1 1/4 lbs fresh lean ground turkey (1 package)
1/4 cup chopped onion
1 1/2 teaspoons dried oregano
1/2 teaspoon dried mint
1/2 teaspoon parsley
1/2 teaspoon lemon pepper (be aware that most lemon pepper blends are salty, so add any additional salt sparingly)
1 garlic clove, minced
1 teaspoon lemon juice
1/2 cup nonfat sour cream
1/2 medium cucumber, peeled and finely chopped
1 1/2 teaspoons lemon juice
1/8 teaspoon black pepper
3 (6 inch) pita breads, cut in half crosswise (or flour tortillas)
6 lettuce leaves, torn into pieces
1 medium tomatoes, chopped

Steps:

  • Combine turkey meatball ingredients; mix well. Shape into 18 (1 1/4") balls.
  • Using skillet coated with non-stick cooking spray, cook meatballs 8 to 10 minutes or until browned and no longer pink in center; stir occasionally.
  • Combine sauce ingredients.
  • Place 3 meatballs in each pita half. Add lettuce and tomato. Top with sauce.
  • Alternatively, place filling in a flour tortilla, and fold burrito style for a wrap!
  • Serves 6.

1 teaspoon paprika
½ teaspoon cumin

3 cloves garlic, minced

4 boneless chicken breasts, cut in large bite-sized pieces
1 large onion, chopped in large pieces
8 wooden skewers, soaked in water
½ head green cabbage, shredded
½ red onion, thinly sliced
1 small bunch flat-leaf parsley, chopped
½ cup Marie's® Original Coleslaw dressing
½ teaspoon red pepper flakes
6 pieces pita bread
2 medium tomatoes, sliced

Steps:

  • Marinate the chicken: In a mixing bowl, whisk together Marie's Original Coleslaw dressing, paprika, cumin, cinnamon, garlic, red pepper flakes, lemon zest, lemon juice, salt, and pepper.
  • Alternate pieces of chicken and onion onto each skewer, then place skewers in a shallow baking dish. Pour the marinade mixture over the chicken skewers, coating them well. Cover and refrigerate for at least 1 hour or up to overnight.
  • Prepare the slaw: In a large bowl, stir together the cabbage, onion, parsley, and Marie's Original Coleslaw dressing until thoroughly combined. Sprinkle with red pepper flakes for an extra kick of spice, if you like.
  • Preheat grill to medium-high heat. Brush the grates with a little oil to coat and grill the marinated chicken skewers. Turn skewers occasionally until chicken is fully cooked, about 15 minutes. Transfer to a platter and serve immediately with warm pita bread, slaw, sliced tomatoes, and extra Marie's Original Coleslaw dressing for drizzling.

12 pita pocket halves
Cooking spray
1-3/4 teaspoons garlic powder, divided
12 ounces cream cheese, softened
1 cup plain yogurt
1 teaspoon dried oregano
3/4 teaspoon ground coriander
1/4 teaspoon pepper
1 large tomato, seeded and chopped
5 pepperoncini, sliced
1/2 cup pitted Greek olives, sliced
1 medium cucumber, seeded and diced
1/3 cup crumbled feta cheese
2 tablespoons minced fresh parsley

Steps:

  • Cut each pita half into three wedges; separate each wedge into two pieces. Place on an ungreased baking sheet. Spritz both sides of wedges with cooking spray; sprinkle with 1 teaspoon garlic powder. , Bake at 350° for 5-6 minutes on each side or until golden brown. Cool on wire racks., Meanwhile, in a small bowl, beat the cream cheese, yogurt, oregano, coriander, pepper and remaining garlic powder. Spread into a 9-in. pie plate. Top with tomato, pepperoncini, olives, cucumber, feta cheese and parsley. Serve with pita chips.

