Ragoût De Pattes De Cochon (Pork Stew With Meatballs) image

This is a traditional Quebecois stew made from pork hocks. I'm looking for recipes that DH remembers from childhood. This one was found on bitsnbites.wordpress.com and grouprecipes.com .The stew is a modification of one by Jehane Benoit, a famous Quebec cook. For a richer stock, caramelize you onions and hocks until dark brown. You can use Recipe #356677 - Caramelized Onions. NOTE: The cooking time doesn't include the optional (but recommended to reduce fat content) overnight refrigeration time.

3 lbs pork hocks
1 teaspoon coarse salt
1/4 teaspoon pepper, freshly ground
1/2 teaspoon cinnamon, ground
1/4 teaspoon clove, ground
1/8 teaspoon nutmeg
2 tablespoons butter, to caramelize onions
2 tablespoons fat, ie shortening, lard, to brown hocks
4 -6 cups water
1 chicken bouillon cube
1 cup onion, sliced and caramelized
4 -6 tablespoons flour, roasted
1/2 cup water
salt, to taste
pepper, to taste
allspice, to taste
2 lbs ground beef
1 lb ground pork
1 teaspoon salt
1/4 teaspoon pepper, freshly ground
1/2 teaspoon cinnamon, ground
1/4 teaspoon clove, ground
1/8 teaspoon nutmeg

Steps:

  • STOCK:.
  • The day before serving the ragout, season pork hocks with salt, pepper, cinnamon, cloves and nutmeg.
  • Caramelized onions in a deep saucepan in 2 Tbsp butter (Recipe #356677). Remove from saucepan.
  • In same saucepan, melt 2 tbsp fat and , then brown hocks until dark brown in colour on all sides (this is the secret to a great ragout).
  • Add water, chicken bouillon cube, and onions to pork hocks. Bring to a boil, and then simmer for at least two hours, until meat falls from bones.
  • At this point it's a good idea to remove pork hocks from saucepan and refrigerate the hocks and ragout overnight in fridge so that you can.
  • Remove/skim the congealed fat.
  • Roast flour in 350F oven until caramel brown. This takes about 1 hour. (should be dark brown but not burnt so keep an eye on it). Alternatively you may brown the flour in a hot dry pan (No oil!), stirring continuously until it's a rich, deep, brown colour. (You must be careful not to burn the flour by controlling the temperature of your pan and stirring constantly until done).
  • Remove meat from bone and set aside.
  • Thicken ragout by using a jar or blender to mix the roasted flour with the 1/2 cup water and pour into the ragout, stirring until well mixed and broth has thickened to a nice consistency.
  • Season with salt, pepper and allspice to taste.
  • Add cooked pork meatballs and pork meat and heat thoroughly.
  • MEAT BALLS:.
  • Mix all ingredients and pat mixture into a 1 inch thick rectangle, then cut into 1 inch squares.
  • Shape each square into a 1 inch meatball.
  • Bake in 400F oven for 10 minutes.
  • Add to Ragoût de pattes to complete cooking.
  • Ragout is sometimes served with boiled or mashed potatoes.

8 ounces udon noodles
3/4 teaspoon kosher salt, divided, plus more
3 tablespoons vegetable oil, divided
4-6 large eggs (optional)
8 ounces sliced maitake or shiitake mushrooms
2 garlic cloves, finely chopped
1 tablespoon finely chopped ginger
2 teaspoons white miso paste
4 cups homemade or store-bought low-sodium chicken broth
1 (6x5-inch) piece dried kombu (optional)
1 tablespoon low-sodium soy sauce
Chicken Meatballs with Ginger and Miso
1 medium carrot, sliced into 1/4-inch coins
3/4 pound baby bok choy, trimmed, cut crosswise in 2-inch pieces (about 6 cups)
1 tablespoon rice wine vinegar (optional)
8 ounces skinless flaky white fish (such as bass, halibut, branzino, or cod), cut into 3x3/4-inch pieces
8 ounces peeled, deveined, tail-on large shrimp
2 tablespoons sliced scallions

Steps:

  • Cook udon in a medium pot of boiling salted water according to package directions. Transfer udon to a colander to drain; reserve cooking liquid in pot. Transfer udon to a large bowl and toss with 1 Tbsp. oil.
  • If using eggs, cover pot and return cooking liquid to a boil. Add eggs and cook at a low boil until soft-boiled, about 6 minutes. Transfer eggs to a large bowl of ice water to cool, then peel and reserve.
  • Heat remaining 2 Tbsp. oil in a large pot over medium-high. Sauté mushrooms and 1/4 tsp. salt until lightly browned and moisture releases, about 5 minutes. Stir in garlic and ginger; cook until fragrant, 30-60 seconds. Stir in miso, then add chicken broth. Stir in kombu, if using, soy sauce, and remaining 1/2 tsp. salt. Cover, bring to a simmer, and cook 10 minutes.
  • Add meatballs and carrots. Cover and continue to simmer until meatballs are just cooked through, about 10 minutes. Remove kombu from broth and discard.
  • Stir in bok choy and vinegar, if using. Place fish on top of stew, then cover and cook 3 minutes. Gently fold in shrimp (try to avoid breaking up fish) and cook, covered, until shrimp is pink and fish is opaque and cooked through, about 3 minutes more.
  • Divide stew among bowls. Slice eggs in half lengthwise and top each bowl with 2 halves. Sprinkle with scallions. Serve udon in large bowl for sharing alongside.

My mother-in-law has a life-long friend named Rosie, a dear Italian woman, who shared with us her family recipe for a hearty spaghetti sauce. I usually omit the ribs, as I'm not that much of a carnivore! Oftentimes I just make the meatballs with the sauce. No need to fry or bake the meatballs, add just add carefully to the hot sauce, then simmer.

6 pieces stewing beef
3 Italian sausages
1/2 lb boneless rib
12 ounces tomato paste
30 ounces water
1/4 teaspoon oregano
1/4 teaspoon pepper
1/4 teaspoon parsley

1/4 cup onion, diced
1/2 loaf Italian bread (3 days old)
1 lb hamburger
2 eggs
1/4 cup romano cheese, Grated (a large handful)
1 dash garlic salt
1 dash pepper

Steps:

  • Pour oil into skillet. Cook stew beef, sausages and ribs until brown.
  • Add onion and continue to cook until the onions turn golden brown.
  • Remove all meats except for the beef and put them in a dish and cover to keep warm. Add beef, onions, tomato paste, water, and spices, to a heavy bottomed dutch oven, mixing well.
  • Cover and cook 1½ hours. Return meats to pan and cook an additional ¾ hours.
  • Add warm water to the dry bread. Squeeze out 2 handfuls and put into large bowl.
  • Add hamburg, eggs, Romano cheese, garlic salt and pepper.
  • Mix all of the Meatball's ingredients together. Shape into meatballs and add to sauce 25 minutes before the sauce is done. Watch carefully for burning.

1/4 cup milk
1 1/2 pounds ground chicken
1 small onion, finely diced

Steps:

  • For the meatballs: Preheat the oven to 375 degrees. Line a rimmed baking sheet with parchment paper.
  • Combine the breadcrumbs with the milk in a medium bowl until the crumbs soak up the milk, 3 to 5 minutes. Stir in the ground chicken, onion, garlic, smoked paprika, cumin, egg, 1 1/2 teaspoons salt and a few grinds of black pepper. Use a 2-tablespoon ice cream scoop to form about 20 meatballs and transfer to the prepared baking sheet. Bake until the meatballs are slightly golden on top and just cooked through, about 15 minutes; set aside.
  • For the stew: Meanwhile, heat the olive oil in a large pot over medium-high heat. Add the onions and cook, stirring occasionally, until softened, 3 to 4 minutes. Add the ginger, garlic and jalapeno and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the color looks rusty, about 1 minute. Add the coriander, smoked paprika and cayenne and 1/2 teaspoon salt and cook, stirring, about 30 seconds. Add the sweet potatoes, chicken stock, canned tomatoes and peanut butter and stir to combine. Bring to a boil, reduce to a simmer, cover and cook until the sweet potato is tender, about 30 minutes. Uncover and stir in the meatballs, kale and peanuts; cook for 10 minutes. Taste and season with salt and black pepper. Remove from the heat and stir in the cilantro. Serve with white rice.

