1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
3 celery ribs, chopped
1 small sweet red pepper, chopped
4 green onions, chopped
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons spicy brown mustard
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (5 ounces each) albacore white tuna in water
4 cups shredded lettuce
1/2 cup crumbled feta or blue cheese, optional

Steps:

  • In a large bowl, combine the beans, celery, red pepper and green onions. In a small bowl, whisk the oil, vinegar, mustard, basil, salt and pepper. Pour over bean mixture; toss to coat. Gently stir in tuna., Serve over lettuce. Sprinkle with cheese if desired.

2 tuna steaks (8 ounces each), cut into 1/2-inch cubes

I found the original recipe in an article and tweaked it to my taste. Have to say that I like this Mediterranean version of tuna salad better than normal mayo/prepared mustard version. Spread into pita bread or on sandwich bread and enjoy... I like to add slices of Swiss or Cheddar cheese and a handful of fresh spinach leaves.

1 cup fresh tomato, finely chopped
1/2 cup olive oil
1 tablespoon lemon juice
2 1/2 teaspoons Dijon mustard
3 large garlic cloves, or to taste, finely chopped
1/4 teaspoon dried basil leaves
2 (6 ounce) cans solid white tuna packed in water
1/2 cup celery, finely chopped
1/2 cup fresh basil, finely chopped or to taste
1/2 lb fresh green beans, steamed
1 red bell pepper, medium, seeded, sliced thinly
8 cherry tomatoes
1/2 tablespoon fresh oregano, finely chopped
2 1/2 tablespoons white vinegar or 2 1/2 tablespoons red wine vinegar
1 tablespoon green onion, finely chopped
salt, to taste

4 slices bread, tomato herb or your choice

Steps:

  • In medium mixing bowl combine diced tomato, 1 tablespoon oil, lemon juice, mustard, 2 large cloves of garlic finely chopped, and dried basil. Mix well and let stand for five minutes. Add tuna, celery, and fresh basil to tomato mixture and combine well. Cover and refrigerate for one to two hours or overnight. Stir before serving.
  • In another medium bowl, add remaining fresh basil, fresh oregano, and vinegar. Mix well and let stand for 10 minutes. Add onion and remaining garlic. Set aside.
  • Rinse fresh green beans well and snap ends off. Drop beans into medium pot of boiling water just until they begin to get tender. Drain green beans. Add drained beans, red pepper strips and cherry tomatoes to herb vinegar mixture. Mix well and refrigerate for one hour.
  • When ready to serve, drizzle olive oil on bread slices, grill lightly, and than arrange of large platter. Stir tuna salad and mound on top of grilled bread slices. Add remaining olive oil, salt and pepper to green bean mixture. Combine well and spoon green bean mixture around grilled bread slices with tuna. Sprinkle with parmesan cheese if desired.

1/4 cup water
3 tablespoons balsamic vinegar
2 teaspoons extra-virgin olive oil
1 teaspoon Dijon mustard
3/4 pound haricots verts (thin French green beans) or regular green beans
1 red bell pepper
1/2 English cucumber
10 Kalamata or other brine-cured black olives
two 6-ounce cans solid white tuna in water
1/3 cup crumbled feta (about 2 ounces)

Steps:

  • Separate garlic cloves, leaving skins intact. In a large kettle cover potatoes with salted water by 2 inches and add garlic. Simmer potatoes and garlic until potatoes are just tender, about 20 minutes. Drain potatoes and garlic in a colander and, when cool enough to handle, cut potatoes into 1/4-inch-thick slices. Peel garlic and in a blender puree with water, vinegar, oil, mustard, and salt and pepper to taste. Potatoes may be prepared and dressing made 1 day ahead and chilled separately, covered.
  • Cut beans into 1-inch pieces. Have ready a bowl of ice and cold water. In a large saucepan of boiling salted water cook beans until crisp-tender, about 3 minutes for haricots verts or 6 minutes for regular green beans. In a colander drain beans and plunge into ice water to stop cooking. Pat beans dry. Cut bell pepper into 1/4-inch dice and halve cucumber lengthwise. Seed cucumber and diagonally cut into 1/4-inch-thick slices. Pit and chop olives. Vegetables and olives may be prepared up to this point 4 hours ahead and chilled separately, covered.
  • Drain tuna and transfer with potatoes, beans, bell pepper, cucumber, and olives to a large bowl.
  • Just before serving, toss salad with dressing and crumble feta on top.

