NACHO BEEF DIP

1 pound Ground Beef (93% lean or leaner)
1 jar (15 to 16 ounces) cheese dip with salsa (salsa con queso) or other cheese dip
1/2 cup thick-and-chunky mild or medium salsa
Blue, yellow and/or white corn tortilla chips (optional)
Diced red bell pepper, thinly sliced green onions, sliced ripe olives (optional)

Steps:

  • Heat nonstick skillet over medium heat until hot. Add Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Add cheese dip and salsa; cook and stir about 3 minutes or until mixture is heated through.
  • Pour beef mixture into shallow serving dish. Serve with tortilla chips for dipping. Garnish with toppings, if desired.

1 jar (16 ounces) chunky salsa
1/4 teaspoon garlic powder

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain well. , Transfer to a greased 3-qt. slow cooker; stir in the cheese, salsa and garlic powder. Cover and cook on low for 3-4 hours or until heated through. Stir; serve warm with tortilla chips or cubed bread.

1 (8 ounce) jar Pace Picante Sauce

While it may not always look appetizing, this dip is always gone when we make it for parties or family events. Everyone asks for the recipe and can't believe how easy it is. Sometimes we substitute ground turkey for the ground beef and no one can tell the difference.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) package Velveeta cheese
1 (16 ounce) jar medium chunky salsa (or salsa of your choice)

Steps:

  • Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
  • Chunk the Velveeta and add to crockpot.
  • Pour in jar of salsa and add the prepared meat.
  • Let melt together in the crockpot, stirring occasionally.
  • At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
  • We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

2 (1.25 ounce) packages mild taco seasoning mix (such as McCormick®), divided
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese, divided
1 (16 ounce) package shredded lettuce
1 (8 ounce) jar salsa, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; season with 1 package taco seasoning mix. Drain and discard grease. Let beef cool completely.
  • Stir sour cream, cream cheese, and remaining taco seasoning mix together in a bowl until smooth.

1 ½ pounds ground beef
1 (16 ounce) can refried beans
4 cups shredded Cheddar-Monterey Jack cheese blend
1 (8 ounce) container sour cream
1 cup guacamole
1 cup salsa
1 (2.25 ounce) can black olives, chopped
½ cup chopped tomatoes
½ cup chopped green onions

Steps:

  • In a large skillet, brown ground beef. Set aside to drain and cool to room temperature.
  • Spread the beans into the bottom of a 9x13 inch serving tray that is about 1 1/2 inches deep. Sprinkle 2 cups of shredded cheese on top of beans. Sprinkle beef on top of cheese. Spread sour cream very slowly on top of beef. Spread guacamole on top of sour cream. Pour salsa over guacamole and spread evenly. Sprinkle remaining shredded cheese. Sprinkle black olives, tomatoes, and green onions on top.
  • You can serve this dish immediately, or refrigerate it over night and serve cold. I think it tastes better at room temperature.