1 tbsp olive oil
2 onions , finely chopped
3 celery sticks, diced
2 carrots , diced
3 garlic cloves , finely chopped
400g can chopped tomatoes
1l chicken stock
175g macaroni
410g can cannellini beans , rinsed and drained
handful flat-leaf parsley , chopped

Steps:

  • Snip the ends off the sausages and squeeze out the meat. Roll into rough walnut-sized meatballs. Heat half the oil in a large, wide pan and fry until browned, around 10 mins. Remove from pan and set aside.
  • Add the rest of the oil to the pan. Tip in the onions, celery and carrots and fry for 10 mins until soft. Add garlic and cook for 1 min more. Tip in the tomatoes and stock. Bring to the boil and simmer for 10 mins.
  • Stir in the macaroni and return the meatballs. Simmer for about 10 mins until pasta is cooked and meatballs are cooked though. Stir in beans and heat until piping hot. Season, mix in parsley and serve.

1/2 cup breadcrumbs
2 eggs, beaten
1/2 cup water
1 teaspoon dry mustard
1 teaspoon salt

3 tablespoons butter or 3 tablespoons olive oil
2 onions, chopped

Steps:

  • Blend pork, breadcrumbs, eggs, water, mustard, salt, pepper, cloves, cinnamon, nutmeg in a bowl.

  • Heat the butter or olive oil to high heat in a casserole and seal the meatballs on all their sides.
  • Lower the heat to medium. Add the onions and garlic.
  • Stir and keep on cooking 3 minutes.

  • Pour the beef stock. Stir well.
  • Cover and let simmer 45 minutes.

For the Meatballs
* 1 tbsp. extra-virgin olive oil
* 1 small yellow onion, finely chopped
* 1/2 lb. ground lamb
* 2 tbsp. dried currants
* 1 1/2 tbsp. chopped flat-leaf parsley leaves
* 1 tbsp. pine nuts
* 1/2 tsp. paprika
* 1 egg, lightly beaten
* Kosher salt and freshly ground black pepper, to taste
For the Rice
* 1 1/2 cups basmati rice, soaked in water for 20 minutes
* 2 tsp. kosher salt
* 1 tsp. turmeric
For the Stew
* 6 small red beets (about 1 lb.), peeled and cut into sixths
* 3 cloves garlic, finely chopped
* 5 tbsp. extra-virgin olive oil
* 1 1/2 tsp. ground coriander
* 1 1/2 tsp. ground cumin
* 1 1/2 tsp. curry powder
* 1 tsp. turmeric
* 3/4 tsp. paprika
* 1/2 tsp. ground ginger
* 1/8 tsp. cayenne
* 1 medium yellow onion, finely chopped
* 1/4 cup tomato paste
* 6 tbsp. fresh lemon juice
* 2 tbsp. sugar
* 1 tbsp. finely chopped fresh flat-leaf parsley

Steps:

  • Make the meatballs: Heat oil in an 8" skillet over medium-high heat. Add onions and cook, stirring occasionally, until golden brown, about 7 minutes. Remove from heat; let cool slightly. Add onions to a medium bowl along with lamb, currants, parsley, pine nuts, paprika, and egg and combine with your hands. Divide mixture into 12 portions; dip your hands in a bowl of water and roll portions into 1½" meatballs and transfer to a parchment paper-lined baking sheet. Cover meatballs with plastic wrap and refrigerate for 30 minutes.
  • Prepare the rice: Strain rice and transfer to a 2-qt. saucepan along with the salt, turmeric, and 2 cups water. Bring to a boil, reduce heat to low, cover, and cook for 10 minutes. Remove pot from heat and keep covered in a warm place.
  • Meanwhile, make the stew: Bring beets and 6 cups water to a boil in a 4-qt. saucepan. Reduce heat to medium-low, cover, and simmer until beets are tender, about 30 minutes. Remove pot from heat and, using a slotted spoon, transfer beets to a bowl; reserve beet juice.
  • Put garlic on a work surface and sprinkle with a little salt; finely chop. Scrape the garlic into a paste with the side of the chef's knife. In a small bowl, combine garlic paste, 3 tbsp. oil, coriander, cumin, curry powder, turmeric, paprika, ginger, and cayenne; set spice paste aside. Heat remaining olive oil in a 6-qt. pot over medium-high heat. Add onions and cook, stirring occasionally, until golden brown, about 7 minutes. Add reserved spice paste and tomato paste and cook, stirring constantly, until mixture is lightly browned, about 3 minutes. Stir in 1 cup of the reserved beet juice. Add remaining beet juice, lemon juice, and sugar; simmer for 5 minutes. Using a spoon, place reserved meatballs in the simmering stew. Cover and cook, stirring occasionally, until meatballs are cooked through, about 8 minutes. Skim surface of stew, add reserved beets, and cook for 2 more minutes. To serve, fluff rice with a fork and spoon it into serving bowls along with ladlefuls of the stew and meatballs; season and garnish with parsley.