1 ½ tablespoons lemon juice
4 (7 ounce) tuna steaks
2 tablespoons olive oil

Steps:

  • Heat 1 tablespoon of olive oil in a large saucepan over medium heat, and cook and stir the carrots, red onion, garlic, and salt and pepper until the onions are translucent, about 5 minutes. Stir in the lentils and water, bring to a boil, and reduce heat to a simmer. Cook the lentils until tender but not mushy, about 20 minutes. Drain off excess liquid, and transfer to a bowl. Stir in 3 tablespoons of olive oil, 1 1/2 tablespoons of lemon juice, parsley, and additional salt and black pepper if needed.
  • Drizzle 1 1/2 tablespoons of lemon juice over the tuna steaks, and sprinkle both sides of the steaks with salt and pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until the oil is very hot, place the steaks into the hot oil, and sear on each side until the outside of the tuna is well browned and the inside is pink, about 2 minutes per side. Coarse salt
4 ounces haricots verts, stems trimmed
12 ounces cherry tomatoes, quartered
3 anchovy fillets, finely chopped
12 Kalamata olives, pitted and thinly sliced
1/4 cup thinly sliced fresh basil
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Freshly ground pepper
4 small yellowfin tuna steaks (about 2 1/2 pounds total)
Sliced crusty bread, for serving

Steps:

  • Cover potatoes with cold water in a medium saucepan; add salt. Bring to a boil; cook until potatoes are tender, 10 to 12 minutes. Drain, and rinse under cold running water. Cut potatoes into 1/4-inch-thick slices; transfer to a large bowl.
  • Prepare an ice-water bath; set aside. Bring a medium saucepan of water to a boil. Add haricots verts; cook until almost tender, 4 to 5 minutes. Plunge haricots verts into ice-water bath; let cool completely. Drain, and cut haricots verts in half. Add to bowl with potatoes. Add tomatoes, anchovies, olives, basil, oil, and lemon juice; season with salt and pepper. Toss to combine, and set aside.
  • Preheat grill to high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 2 seconds). Season tuna with salt and pepper. Grill tuna, turning once, 3 minutes per side for rare. Transfer to a cutting board; slice tuna against the grain. Grill bread, turning once, until slightly charred. Serve tuna with salad and bread.

1/2 cup diced fresh tomato
2 teaspoons dried oregano
3/4 cup feta cheese, crumbled
3 -4 tablespoons olive oil (to taste)

Steps:

  • Drain tuna and flake into a mixing bowl.
  • Coarsely chop, or quarter, artichoke hearts and mix with tuna.

This is so easy to make and usually I have all the ingredients at home. It is healthier and lighter than the heavy mayonnaise tuna salads and more convenient to take along to picknicks and barbeques. It tastes great served on lettuce or on bread. You can use any fresh herbs you want with this. I like it best with either sage or rosemary and thyme. One more tip: Use solid tuna, not the flaky kind, to get the best results.

1 (16 ounce) can cannellini beans, drained and rinsed
3 (6 ounce) cans tuna, packed in water, drained
1 red onion, chopped finely
3 tablespoons lemon juice
2 tablespoons red wine vinegar
2 tablespoons balsamic vinegar
4 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons fresh herbs, chopped
salt and pepper

Steps:

  • First combine all of the liquid ingredients,garlic, salt and pepper. Whisk.
  • Add the remaining ingredients. Stir to combine.
  • Refrigerate at least 2 hours for best results.
  • You could add chopped black olives or diced tomatoes on top to garnish.

Crisp croutons add a toasty crunch to this twist on tuna salad. Make them in a skillet instead of the oven to keep the kitchen heat down.

1/2 baguette, cut into 3/4-inch cubes (about 3 cups)
4 tablespoons olive oil
Coarse salt and ground pepper
1 small garlic clove
3 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1 head Boston lettuce (about 10 ounces), torn into pieces
2 plum tomatoes, cored, halved lengthwise, and sliced 1/2 inch thick
1 English cucumber, halved lengthwise, seeded, and thinly sliced
1/2 cup pitted Kalamata olives, halved
2 cans (6 ounces each) tuna packed in olive oil, drained

Steps:

  • In a large skillet, toss bread with 2 tablespoons oil; season with salt and pepper. Cook over medium heat, tossing frequently, until croutons are golden and crisp, 10 to 12 minutes. Set aside.
  • Finely chop garlic, and sprinkle with salt. Using a chef's knife, press the flat side of the blade back and forth across garlic to make a paste. Transfer to a large bowl; whisk in lemon juice, mustard, and remaining oil. Season dressing with salt and pepper.
  • To bowl, add lettuce, tomatoes, cucumber, olives, and croutons; toss to combine. Divide salad among four plates, and top with tuna.
