MEDITERRANEAN SAUSAGE PASTA RECIPE
An easy Mediterranean Sausage Pasta Recipe featuring chicken sausage, feta, olives, spinach and tomato in a lemon herb oil.

Steps:
- Place large pot of water on to boil. You will cook the pasta while preparing the rest.
- Slice the chicken sausages into roughly 1/2 inch pieces.
- Place large deep skillet or dutch oven over medium-high heat. Add the oil, sausages, garlic and oregano. Toss and saute for a minute.
- Add the zest of 1/2 a lemon. Stir it in.
- Now toss in the olives and tomatoes. Stir occasionally while cooking, until the tomatoes are starting to blister and a couple have split. The sausage should be browned by this point as well.
- Dump in the spinach. Mix in. Turn off the stove burner.
- Add the drained pasta and toss well to coat.
- Transfer from pan to serving platter and sprinkle with feta. Serve with fresh ground pepper and wedges of lemon.

- 1. Helpful notes** Have the sausage links semi frozen, makes them easier to slice. I took the casing off. I rinsed the pasta to keep the pasta from absorbing all the sauce as I like the sauce to sop with and also to keep it al dente'.
- 2. Cook the pasta per the directions on package. Drain and set aside. If you can time it right, cook it just before adding to the rest.
- 3. Take the casings off the sausage links and slice the the links. Cut off the tough ends of the asparagus and slice into 1 inch pieces.
- 4. In a large skillet, saute sausage and asparagus, until almost fully cooked, no need to put any oil in. (about 10 mins). Remove from skillet and set aside. In the same skillet, bring butter, garlic, tomatoes with juice, black olives and artichokes, including artichoke marinade to a boil. Lower heat and add back the sausage and asparagus. Add basil and oregano and simmer for 5 to 8 minutes.
- 5. Place pasta in a serving bowl and pour the skillet mixture over pasta. Sprinkle with parmesan cheese and serve. **I served this with fresh broccoli & cheese and a crusty bread with olive oil for dipping.
MEDITERRANEAN PASTA WITH SAUSAGE
A wonderful, easy alternative to lasagna! I can't recall which magazine I discovered this recipe in but the picture is what appealed to me. My kids wrinkled their noses at the idea of spinach but quickly decided it was great anyway! It's very easy to prepare & tastes just as good as a leftover.

- Cook: sausage in a large, nonstick skillet over med-high heat for 5 - 7 minutes or until crumbled & no longer pink; drain.
- Stir: in sauce, olives & spinach, heat through. In a large bowl, combine meat sauce with hot pasta. Toss until well coated. Coat a 13X9X2" baking dish with cooking spray. Pour half of the pasta mixture into dish; top with half of cheese. Repeat. Cover with foil.
- Bake: in a preheated 350° oven for 20 to 25 minutes or until cheese is melted.
