1 can (5 oz.) white tuna in water, drained, flaked
2 green onions, finely chopped
2 Tbsp. chopped red peppers
1/4 cup ATHENOS Creamy Greek Dressing & Dip with Real ATHENOS Feta Cheese, divided
4 Boston lettuce leaves
1/2 cup ATHENOS Pita Chips Original
10 Kalamata olives
1/2 cup cucumber slices

Steps:

  • Mix tuna, onions, peppers and 2 Tbsp. dressing until blended; spoon onto lettuce leaves. Place in 2 separate to-go lunch containers.
  • Place each of the remaining ingredients in separate small containers; place next to wraps. Cover with lids.
  • Refrigerate up to 12 hours. Drizzle lettuce wraps with remaining dressing before serving.

1 teaspoon capers
3/4 cup cucumber
6 ounces solid white tuna packed in water
2 garlic cloves (or 2 tsp garlic powder)
8 kalamata olives
1 lemon
3/4 cup chopped tomato
1 tablespoon olive oil
4 large lettuce leaves
1 teaspoon pepper

Steps:

  • Combine the olives, garlic and capers in an electric food processor, and process to form a paste. With the motor still running, slowly add the olive oil through the feed tube and blend thoroughly. Then add the tuna, lemon juice, pepper and pulse until blended but still chunky. Then take out of the food processor and mix with the chopped tomatoes and cucumber. Scoop out portions of this mixture onto lettuce leaves and wrap em up :).
