1/3 cup olive oil, plus more for baking dishes
Coarse salt and ground pepper
1 pound wide egg noodles
2 red bell peppers (ribs and seeds removed), thinly sliced
1/2 cup all-purpose flour
5 cups whole milk
4 cans (6 ounces each) tuna in olive oil, drained
1 can (14 ounces) artichoke hearts, drained and thickly sliced
5 scallions, thinly sliced
1/2 cup finely grated Parmesan

Steps:

  • Preheat oven to 400 degrees. Lightly oil two 8-inch square (or other shallow 2-quart) baking dishes. In a large pot of boiling salted water, cook noodles until 2 minutes short of al dente; drain, and return to pot.
  • Meanwhile, in a 5-quart Dutch oven or heavy pot, heat oil over medium. Add bell peppers; season with salt and pepper. Cook until crisp-tender, 4 to 6 minutes. Add flour and cook, stirring, 1 minute. Gradually add milk, stirring until smooth. Cook, stirring occasionally, until mixture comes to a simmer.
  • Remove from heat; add mixture to noodles in pot, along with tuna, artichoke hearts, and scallions. Season with salt and pepper, and toss. Divide between prepared baking dishes, and sprinkle with Parmesan. Bake until golden and bubbling, about 20 minutes.

1 tablespoon olive oil
1 skinless, boneless chicken breast, cut into strips
1 small yellow onion, diced
1 small yellow bell pepper, diced

1 tablespoon fresh thyme leaves
1 teaspoon grated lemon zest
½ teaspoon red pepper flakes
¼ cup grated Pecorino Romano cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a pot of salted water to a boil. Cook pasta until flexible but not soft, about 5 minutes. Drain.
  • Heat oil in a stovetop- and oven-safe casserole dish over medium-high heat. Cook and stir chicken strips until browned, 3 to 5 minutes. Add onion, bell peppers, cherry tomatoes, olives, thyme, lemon zest, and pepper flakes. Cook and stir until the onions have begun to look translucent, about 5 minutes. Remove from heat. Stir in the half-cooked pasta.
  • Sprinkle Pecorino Romano and Grana Padano over the pasta mixture.
  • Bake in the preheated oven until bubbly and the cheeses have melted and browned, about 15 minutes. Let rest for 5 minutes before serving.

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In 8-inch nonstick pan, heat vegetable oil over medium heat. Cook onion, bell pepper and garlic in oil 3 to 5 minutes, stirring frequently, until slightly softened. Add spinach, and cook about 1 minute or until starting to wilt.
  • In baking dish, layer half of the baguette, 1 cup of the feta cheese, 1/4 cup of the Parmesan cheese, the bell pepper mixture, artichokes, olives and sun-dried tomato. 1/2 yellow onion
4 tomatoes
1 green capsicum
100 g mushrooms
1 tablespoon olive oil
3 -6 skinless chicken pieces, on the bone, eg drumstick, thighs or 3 -6 chicken fillets, diced into bite size pieces
2 sprigs lemon thyme
1/2 cup dry white wine
6 pitted black olives (optional)
salt & freshly ground black pepper
1 garlic clove, finely chopped
1 tablespoon finely sliced basil

Steps:

  • Chop onion.
  • Cut tomatoes into small pieces.
  • Halve capsicum, remove seeds and cut each into eight pieces.
  • Wash and halve mushrooms.
  • Heat oil a saucepan on medium heat and brown chicken pieces for about 1 minute each side.
  • Transfer chicken to a plate.
  • Add onion, garlic and thyme to pan and on a medium heat stir fry for about 2 minutes.
  • Add capsicum and stir fry for about 2 minutes.
  • Add tomato and stir well before adding wine, mushrooms, olives and chicken pieces.
  • Season with a little salt and pepper and bring to a simmer.
  • Cover and cook for about 20 minutes.
  • Just before serving stir in basil.
  • Serve with steamed rice or vegetables.

