Nonstick cooking spray
1 tablespoon olive oil
1/2 medium yellow onion, diced (about 3/4 cup)
1 bay leaf
1 clove garlic, minced
1 medium red bell pepper, finely diced (about 1 cup)
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
2 pounds lean ground beef
2 large eggs, lightly beaten
3/4 cup dry breadcrumbs
1 tablespoon Worcestershire sauce
1 cup ketchup
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1 loaf thick-sliced white bread

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, then spray lightly with cooking spray.
  • Heat the oil in a medium skillet over medium heat. Cook the onions, stirring, until translucent, 7 to 8 minutes. Add the bay leaf, garlic, bell pepper, parsley and thyme and cook, stirring, until softened, about 5 minutes. Remove the skillet from the heat and let the onion mixture cool, then discard the bay leaf.
  • In a large bowl, combine the beef, eggs, breadcrumbs, Worcestershire sauce, 1/2 cup of the ketchup, the cooled vegetables, 2 teaspoons salt and 1 teaspoon black pepper. Use your hands to mix everything together. Transfer the mixture to the center of the prepared baking sheet and form into a loaf. Coat the meatloaf with the remaining 1/2 cup ketchup.?Bake until the meat loaf is firm, 1 to 1 1/2 hours. Let set for about 5 minutes before slicing. Slice into 8 pieces for thicker slices, 10 pieces for thinner slices.
  • Spread mayonnaise on 16 to 20 slices of bread and make sandwiches with the meatloaf slices.

1 tablespoon vegetable oil
1 medium onion, diced small
2 tablespoons tomato paste
1 1/2 pounds ground beef chuck (10 percent fat)
1 cup roughly crushed saltine crackers (about 15 crackers)
1 cup coarsely grated sharp cheddar (3 ounces)
3 large eggs
1 tablespoon plus 2 teaspoons prepared horseradish
1 tablespoon Worcestershire sauce
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
Toasted country-style bread, lettuce, sliced dill pickles, and ketchup, for serving

Steps:

  • Preheat oven to 375 degrees. In a small skillet, heat oil over medium; add onion and cook until softened, about 5 minutes. Add tomato paste and cook, stirring constantly, until brick-red in color and fragrant, 3 minutes. In a large bowl, combine beef, onion mixture, crackers, cheese, eggs, horseradish, Worcestershire, salt, and pepper.
  • On a parchment-lined baking sheet, use your hands to form mixture into a 9-inch loaf. Bake until cooked through, about 40 minutes. Let rest 15 minutes before cutting into thick slices. To serve, place meatloaf slices between bread, topped with lettuce, pickles, and ketchup.

2 teaspoons olive oil
1 red onion, chopped
1 zucchini, shredded
3 carrots, shredded
1 yellow bell pepper, chopped
1 celery, chopped
8 mushrooms, chopped
3 garlic cloves, chopped
1 1/4 lbs ground chicken
3/4 cup oatmeal (old fashioned rolled oats)
1/2 cup applesauce (unsweetened)
1/2 cup parsley, chopped
1/4 cup egg substitute (egg beaters)
1 teaspoon salt
1 teaspoon dried Italian seasoning
8 tablespoons catsup (low-sugar)
12 slices thin multi-grain bread
12 lettuce leaves
6 cherry tomatoes, halved (garnish)

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 9 x 13 inch baking pan with foil.
  • In a skilled over medium heat, heat the oil and then add onion, and cook stirring occasionally until softened (5 minutes). Stir in vegetables (zucchini - celery) until softened (5 minutes). Stir in mushrooms and garlic and cook for another 3-5 minutes. Remove from heat and vegetables cool for about 15 minutes.
  • Meanwhile combine the next 7 ingredients (chicken - Italian seasoning) in a bowl. Fold cooled vegetables into chicken mixture and then place mixture into baking pan.
  • Bake for 1 hour or until browned. Let stand in pan for 10 minutes. Unmold and allow to cool.
  • Slice meat loaf into 6 slices.
  • To make sandwiches: spread 1/2 T catsup on each side of bread. Layer bread with lettuce, 1 slice meat loaf, topping with lettuce and bread. Repeat to make six sandwiches. Cut sandwiches in half and garnish with cheery tomato if desired.