1 cup leftover Pickled Cucumber Salad from recipe

Steps:

  • In a small bowl mix together the yogurt, parsley, hot sauce, cumin, and salt and pepper, to taste.
  • Slice the top off of each pita pocket. Fill each pocket with 2 slices of brisket, a quarter of the pickled cucumbers and drizzle with the yogurt mixture. Arrange on a serving platter and serve.

1 (10 ounce) box frozen peas
2 medium tomatoes, washed and chopped
2 ounces feta cheese, crumbled
2 green onions, chopped

1/2 cup plain yogurt (low-fat is okay)
1/2 cup mayonnaise (Hellman's is best, low-fat is okay)
1 tablespoon lemon juice
1 teaspoon dried dill (or to taste)
4 (1 1/2 ounce) pita breads, halved crosswise
4 whole iceberg lettuce or 4 whole shredded lettuce, if desired

Steps:

  • Bring a half cup of water to a boil in a medium saucepan; add the frozen peas, bring to a boil, and simmer for 4 minutes (do not overcook); drain, and set aside.
  • In a large bowl, combine the cooked chicken, cooked peas, tomatoes, feta cheese, green onion and black pepper if desired.
  • Fold in the yogurt, mayo, lemon juice and dillweed; toss well to combine.
  • Line the pita halves with a leaf of lettuce or shredded lettuce if desired, and stuff with chicken mixture.

Extra-virgin olive oil, for brushing and drizzling
Coarse salt and freshly ground pepper
4 6-inch pitas
1 1/3 cups prepared hummus
1 cup cherry tomatoes, halved (about 4 ounces)
2 scallions, trimmed and thinly sliced (about 4 ounces)

1 cup feta cheese
1/2 teaspoon dried Italian seasoning
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
8 ounces ground sirloin
Four 6-inch pitas
2 tablespoons sliced fresh mint (about 2 sprigs)
10 pitted black olives, halved
1 plum tomato, cut into 1/4-inch slices
1/4 small red onion, thinly sliced

Steps:

  • 1. Preheat a grill on medium-low heat. Using a fork, mix together the feta, 1/3 cup warm water, 1/4 teaspoon of the Italian seasoning, the lemon zest, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small mixing bowl until the mixture comes together and the feta is in small chunks. Set aside.
  • 2. Heat the oil in a large nonstick skillet over medium-high heat. Add the sirloin, the remaining 1/4 teaspoon Italian seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until the meat is no longer pink and begins to brown, 2 to 3 minutes. Drain any liquid off and set aside.
  • 3. Spread the feta mixture on the pitas and top with the cooked meat. Place a large piece of nonstick foil directly onto the preheated grill. Place the pitas on the foil, cover and grill until the bottoms begin to char and the cheese melts, about 3 minutes. 8 ounces low fat soft cream cheese (sometimes I use 12 oz if I want a thicker dip)
8 ounces plain yogurt, Greek yogurt is the best
1 1/2 tablespoons ground coriander
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 teaspoon garlic salt
1 tomatoes, chopped
5 pepperoncini peppers, sliced
1/2 cup sliced kalamata olive, pitted and sliced
1 medium cucumber, seeded and diced
1/3 cup feta cheese, crumbled
1/2 cup chopped fresh curly-leaf parsley
5 pita bread rounds, opened and cut into triangles
olive oil flavored cooking spray
garlic salt

Steps:

  • Mix yogurt, cream cheese and first 4 dried spices until well blended. Spread dip in shallow glass casserole dish or pie plate. Cover and let sit in refrigerator for a few hours if you can.
  • Carefully open the pita breads and cut into triangles, and place on two baking sheets spraying both sides with olive oil spray (or brush a small amt on each one) and lightly sprinkle with garlic salt. If the pita bread will not separate, then just cut them into the wedges and brush a small amount of olive oil onto each side instead of using the olive oil spray. Bake at 350 until just starting to brown on edges, about 10 minutes or so.
  • Peel and seed the cucumber (seed it by cutting lengthwise and running a spoon along the center). Chop finely and layer on top of dip. Follow with diced tomatoes, black olives, pepperoncinis and feta cheese. Top with chopped parsley if desired.