This traditional Québécois dish is delicious! With boiled potatoes and crusty bread, this is a meal your family will enjoy.

2 pound(s) (about 2 large) pork hocks
5 to 5 1/2 cup(s) white onions, chopped
1 teaspoon(s) mixed spice aka épices mélangées
2 whole cloves
1 teaspoon(s) ground himalayan sea salt
1/3 teaspoon(s) freshly ground black pepper (i always use mixed peppercorns)
11 cup(s) water, or as needed
1 large bay leaf
MEATBALLS
1 1/2 pound(s) ground veal
1 1/2 pound(s) ground beef
1 1/2 pound(s) ground pork
2 large free-run eggs, beaten
4 cup(s) white onions, finely chopped
3/4 cup(s) fine breadcrumbs
1 tablespoon(s) dijon mustard
1 tablespoon(s) herbes de provence
1 tablespoon(s) mixed spice aka Épices mélangées
2 teaspoon(s) hot paprika
2 teaspoon(s) ground himalayan sea salt, or more to taste and divided
2 teaspoon(s) freshly ground black pepper, or more to taste and divided (i always use mixed peppercorns)
6 large cloves garlic, pressed
1/2 tablespoon(s) grapeseed oil for hands, as needed
6 cup(s) toasted flour, sifted and divided
14 cup(s) water, or as needed
2 pound(s) pork sausage

Steps:

  • HOCKS: In a large pot, place hocks, white onions, mixed spice, cloves, salt, and pepper. Add water to barely cover the hocks and bring it to a boil.
  • Reduce heat to simmer and let it simmer for 1 to 1 ½ hours or until the meat is cooked.
  • When cooked, remove hocks from the pot and reduce the heat to medium-low. Let the hocks cool off before handling.
  • Separate meat from skin, bones, and fat; discard them. Cut the meat into bite sized pieces and set aside.
  • MEATBALLS: In a large bowl or pot, add ground veal, ground beef and ground pork; combine the meat together.
  • Add eggs, onions, breadcrumbs, Dijon mustard, Herbes de Provence, mixed spice, hot paprika, salt, black pepper and pressed garlic. Combine the ingredients until fairly well mixed.
  • Using a medium scoop, portion the meat and then, with well-oiled hands, roll them nice and tight.
  • Roll each meatball in the sifted toasted flour, shake off any excess and put them back on the baking dish; set them aside.
  • STEW: Add more water to the pot where the hocks were simmering earlier and increase the heat to high. Skim off any foam and discard it.
  • When it starts boiling, add the meat from the pork hocks as well as the meatballs - if the liquid cools off too much, place the lid on to bring it back to a boil.
  • Sift the remaining toasted flour over the pot by adding a little bit at a time and stir well between each addition. The amount of flour added depends on how thick you want your gravy, you can always add more later during the cooking time - I normally go for about 4 to 5 cups.
  • Reduce the heat to a simmer and let it cook for 3 hours, stirring often - as the ragoût cooks, the sauce will thicken.
  • After an hour of cooking, taste and adjust the seasoning.
  • Another half an hour later, start boiling water in a medium pot. Add pork sausages and boil them for about 10 to 12 minutes.
  • When time is up, remove them from the heat and gently scrape the casings off; discard them.
  • Add the sausages to the ragoût and let them simmer for the remaining 1 hour.
  • When the 3 hours is finally up, taste and adjust the seasoning by adding salt, pepper and mixed spice.
