid from salmon and reserve for sauce.
  • Remove bones and skin, and flake salmon.
  • Mix all patty ingredients together.
  • Form into 4 patties.
  • Dip both sides in flour.
  • In frying pan, heat oil and fry patties over medium heat until lightly browned on both sides- about 10 minutes.
  • SAUCE: While patties are cooking, place peas in colander and rinse with hot water to defrost.
  • Drain In saucepan or skillet, melt butter; with whisk, stir in flour.
  • Gradually whisk in 1/4 cup reserved salmon liquid and milk, whisking to form a creamy sauce.
  • Add dill, salt and pepper, stirring constantly over medium heat until mixture gently boils and thickens.
  • Stir in the pea and cook 30 seconds to warm.
  • Do not cook peas.
  • Place patties on individual plates and spoon the sauce over.
  • ***Note: If you prefer, you can place the salmon mixture in 4 greased muffin cups and bake at 350 degrees for 25-30 minutes.
  • If using this method, omit the first two recipe ingredients (oil and flour).
  • VARIATION: You can substitute lightly steamed fresh asparagus for the peas.
  • If using asparagus, do not put in sauce.
  • Place asparagus over salmon patties and spoon sauce over both.

2 tablespoons butter
2 tablespoons all-purpose flour
1 1/4 cups milk
salt and pepper
14 3/4 ounces salmon, drained and picked free of bones and skin
1 cup canned peas
1 teaspoon lemon juice
1/4 teaspoon dried dill

Steps:

  • Melt butter in a large pan, add flour and cook over medium heat until light brown and pasty (1-2 minutes).
  • Slowly add milk and whisk until all flour bits are broken up. Continue to whisk while milk comes to a boil and thickens, and add salt and pepper to taste.
  • When cream sauce is slightly thickened, add salmon and peas and continue to cook until sauce is thickened up and the salmon and peas are heated through. Stir in lemon juice and dill.
  • Serve over hot white rice, toasted bread, a hot biscuit or puff pastry.

3 tablespoons all-purpose flour
1 cup cold milk
1 (10 ounce) can canned green peas, drained, liquid reserved
1 (14.75 ounce) can salmon
salt and pepper to taste

Steps:

  • In a saucepan or skillet, melt butter over medium heat. Whisk in flour, stirring constantly, until a smooth paste is formed. Gradually add milk and reserved liquid from peas, stirring constantly, until a smooth thick gravy is formed.
  • Flake salmon into a bowl, breaking apart any large pieces. Stir salmon and peas into the sauce carefully with a wooden spoon to avoid mashing the peas. Cook until heated through. Adjust seasoning with salt and pepper.

1 (14 1/2 ounce) can salmon
2 eggs
16 crackers
1/2 cup diced onion
1/2 teaspoon garlic powder
1/2 teaspoon parsley flakes
2 tablespoons butter
2 tablespoons flour
1 cup peas, frozen not canned they hold up better
2 cups milk

Steps:

  • SALMON PATTIES.
  • remove skin & bones from the canned salmon & discard
  • Mix salmon, eggs, crushed up crackers, onion, garlic powder, parsley flakes & form into patties. dust both sides with flour.
  • in frying pan add evoo or butter & fry up patties until browned on both sides & set on plate with foil loosely over the top to keep warm until all are done.
  • in another pan add your butter & melt, then add flour until browned & cook out the flour taste. Next add your milk and boil to make a thick roux. After the white sauce gets thick add your peas & your done. Add a dash of salt & pepper to your liking. Pour the white pea sauce over patties & enjoy!

l large can of boneless pink salmon ( or 3 small cans)
8-10 crushed townhouse crackers (or crackers of your choice)
2 large eggs beaten
2 tbs salad dressing or mayo ( your choice)
3 tbs milk
1 tbs lemon juice
dash or two of dillweed (optional)
dash or two of garlic powder
salt/pepper to taste or diet
sauce: 1 can of condensed cream of mushroom or celery soup with 2/3 can of milk
optional topping: 1/4 cheese slice ( of your choice)

Steps:

  • 1. Begin by adding salmon in large bowl and breaking up with fork until fine . Add all ingredients one by one mixing well.
  • 2. Form 5 patties
  • 3. Add 3 tbs cooking oil to skillet .. once hot .. add patties ... fry until both side are a nice crisp brown .. remove from skillet .. set aside.
  • 4. In separate pan add can of cream of celery or mushroom soup using only 2/3 can of milk .. heat until soup begins to bubble .. turn off heat. Spoon over patties .
  • 5. Optional: lay 1/4 cheese slice over hot patties.