This easy to make, moist & flavourful meatloaf is perfect for anyone wanting a healthier version of this American classic. Perfect for anyone following the Weight Watchers plan, low in WW Personal Points. It was just 6 SmartPoints on the Green plan and 5 SmartPoints on the Blue or Purple plan.

35 oz extra lean ground beef / mince ((1kg) 5% fat)
4 slices low calorie bread (toasted & made into breadcrumbs *)
2 medium eggs
1 tablespoon Worcestershire sauce
1 medium onion (grated)
3 cloves garlic (minced)
2 beef stock cubes / bouillon cubes (crumbled)
1/2 teaspoon black pepper
1/3 cup skimmed milk ((70ml))
6 tablespoons Heinz tomato ketchup - 50% less sugar or no sugar added (divided)
1 handful fresh chopped parsley (chopped (optional))
1 tablespoon light brown sugar
1 tablespoon white wine vinegar
1 - 2 tablespoon yellow mustard
5 sprays of calorie controlled spray oil

Steps:

  • Preheat the oven to 180°C / 160°C Fan / 350°F.
  • Use 5 pumps of calorie controlled spray oil to grease a loaf tin (approx 9 inches by 5 inches)
  • Place the ground beef, breadcrumbs, eggs, Worcestershire sauce, grated onion, minced garlic, black pepper, crumbled stock cubes/bouillon, milk and 2 tablespoons of the tomato ketchup into a large bowl.
  • Mix with a wooden spoon (or your hands if you prefer) to combine all of the ingredients.
  • Stir in the chopped parsley if using.
  • The mixture will be wet but this leads to a moist, succulent meatloaf that is less inclined to crumble once cooked.
  • Place the meat loaf mixture into the pre greased loaf tin and smooth the top.
  • Mix the remaining 4 tablespoons of ketchup with the sugar, white wine vinegar and mustard to make a glaze.
  • Spread half of the glaze on top of the meatloaf and set aside the rest for later.
  • Place the meatloaf on the middle shelf of the preheated oven and cook for 50 minutes.
  • Remove the meatloaf from the oven and spread over the remaining glaze.
  • Place back in the oven for a further 25 minutes.
  • Remove from the oven and let the loaf stand for 10 minutes or so before slicing it into 8 generous slices.

1 tablespoon olive oil
1 small Spanish onion, minced
Salt
3 cloves garlic, minced
1 cup coarsely crushed soda crackers, such as Nabisco Saltine Crackers (about 24 crackers)
1/2 cup whole milk
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
2 large eggs
Freshly cracked black pepper
1 pound ground beef chuck
8 ounces ground pork
8 ounces ground veal
1/3 cup chopped fresh parsley
1/2 cup ketchup
4 tablespoons brown sugar
4 tablespoons apple cider vinegar
4 slices sharp Cheddar
4 potato rolls, buttered and toasted
Bread and butter pickles (3 to 5 per sandwich)
1 can crispy onions, such as French's French Fried Onions

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Heat a small skillet over medium heat. Add the oil and onions, season with some salt and saute until translucent, 3 to 5 minutes. Add the garlic and saute for 1 to 2 minutes without letting the garlic brown. Remove from the heat and let cool.
  • In a large bowl, add the crackers, milk, mustard, Worcestershire, hot sauce and eggs. Whisk together, and then sprinkle with salt and pepper. Add the meat, parsley and cooled onions. Mix with your hands until evenly combined. Bake a tester meatloaf patty to taste and test the seasoning, adjusting as necessary. Using your hands, gently form the meatloaf into a loaf about 9-by-5-inches. Place on a baking sheet.
  • For the glaze: In a small bowl, combine the ketchup, brown sugar and apple cider vinegar. Slather half of the glaze over the meatloaf. Make sure not to touch the meatloaf with the spoon and then put that spoon back into the glaze; don't cross contaminate, people! Bake until the meat registers 160 degrees F on an instant-read thermometer, about 1 hour. Let rest for 20 minutes before slicing for sandwiches.
  • For the sandwich build: Place a slice of cheese on the bottom griddled bun, then a slice of meatloaf, spoon some extra glaze on the loaf, pop on a few pickles and top with crispy onions. Repeat to make 3 more sandwiches.

2 slices whole grain bread

  • Place meat loaf slice between 2 slices of cheese and 2 slices of bread.
  • Brush outside of sandwich with olive oil.
  • Over medium low heat cook sandwich in skillet, turning (3-5 minutes per side).
