2 cups cabernet sauvignon wine (or more! It's good for you!)
1/2 cup water or 1/2 cup beef broth
1 (1 1/4 ounce) envelope dry onion soup mix
1 tablespoon brown sugar
1 teaspoon dried rosemary or 1 teaspoon fresh rosemary
1 medium onion, chopped
4 medium carrots, washed, pared & sliced
1 garlic clove (or table spoon crushed)
1 bay leaf
2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon crushed red pepper flakes
3 heads celery, with leafy greens roughly chopped
4 small red potatoes
4 small yukon gold potatoes
2 beef bouillon cubes
2 (8 ounce) boxes mushrooms (I used button try any)
16 ounces condensed cream of mushroom soup
4 lbs boneless beef roast (rump, chuck or round)
1 -2 teaspoon cornstarch (for au jus)

Steps:

  • 1.Place roast in crock pot and season with pepper.
  • 2.Mix rest of ingredients together and pour over roast.
  • 3.Cover top with mushrooms and add bay leaf.
  • 4.Cover and cook on low 6-9 hours.
  • 5.Remove roast to rest on platter.
  • 6.Discard bay leaf.
  • 7.Turn crock pot to high.
  • 8.Whisk cornstarch into juices to thicken.
  • 9.This makes a wonderfully tasty au jus, or over mashed potatoes.

1 lb lean ground turkey
1 cup diced onion
1 (1 1/4 ounce) package beef stroganoff sauce mix or 1 (1 1/4 ounce) package fat free brown gravy mix
4 medium red potatoes, diced or 4 cups red potatoes
1 tablespoon olive oil
1 (15 ounce) can whole kernel corn, drained or 2 cups frozen corn
2 cups frozen cut green beans
2 cups frozen sliced carrots
1/2 teaspoon pepper
salt

Steps:

  • Brown ground turkey with pepper, salt and onion. Drain well. Mix in the corn and and half of the stroganoff mix. Place ground beef mixture in crockpot.
  • In a sealable bag, toss diced potato with oil to coat, add remaining stroganoff mix and shake some more. Add to crockpot. Salt to taste.
  • Cover and cook on low for 5 to 6 hours. Taste and adjust seasonings if needed.

6 -8 medium red potatoes
2 teaspoons italian seasoning
2 -3 tablespoons olive oil
2 tablespoons of melted butter
1/2 teaspoon coarse salt
1/2 teaspoon ground pepper

Steps:

  • Wash the potatoes and scrub lightly with a vegetable brush. Scrubbing too vigorously removes the skin, which is part of the appeal of red potatoes.
  • Cut into 1/2 to 3/4 inch wedges. Dry with paper towels and set aside.
  • Pour the olive oil into a large bowl and add the potatoes; stir to evenly coat the wedges.
  • Sprinkle with the seasoning, and stir well.
  • Pour the melted butter into the bottom of the crock pot, and add the potato mixture.

When there's no space on the stovetop to boil and mash potatoes, braise and mash them in a slow cooker - an easy and forgiving one-pot method. This rustic version has big flavors, thanks to the garlic that's cooked and smashed with the potatoes. The five garlic cloves lends a fairly assertive flavor, so decrease it to 2 or 3 cloves if you want a more subtle effect. You can leave the dish on warm for up to 3 hours after you mash the potatoes, just stir in the Parmesan and parsley right before serving.

5 pounds red-skinned potatoes, cut into roughly 1-inch chunks
5 garlic cloves, peeled and smashed
1/2 cup olive oil
Juice of 1/2 lemon (2 tablespoons)
2 teaspoons kosher salt, plus more for seasoning
Freshly ground black pepper
8 ounces Parmigiano-Reggiano, grated (about 2 1/4 cups)
Leaves of 1 small bunch flat-leaf parsley

Steps:

  • Toss together the potatoes, garlic, olive oil, juice of 1/4 the lemon (about 1 tablespoon), salt and a generous amount of black pepper in a 5- to 8-quart slow cooker. Cover and cook on high, stirring once or twice to encourage even cooking, until the potatoes are very tender, about 4 hours.