1 lb ground beef or 1 lb ground turkey, if you wish
1 egg
3 tablespoons packaged seasoned bread crumbs
1 teaspoon salt
1/4 teaspoon dried thyme leaves, crumbled or 1/4 teaspoon ground thyme
1/4 teaspoon ground red pepper (cayenne)
1 tablespoon olive oil
1 medium onion, sliced thin and rings separated
1 (14 1/2 ounce) can whole tomatoes
8 ounces zucchini, cut into 1/4-inch thick rounds (about one zucchini)
1 teaspoon minced fresh garlic
1/2 teaspoon salt
1/4 teaspoon thyme leaves, crumbled finely or 1/4 teaspoon ground thyme
1 (16 ounce) can small whole white potatoes, well drained
1 tablespoon minced fresh parsley (optional)

Steps:

  • Make the patties: In a large bowl, mix the ground beef, breadcrumbs, salt, thyme and red pepper with your hands or a wooden spoon until well-blended. Shape the mixture into 8 patties, about 1/4-inch thick.
  • In a large heavy skillet, heat the oil over medium-high heat. Add the patties and cook for about 2-3 minutes on each side, or until browned. (They will finish when they are cooked with the vegetable mixture.) Remove with a slotted spoon to a plate.
  • Reduce the heat to medium-low. Add the onion to the pan drippings and cook, stirring occasionally, for 5-7 minutes, or until softened.
  • Increase heat to medium. Add the tomatoes (break up with hands), zucchini, garlic, salt and thyme. Stir to mix. Cover and cook for 10 minutes, or until the zucchini is just tender.

  • Cook fettuccine by following the package directions; drain.

This eggplant dish is from the "1 of a Kind" cookbook of the Junior League of Mobile, AL. I have not made this yet, but I did modify the recipe & add 2 ingredients I thot were a must to make this a classic dish. Altho the ingredient list appears lengthy, 7 are of the spice variety & the rest are common ingredients w/an easy prep. My best advice is strongly resist any temptation to leave out the cinnamon. Enjoy!

3 medium eggplants (unpeeled & sliced in 1/4 in thick slices)
3/4 cup olive oil (more as required)
1 cup onion (chopped)
1 cup celery (chopped)
1/2 cup green bell pepper (chopped)
1 cup fresh tomato (seeded & diced)
1/2 cup black olives (quartered or sliced)
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme leaves
1/4 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon cinnamon
3 large eggs (beaten)
1 cup breadcrumbs
2 tablespoons olive oil
2 tablespoons dry parmesan cheese (powder variety)

Steps:

  • Preheat oven to 350°F.
  • Prepare onion, celery, green bell pepper, fresh tomato & black olives in stated quantity as directed & set aside.
  • Slice unpeeled eggplant into 1/4" thick slices. Put olive oil in a saute pan & cook eggplant slices (in batches) till just slightly tender. Remove from pan & set aside.
  • In the same pan, add onion, celery & bell pepper. Saute till crisp-tender.
  • Remove from heat & stir in chopped tomato, black olives, herbs & spices.
  • Place 1/3 of eggplant slices in a 9x13" baking dish. Top with 1/3 of veggie/spice mixture & repeat layering 2 more times. Bake 15 minutes.
  • While casserole is baking, beat eggs & set aside. In a separate bowl, combine breadcrumbs, 2 tbsp olive oil & Parmesan cheese. Mix well & set aside.
  • At 15 minutes, remove casserole from oven. Drizzle beaten eggs over surface, let them seep into the veggie mixture & move veggies around gently using a fork to aid this process as required.
  • Sprinkle breadcrumb, olive oil & Parmesan cheese mixture evenly over surface & return to oven for 15 min or till breadcrumbs are golden brown. Serve immediately.
  • NOTE: While the recipe did not suggest this, IMO this dish is capable of being expanded to a 1-dish meal w/the addition of your cooked grd meat of choice &/or crumbled feta cheese as another option.

  • Mix all ingredients except green beans, macaroni and cheese in 3- to 4-quart slow cooker.
  • Cover and cook on Low heat setting 6 to 8 hours.

2 lbs round steaks, cut into 1 inch cubes (buy tenderized)
2 tablespoons butter, melted
1 (12 ounce) can tomato paste
1/3 cup beef broth
1/3 cup red wine
1/4 cup red wine vinegar
1/2 cup black olives (sliced)
1 tablespoon light brown sugar
2 garlic cloves, minced
2 bay leaves (whole)
1/4 cup raisins
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
3 cups cooked rice

Steps:

  • Preheat oven to 375 degrees.
  • Mix steak cubes and butter in a large bowl to cover steak with butter.
  • Arrange steak cubes in a large baking dish.
  • Mix together tomato paste, broth, wine and vinegar in mixing bowl.
  • Stir in olives, brown sugar and garlic.
  • Pour over steak cubes to coat.
  • Arrange bay leaves over beef mixture.
  • Sprinkle over with the raisins.
  • Then sprinkle over all with the cinnamon and ground cloves.
  • Cover tightly with foil.
  • Bake for 45 minutes.
  • Remove the bay leaves, and discard them.
  • Arrange the hot cooked rice on a large serving platter and spoon the meat and sauce over.