This is a very simple spicy stir-fry recipe based on similar dishes from several Mediterranean countries. It is healthy, economical, easy and quick to make in a Wok or Karhai. My kids have adored it since they were toddlers, and that was many years ago! The accuracy of amounts does not matter but keep the ratios about the same though. Use fresh lean and tender Pork. Experiment! That's what cooking is about

1 lb pork
2 -4 fresh chili peppers
2 red capsicums
1 yellow capsicum
1 green capsicum
2 large Spanish onions
2 -3 large fresh tomatoes
4 -6 garlic cloves
2 cm fresh ginger
6 -12 drops Tabasco sauce
1 1/2 tablespoons coriander powder
1 tablespoon lemon juice
1/2 teaspoon sea salt
1/4 teaspoon black pepper
6 -12 tablespoons olive oil or 6 -12 tablespoons peanut oil
6 -12 pita breads

Steps:

  • Slice the pork into 1 cm strips. Mince the ginger and garlic, mix with the lemon juice, sea salt, and ground coriander. Put in fridge for about half an hour; longer if you like.
  • Slice onions and capsicums in to strips about 1/2 cm wide. Slice chilies finely and put all in a bowl for later.
  • Heat oil to medium hot and add a few strips of pork and cook (in batches) until they just start to brown at the edges (about a minute). As each batch browns remove it and put in to a bowl to relax.
  • Now cook the onions in remaining oil (add more oil if you need to) until the onions begin to soften and become slightly transparent. This takes about a minute, so don't overcook them as they will be cooked more later.
  • Remove and mix well with the pork strips.
  • Fry the capsicum and chili strips for about minute, add the roughly chopped tomatoes, and cook for about 30 seconds on high heat.
  • Now add the pork and onions to this mixture, add Tabasco, and bring back to full heat.
  • Check seasoning and add more salt and pepper if you need to. You can also add more Tabasco if you like it hotter. Garnish with a little chopped coriander leaves (cilantro) if you wish. Keep the dish warm while you do the Pitas.
  • Heat pitas and slice open on one side.
  • Serve the pork mixture in a bowl and let each person stuff their own pita. If it is anything like our house you will be checking how many each person has had! I can never make enough of this dish.

  • Mix yogurt, tahini, lemon juice, water and garlic until smooth.
  • Spread half of yogurt mixture on each pita bread.
  • Cut yellow pepper lengthwise into strips about 1/8 inch wide, then cut strips in half and place decoratively on pitas.
  • Then top each pita with half of the tomatoes, olives and feta.
  • Bake for 8 minutes, until pita begins to crisp and feta is beginning to melt.
  • Remove from oven, cut pitas into 6-8 triangles and serve warm, or leave whole and serve as individual pizzas.

1/2 mL KRAFT Greek Vinaigrette Dressing, divided
1 lb. sirloin steak, 3/4 inch thick, cut into strips
1 g red onion, sliced, separated into rings
1 g green pepper, cut into strips
2 g garlic, minced
black pepper
2 g shredded carrots

Steps:

  • Reserve 2 Tbsp. of the dressing; set aside. Pour remaining dressing over steak; cover. Refrigerate several hours or overnight to marinate. Remove steak from marinade; discard marinade.
  • Cook and stir onions, green peppers and garlic in reserved 2 Tbsp. dressing in large skillet on medium-high heat 2 minutes. Add steak; cook and stir 5 minutes or until cooked through. Season with black pepper to taste. Remove from heat. Stir in carrots.
  • Spoon evenly into pita bread halves just before serving.

