500 g beef mince
1 onion, finely chopped
1/2 cup rolled oats
2 teaspoons Worcestershire sauce
1 egg
1 teaspoon paprika
1/4 cup tomato sauce
1 teaspoon salt and pepper, for seasoning
1 tablespoon oil
1 (500 g) can sweet and sour sauce
1/4 cup water
250 g spaghetti

Steps:

  • Mix the mince with the onion, rolled oats, Worcestershire sauce, egg, paprika, tomato sauce and 1 tsp salt.
  • Heat oil in frying pan, shape mince mixture into meatballs and fry, carefully browning on all sides. Cook in batches, and transfer to a casserole dish when browned.
  • When all the mince mixture is cooked into meatballs add the sweet and sour sauce along with the water to the casserole dish.
  • Bake in a pre-heated 180°C oven for 30 minutes.
  • Cook spaghetti as per packets directions.

1 egg, lightly beaten
1 cup quick cooking oats
6 ½ ounces evaporated milk
1 teaspoon salt
¼ teaspoon pepper
½ teaspoon garlic powder
1 tablespoon chili powder
½ cup chopped onion
1 cup ketchup
¼ teaspoon minced garlic
1 cup brown sugar
¼ cup chopped onion
1 tablespoon liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix beef, egg, oats, evaporated milk, salt, pepper, garlic powder, chili powder, and 1/2 cup onion. Form into 1 1/2 inch balls and arrange in a single layer in the baking dish.
  • In a separate bowl, mix ketchup, garlic, sugar, 1/4 cup onion, and liquid smoke. Pour evenly over the meatballs.

1 1/2 pounds ground beef
3/4 cup quick oats
1 cup milk
3 tablespoons very finely minced onion
1 1/2 teaspoons salt
Plenty of ground black pepper
4 tablespoons canola oil
1/2 cup all-purpose flour
1 cup ketchup
4 to 6 tablespoons minced onion
3 tablespoons distilled white vinegar
2 tablespoons sugar
2 tablespoons Worcestershire sauce
Dash of hot sauce, such as Tabasco

Steps:

  • For the meatballs: In bowl, combine the ground beef and oats. Pour in the milk, and then add the onions, salt and pepper. Stir to combine. Roll the mixture into tablespoon-size balls and refrigerate them for 30 to 45 minutes to firm.
  • Preheat the oven to 350 degrees F.
  • Heat the canola oil in a large skillet over medium heat. Dredge the meatballs in the flour, and then brown the meatballs in batches until light brown. As they brown, place them into a rectangular baking dish.
  • For the sauce: Stir together the ketchup, onions, vinegar, sugar, Worcestershire sauce and hot sauce. Drizzle the sauce evenly on the meatballs.
  • Bake until bubbly and hot, about 45 minutes.

A full bunch of vitamin-rich kale gives these turkey meatballs their vibrant green color. Rolled oats are used as a binder in place of breadcrumbs and add an extra bit of heart-healthy fiber.

1/2 cup quick-cooking rolled oats
6 ounces kale, stems removed and leaves roughly chopped (about 4 packed cups)

4 cloves garlic, finely minced
1 large yellow onion, roughly chopped
1 large egg
1/2 cup grated Parmesan
1/4 cup skim milk
Kosher salt and freshly ground black pepper
1 pound 99 percent fat-free ground turkey
2 tablespoons extra-virgin olive oil
One 28-ounce can no-salt-added crushed tomatoes
2 sprigs oregano
Pinch of crushed red pepper flakes
12 ounces whole-wheat angel hair pasta

Steps:

  • Pulse the oats in a food processor until coarsely ground. Add the kale, 1 teaspoon of the minced garlic and 1/4 cup of the chopped onion, and pulse until finely chopped and the texture is crumbly. Add the egg, 2 tablespoons of the Parmesan, milk, 3/4 teaspoon salt and 1/4 teaspoon pepper, and pulse until just combined. Transfer the mixture to a large mixing bowl, add the turkey and mix with your hands until well combined. Cover with plastic wrap, and refrigerate for 30 minutes.
  • Meanwhile, bring a large pot of water to a boil.
  • Heat the oil in a large, straight-sided skillet or Dutch oven over medium-high heat. Add the remaining onions and 1/4 teaspoon salt, and cook, stirring occasionally, until softened and lightly browned in spots, 6 to 8 minutes. Add the remaining garlic, and cook until softened, stirring constantly, about 30 seconds. Add the tomatoes, 1 1/2 cups water, 2 tablespoons of the remaining Parmesan, oregano, 1 teaspoon salt and the red pepper flakes. Stir to combine, and bring to a simmer. Cover, reduce the heat and simmer for 10 minutes.
  • Meanwhile, remove the turkey and kale mixture from the refrigerator. Shape level tablespoonfuls into round meatballs (about 36), and place on a rimmed baking sheet.
  • Remove the lid from the sauce. Use a metal spatula or 2 spoons to add the meatballs, one at a time, to the simmering sauce in a single layer. Cook, covered, until the meatballs are cooked through, about 15 minutes. Turn off the heat, and let the mixture sit, covered, for 5 minutes. Discard the oregano.
  • Meanwhile, cook the pasta in the boiling water according to package directions. Drain well.
  • To serve, divide the pasta among 6 plates or bowls. Top each serving with 7 meatballs and 1/2 cup tomato sauce. Sprinkle with the remaining Parmesan.

2 cups quick-cooking or rolled oats
1 can (12 ounces) evaporated milk
1 cup chopped onion
2 teaspoons salt

1/2 teaspoon garlic powder
3 pounds lean ground beef (90% lean)
SAUCE:
2 cups ketchup
1-1/2 cups packed brown sugar
1/2 cup chopped onion
1 to 2 teaspoons liquid smoke
1/2 teaspoon garlic powder

Steps:

  • In a large bowl, beat eggs. Add oats, milk, onion, salt, pepper and garlic powder. Add the ground beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, at 375° for 30 minutes; drain. , Place all of the meatballs in 1 of the pans. In a saucepan, bring all sauce ingredients to a boil. Pour over meatballs. Return to the oven and bake, uncovered, for 20 minutes or until meatballs are done.