1/2 lemon, juice of
1/2 teaspoon salt

125 g cream cheese with herbs (4 1/2 ounces)
1 teaspoon chopped fresh oregano
250 g medium sized mushrooms (9 ounces, quarter)
4 medium tomatoes (deseeded, skin removed and roughly chopped) or 400 g canned tomatoes, drained and chopped (14 ounces)
1 tablespoon chopped flat leaf parsley
1 tablespoon chopped basil
shrimp (optional)
3 tablespoons chopped flat leaf parsley
6 basil leaves, cut in fine strips
5 tablespoons dry breadcrumbs
5 tablespoons grated fresh parmesan cheese
2 tablespoons olive oil or 2 tablespoons butter
3 crushed garlic cloves

  • Fish:.
  • If your fish fillets are large, you need to cut them in half (vertically). They should be easy to be rolled.
  • Drizzle lemon juice over the fish. Season with salt and pepper. Spread the cream cheese onto the outer shiny side of fish.
  • Roll up fillets. Season with salt and pepper.
  • Vegetables:.
  • Into a buttered heatproof casserole add quartered mushrooms.
  • Place tomatoes on top of mushrooms.
  • Add 1 tbsp of parsley and 1 tbsp of basil to the tomatoes and mushrooms.
  • Place rolled fish on top of tomatoes and mushrooms.
  • Place optional shrimps between fish rolls.
  • Provencal Topping:.
  • Mix all ingredients except oil/butter.
  • Cover the fish with Provencal topping.
  • Drizzle with oil or sprinkle with butter flakes.
  • Bake for 20 minutes in a 220°C / 430°F preheated oven.
  • Serve with buttered boiled potatoes sprinkled with chives.

2 tablespoons olive oil
1 pound small white potatoes, cut into quarters
2 large Italian frying peppers, thinly sliced
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cloves garlic, peeled and chopped
4 3/4 inch-thick U.S. Pacific-caught cod or halibut fillets, about 5 ounces each
1/4 cup pitted kalamata olives, chopped
2 plum tomatoes, seeded and cut into 1/4-inch wedges
2 tablespoons lemon juice
1/4 cup flat-leaf parsley, chopped

Steps:

  • 1. Heat oven to 400 degrees F. Grease an oval 2-quart casserole dish with 1 tablespoon of the olive oil. Spread potatoes and peppers over bottom of the dish. Season with 1/8 teaspoon each of the salt and pepper. Bake at 400 degrees F for 35 minutes or until potatoes are tender, stirring occasionally. 2. Scatter garlic over potatoes and peppers. Season fish with remaining 1/8 teaspoon each salt and pepper and place on top of the potatoes. Distribute olives and tomatoes over the casserole. Drizzle with lemon juice and remaining 1 tablespoon olive oil. Sprinkle with parsley. 3. Bake at 400 degrees F for 25 minutes or until fish flakes easily when tested with a fork.

3 Tbsp. flour
2 tsp. dried oregano leaves
1/4 tsp. black pepper
8 bone-in chicken thighs (3 lb.), skinned
1 Tbsp. oil
1 cup sliced fresh mushrooms
1 onion, chopped
1 yellow pepper, chopped
4 cloves garlic, minced
1 can (14.5 oz.) fire-roasted diced tomatoes, undrained
1 cup CLASSICO Spicy Red Pepper Pasta Sauce
1 jar (7.5 oz.) marinated artichoke hearts, drained, quartered
1/3 cup quartered pitted Kalamata olives (about 12 olives)
1/2 cup ATHENOS Crumbled Feta Cheese with Mediterranean Herbs
2 cups orzo pasta, uncooked
1/4 cup chopped fresh parsley

Steps:

