SAUERKRAUT MEATBALL APPETIZERS
My friend Mary, a diehard Packer fan, shared this recipe. It's perfect for tailgate parties, potlucks, or family gatherings. You won't recognize the saurkraut at all. It has a wonderful sweet/sour chunky sauce with just a little kick to it. There are never any leftovers.

Steps:
- Mix first four ingredients and shape into 1 inch meatballs.
- Place meatballs in a 9 X 13 baking pan.
- Pour remaining ingredients in a sauce pan.
- Bring to a boil.
- Pour sauce over meatballs and bake at 350 F for 1 hour.
- Test one meatball (I know this is hard- LOL) to make sure it's done.

Steps:
- In a large bowl, combine beef, bacon, parsley, garlic, Parmesan, breadcrumbs, egg, nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Shape mixture into 40 meatballs. (For equal-size meatballs, scoop out meat mixture with a teaspoon, using two scoops for each meatball. Then roll between your palms to shape into balls.).
- Arrange in a single layer on a baking sheet or on two large plates. Freeze 1 hour. Once frozen, transfer to an airtight container or resealable plastic bag; label and date.
- To use the meatballs straight from the freezer, preheat oven to 400°. Place meatballs on a rimmed baking sheet and bake until cooked through, about 15 minutes.
- Note: Frozen mini-meatballs can also be used in soup or sauce: Simmer meatballs, covered, in liquid until cooked through, about 10 minutes.

- Preheat oven to 350°F. Spray 24 mini muffin cups with non-stick cooking spray. Separate dough into 4 rectangles; press perforations to seal. Cut each rectangle into 6 squares. Press each square in bottom and up side of mini muffin cup. Bake 6 minutes. Remove from oven. Using handle of wooden spoon, immediately make 1 1/2-inch indentation in center of each cup. Meanwhile, in 10-inch skillet, heat oil over medium heat. Add onion; cook 2 to 3 minutes or until tender. Stir in chipotle chili and the adobo sauce, meatballs, and 2 tablespoons water. Cover; reduce heat to low. Cook 3 to 4 minutes, stirring occasionally or until thoroughly heated. Remove meatballs from skillet. Spoon 1/2 teaspoon of the sauce into each cup. Top each with one meatball half, cut side up. Cut each piece string cheese lengthwise in half; cut each half crosswise into thirds. Top each meatball with 1 piece of string cheese. Bake 6 to 10 minutes longer or until edges are golden brown. Cool 1 minute; remove from cups. Top each meatball cup with 1 avocado slice; secure with wooden toothpick. Serve warm.

- 1. PREP WORK

- 3. Drain the juice from the can of sliced pineapple, and reserve.
- 4. Cut up the pineapple into 1-inch (2.5cm) chunks, and reserve.
- 5. THE GLAZE
- 6. Gather your ingredients.
- 7. Add all the ingredients to a saucepan over medium heat.
- 8. Chef's Note: If the amount of the pineapple juice doesn't equal 1.5 cups, then add some water to make up the difference.
- 9. Whisk until thoroughly combined.
- 10. Allow the glaze to simmer until the sauce begins to thicken, about 10 - 12 minutes.
- 11. Add the meatballs, and continue to simmer for an additional 5 - 7 minutes.
- 12. PLATE/PRESENT
- 13. Place a pineapple chunk on top, and hold together with a skewer, or toothpick.
- 14. Serve while still nice and warm. Enjoy.
- 15. Keep the faith, and keep cooking.

My family enjoys these when we have "appetizer night". These aren't italian meatballs for spaghetti or meatball subs, they have a sweet glaze.

Steps:
- Soak the bread in the milk. Combine the bread, eggs, horseradish, salt, and pepper in a mixing bowl; beat well at medium speed of an electric mixer.
- Add the ground beef; mix well. Shape mixture into 1 inch balls. Place on a rack in a shallow roasting pan. Bake at 450 degrees for 10 to 15 minutes. Place meatballs on a papertowel covered plate to absorb any excess grease.
- Combine the ketchup and remaining ingredients in a saucepan; cook over medium heat until bubbly, stirring occasionally.
- Add the meatballs to the sauce, and cook until thoroughly heated. Serve warm.
