1 tbsp. Olive Oil
½ cup Onion, small
1 Garlic Clove, chopped
1 tsp. Ground Cumin Powder
1 tsp. Turmeric Powder
1 ½ cups White Long Grain Rice
2 ¼ cups Water
Salt and Pepper
¼ cup Pine Nuts
Fresh Cilantro, chopped

Steps:

  • Heat a pot to medium-high and add the olive oil.
  • Add the onion and garlic and cook for 5 minutes.
  • Add the cumin and turmeric powder and cook for 5 minutes more.
  • Add the rice and mix, let it toast for around 2 minutes.
  • Add the water and season with salt and pepper.
  • Bring to a boil, and once it starts boiling, lower the heat, cover and cook for 12 minutes.
  • Toast the pine nuts and serve the rice with pine nuts and fresh cilantro.

1 1/2 cups brown rice, medium or short grain
2 1/2 cups water
1 tablespoon unsalted butter
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the rice into an 8-inch square glass baking dish.
  • Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
  • After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

1-1/2 cups uncooked long grain brown rice
3-1/2 cups water
2 tablespoons white vinegar
2 tablespoons balsamic vinegar
1 garlic clove, minced
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 cup olive oil
1/4 cup chopped fresh basil
6 ounces fresh baby spinach (about 8 cups), coarsely chopped
16 ounces cherry tomatoes, halved
6 green onions, thinly sliced
2 cups (8 ounces) crumbled feta cheese

Steps:

  • In a saucepan, combine rice and water; bring to a boil. Reduce heat; simmer, covered, until rice is tender and liquid is absorbed, 35-40 minutes., Meanwhile, place vinegars, garlic, pepper and salt in bowl and whisk together. While whisking, gradually add oil in a steady stream. Stir in basil., Place spinach in a large bowl; add cooked rice. Stir in tomatoes, green onions and dressing; toss until spinach is wilted. Gently stir in feta. Loosely cover and refrigerate 2 hours or until cold.
