VEGAN MONTE CRISTO
This easy vegan ham and cheese recipe is dipped in a spicy egg wash then grilled in butter. It's like a French toast, ham & cheese sandwich!

Steps:
- In a bowl that's large enough for the bread, whisk the ½ cup of vegan egg, ¼ tsp of smoked paprika, and salt and pepper to taste.
- Spread the mustard evenly over one side of a piece of bread and then assemble the sandwich by layering the vegan ham and cheese on top of the mustard. Place the top piece of bread on top and dip both sides in the egg mixture.
- In a skillet, heat the pan on medium-high heat and add the butter or oil when the pan is hot. When the butter is completely melted, add the sandwich to the pan and cook for approximately 2 to 3 minutes, or until the bread is golden brown and crispy. Flip the sandwich and cook the other side until it's golden brown and crispy. To help the cheese melt, cover the pan with a lid.

- Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

- Arrange egg bread on work surface. Spread each slice with mustard. Divide Swiss cheese and sliced tomato equally among 3 bread slices; sprinkle with salt and pepper. Form 3 sandwiches by pressing remaining bread slices, mustard side down, atop tomato.
- Whisk eggs, 2 tablespoons water and sage to blend in medium shallow bowl. Melt butter in heavy large skillet over medium-low heat. Dip both sides of each sandwich into egg mixture and place in skillet. Cook until cheese melts and sandwiches are golden, about 4 minutes per side. Cut sandwiches diagonally in half. Transfer 3 halves to each plate.