1 15-ounce can garbanzo beans (chick peas), drained
6 ounces goat or feta cheese, crumbled
2 large garlic cloves, chopped
2 tablespoons olive oil
1 teaspoon ground cumin
Cayenne pepper
3/4 pound lean ground lamb
3/4 teaspoon ground allspice
3/4 teaspoon dried oregano, crumbled
4 6-inch pita bread rounds
Olive oil
1 small red bell pepper, chopped
6 tablespoons chopped fresh mint

Steps:

  • Position rack in center of oven. Place baking sheet on rack. Preheat oven to 400°F. for 30 minutes.
  • Meanwhile, puree garbanzo beans, 2 ounces cheese, garlic, 1 tablespoon olive oil and cumin in processor until smooth. Season with cayenne pepper and salt and pepper to taste. Transfer puree to small bowl. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Heat 1 tablespoon olive oil in heavy medium skillet over medium heat. Add lamb and sauté until cooked through and brown, breaking up with fork, about 5 minutes. Drain all fat from skillet. Season lamb with allspice, oregano and salt and pepper.
  • Brush bottom side of 1 pita round with olive oil. Place on work surface, oil side down. Blend 1/4 cup bean puree with 1/4 (about 1/2 cup scant) of lamb mixture. Spread on pita. Sprinkle 1 ounce (about 1/4 cup) cheese over. Sprinkle 1/4 of chopped red pepper over. Repeat with remaining pita rounds. Using spatula, transfer pizzas to hot baking sheet.
  • Bake until cheese melts and crust is crispy, about 12 minutes. Sprinkle each pizza with 1 1/2 tablespoons mint.

2 teaspoons Kalamata olives, chopped

Steps:

  • Spread the dip or hummus inside each pita pocket. Divide the rest of the ingredients between the pockets.

4 chicken breast halves
4 small whole wheat pitas (you can use any pita type you like, but I find these to be the healthiest)
1/2 cup romaine lettuce
2 Tbsp Hummus
1/4 cup olive oil
2 Tbsp lemon juice
1 whole tomato, diced

Steps:

  • 1. Cut the chicken breasts into thin slices and grill or sautee until fully cooked and set aside 2. Mix the olive oil and lemon juice together in a separate bowl 3. Dice the tomato into little tiny cubes and add it and the chicken to the olive oil and lemon juice mixture. Mix until all of the chicken and tomato cubes are covered 4. Spread 2 Tbsp of hummus apiece on each pita 5. Layer the romaine lettuce over the hummus 6. Drain the chicken and tomato mixture and add to the pita 7. For extra flavor if you feel adventurous, add a bit on feta cheese to the top of the pita before enjoying!

Number Of Ingredients 5

1 (1/4 ounce) package active dry yeast
3 3/4 cups flour
1/4 cup shortening, softened
1 1/2 teaspoons salt
1 1/4 cups water

Steps:

  • In a large mixing bowl soften yeast in warm water.
  • Add 2 cups flour, shortening and salt.
  • Beat at low speed of electric mixer for 1/2 minute, scraping bowl.
  • Beat 3 minutes on medium.
  • Stir in as much remaining flour as you can mix in with a spoon.
  • Turn onto a lightly floured work surface.
  • Knead in enough remaining flour to make a soft dough that is smooth and elastic.
  • Cover, and let rest in a warm place about 15 minutes.
  • Divide into 12 equal portions.
  • Roll each piece with floured hands into a smooth ball.
  • Cover with a damp cloth, let rest 10 minutes.
  • Using fingers, flatten balls.
  • Cover, let rest 10 minutes.
  • On a well floured surface lightly roll one piece of dough at a time into a circle 6 inches in diameter, turning dough over once.
  • Do not puncture or tear dough.
  • (Work with enough flour so dough does not stick) Place on baking sheet.
  • Bake one sheet at a time, in a 450 F oven about 3 minutes or until dough is puffed and softly set.
  • Turn with a spatula, and bake 2 more minutes until dough is light brown.
  • Repeat with remaining dough, baking one batch before uncovering and rolling the next.
  • To serve, slice bread crosswise and fill the pockets with a filling or cut into wedges and pan fry to a crisp for dipping.