  • Heat oven to 375°F.
  • Combine flour and seasonings in shallow dish. Add chicken, 1 thigh at a time, turning to evenly coat both sides of each thigh with flour mixture.
  • Heat oil in large skillet on medium heat. Add 4 chicken thighs; cook 4 min. on each side or until golden brown on both sides. Transfer to 13x9-inch baking dish sprayed with cooking spray, reserving drippings in pan. Repeat with remaining chicken.
  • Add mushrooms, onions, yellow peppers and garlic to drippings in pan; cook 5 min or until mushrooms are tender and their liquid is cooked off, stirring frequently. Add tomatoes, pasta sauce, artichokes and olives; mix well. Pour over chicken; cover.
  • Bake 20 min. Sprinkle with cheese; bake 10 min. or until chicken is done (165ºF) and cheese is melted. Meanwhile, cook orzo as directed on package, omitting salt.
  • Serve chicken mixture over orzo; sprinkle with parsley.

2 onions, sliced
6 zucchini, sliced
1/4 cup olive oil
1/4 cup flour
4 tomatoes, cut into wedges
1/2 red capsicum, cut into 2cm squares
1/2 green capsicum, cut into 2cm squares
1 cup black olives
1/3 cup basil, chopped
1/2 cup pine nuts
1/4 cup balsamic vinegar

Steps:

  • Saute onion and zucchini in oil for 15 minutes.
  • Transfer to baking dish.
  • Sprinkle lightly with flour.
  • Arrange tomato and capsicum on top.
  • Bake uncovered at 200 degrees C for 20 minutes.
  • Top with olives, basil and pine nuts.
  • Bake further 10 minutes.
  • Drizzle with vinegar before serving.

1 lb red potatoes, sliced
3 tablespoons olive oil
4 cloves garlic, finely chopped
2 medium red onions, sliced thin
1 tablespoon crushed lovage or 1 tablespoon sage
1 tablespoon thyme
1 teaspoon tamari soy sauce or 1 teaspoon soy sauce
pepper
4 tomatoes, sliced
1 cup pitted black olives, sliced in half
1 cup parmesan cheese
parsley

Steps:

  • Steam the potatoes until they are soft but still firm (if that makes any sense).
  • You want them to be soft, but not to the point that they will fall apart when lifted.
  • Set aside.
  • In a small skillet, saute the garlic, onions, and herbs until the onions become translucent.
  • Remove them from the heat.
  • In a medium-sized bowl, mix the potatoes and the onions.
  • Add the tamari and pepper to taste.
  • In a casserole, begin layering the ingredients.
  • First, place the onions and potatoes on the bottom of the tray.
  • Cover this with the tomatoes and olives.
  • Finally, cover this with the cheese.
  • Continue to layer in this order until there aren't any more ingredients.
  • Bake this in an oven at 350 degrees for 30 minutes with a loose tinfoil cover.
  • Uncover the mixture and cook for another 20 minutes or until brown on top.
  • Garnish with the parsley.

Most of our friends are into healthy eating so I am always on the look out for something healthy but yummy as well. I got this recipe from Hello magazine. This dish is ideal for non meat- eaters, its easy to prepare and its packed with nutritious and flavourful vegetables.

2 tablespoons olive oil
1 medium red onion, chopped
1 sun- dried chili, deseeded and finely chopped
3 garlic cloves, peeled and chopped
50 g sun-dried tomatoes, rinsed and roughly chopped
1 large carrot, trimmed, peeled and diced
2 sticks celery, trimmed and chopped
6 ounces puy lentils
18 fluid ounces vegetable stock
1 (400 g) can chopped tomatoes
1 (400 g) can chickpeas
fresh ground black pepper
handful fresh parsley, roughly chopped

Steps:

  • Heat the oil in a large flameproof casserole dish, add the onion and cook over medium heat until softened. Stir in the chilli and garlic and cook for 1 minute, then add the sun-dried tomatoes,carrot and celery and cook for a further 2-3 minutes.
  • Meanwhile, put the Puy lentils into a sieve and rinse under running cold water. Add to the pan with the stock and chopped tomatoes, cover with a lid and simmer for 20 minutes.
  • Drain the chickpeas and add to the casserole, then cook for 5 more minutes or until the lentils are tender.
  • Season the casserole with black pepper and serve in warmed bowls with a sprinkling of chopped fresh parsley.
