Italian, Christmas cookie, round, chocolate and spicy. The smell always gets me charged for the holidays. The taste puts you in heaven.

Number Of Ingredients 17

3 cups all-purpose flour
⅔ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
1 cup chopped walnuts
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ cups white sugar
3 eggs
½ cup butter
2 teaspoons vanilla extract
4 cups confectioners' sugar
¼ cup unsweetened cocoa powder
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets.
  • Cream the butter margarine or shortening, white sugar, eggs and vanilla.
  • In a separate bowl, stir the flour, 2/3 cup cocoa, baking powder, baking soda, salt and spices. Add flour mixture to butter mixture. If too sticky add more flour, if too dry add a little milk. Add nuts and mix with hands. Must be of consistency to roll into little 1/2 - 1 inch balls.
  • After you have cookie dough to handling consistency by adjusting it with either the flour or milk, roll into little balls, place on the cookie sheet and bake for about 10-12 minutes, cookie should be firm. Do not overcook. Remove from oven, let rest on the sheet for a few moments and remove to wax paper. When cool, frost with confectioner's sugar and cocoa glaze.
  • To Make Glaze: Combine 4 cups confectioner's sugar, 1/4 cup cocoa, add about 1/2 cup milk. Consistency should be of a glaze. Pour small amount of glaze over each cookie (about 1 tsp.). Decorate with sprinkles while glaze is still wet.

1 CUP SHORTENING
1 1/2 CUPS SUGAR
3 EGGS
3/4 CUP MILK
1 TSP. VANILLA
5 CUPS FLOUR
5 TSP. BAKING POWDER
CINNAMON
GROUND CLOVES
NUTMEG
3/4 CUP COCOA POWDER
CUP EACH:
NUTS (traditional Walnuts but I use Pecans)
RAISINS
CHOCOLATE CHIPS

Steps:

  • CREAM SHORTENING AND SUGAR. ADD EGGS (one at a time and mix well) ADD MILK AND VANILLA ADD MIXED DRY INGREDIENTS. MIX THOROUGHLY. ADD NUTS, RAISINS AND CHOCOLATE CHIPS. MAKE DOUGH INTO WALNUT SIZE BALLS. BAKE ON UNGREASED SHEET. BAKE AT 375 FOR 12-15 MINUTES. FROST WHEN COOLED ICING 1 1/2 cups 10X SUGAR 3 tbsp. WARM MILK 1 tsp. VANILLA 2 tbsp. BUTTER MIX ALL TOGETHER UNTIL SMOOTH. DRIZZLE ON COOKIES OR DIP JUST TOPS OF COOKIES SPRINKLE WITH COLOURED SUGARS OR SPRINKLES.

1 pound meatloaf mix (beef, pork, veal or use all beef if you prefer.)
1 egg
½ cup bread crumbs (I use Aleia's gluten free)
½ cup shredded parmesan cheese
3 yellow onions (choose med to large)
salt to taste
1 package bacon
½ c. Favorite BBQ sauce
Scallions or chives for garnish

Steps:

  • Mix meat, egg, crumbs, cheese and salt.
  • Cut top and bottom off onion, cut in half and peel off skin. Then separate the onion into layers. Use the larger outside layers.
  • Take a small handful of your meatloaf mix and put it inside one onion layer.
  • Gently press another layer on top of the mixture. You are making an onion seal around your large meatball.
  • Continue with the rest. I made 4 but amounts can vary based on onion sizes.
  • Wrap each "bomb" with 3 slices bacon and secure with toothpicks.
  • Bake in a dish with sides (to catch grease) at 425 for approx 40 minutes or until internal temp 165.
  • Add BBQ sauce all over and bake an additional 5 minutes!
  • Top with chives or scallions.
