PESTO MEAT LOAF
This is one of my favorite meat loaf recipes. The salsa gives it just the right amount of tang, and if you grow basil, the pesto is a tasty way to use it.

Steps:
- Place pesto ingredients in the order listed in a food processor; cover and process on low speed until a paste forms. , In a large bowl, combine the first six meat loaf ingredients; add pesto. Crumble beef over mixture and mix well. Press into a greased 9x5-in. loaf pan. , Bake at 350° for 50-60 minutes or until a thermometer reads 160°, draining off fat if necessary. Let stand in pan for 10 minutes before slicing.

PROVOLONE PESTO LOAF
This recipe was given to me by someone I worked with. He told me that his wife makes this & everyone loves it. He was VERY right. When I go to party's and I have to bring something my friends ask me to make this recipe and it always disappears. I hope you enjoy this as much as all my friends do.

Steps:
- You will need: Loaf Pan (91/2 X5 1/2) and Cloth Napkin (Dampened).
- Drain the roasted peppers and pat them dry, chop into small pieces.
- Once the cream cheese has softened add the crushed garlic and mix well, along a pinch of salt & pepper.
- Pesto sauce should be stirred several time so it will not separate as you divide the pesto.
- Take the damp cloth napkin and line the loaf pan.
- Make sure your push the napkin into the corners as much as possible.
- Then Layer: (Spread each item out ot the edges as much as possible).
- 1/3 of provolone (lay the cheese on the bottom of the loaf pan and then do the sides & ends making sure you get the corners. Make sure that the cheese is overlapping the sides of the loaf pan).
- 1/3 of the Pesto Sauce (thin layer).
- 1/2 of the Roasted Red Peppers.
- 1/2 of the Cream Cheese Repeat this sequence once, then end with Pesto and Provolone last.
- Wrap with the overlap of the cloth napkin, cover pan with saran wrap and refrigerate overnite.
- Turn out onto platter.
- Remove the napkin (the napkin will be oily).
- Garnish with Fresh Basil or Parsley.
- Using a spreader cut into the loaf and spread it onto the bread.
- Serve with Italian or French Bread.
TURKEY PESTO MEATLOAF
This Turkey Pesto Meatloaf has a little basil pesto added that really bumps up flavor!

- Take the turkey out of the fridge and let it come to room temperature while you prep the other ingredients.
- Preheat oven to 350F/180C.
- Spray a roasting pan with olive oil or nonstick spray (preferably a pan with some slits to let any extra fat drip out.)
- Heat the olive oil in a frying pan and saute the onion with medium-high heat until it's starting to slightly brown, about 7-8 minutes.
- Add the garlic, lower heat slightly, and saute about 2 minutes more.
- Using a bowl that's large enough to get both hands into it, combine the ground turkey, sauteed onion and garlic, pesto, Parmesan cheese, salt, and flaxseed meal.
- Use clean hands to mix the ingredients, just until they are combined.
- Form the mixture into a loaf shape and place on the roasting pan.
- I like to use a butter knife to make diagonal slits into the top of the meatloaf, but that's optional.
- Bake meatloaf for 40 minutes.
- While it bakes, stir together the marinara sauce and balsamic vinegar and after 40 minutes use a pastry brush to brush it onto the meatloaf, until it's completely covered with sauce.
- Continue to bake, brushing with more sauce a few more times if you have some left, until a meat thermometer (affiliate link) shows a temperature of 165F/75C. I cooked my meatloaf for a total time of one hour and twenty minutes before it got to that temperature.
- Serve hot.

RICOTTA AND PESTO MEATLOAF
For anyone who knows me, I am a pesto fanatic. I would put it in cereal if I could (well...maybe not). But I found this recipe a while back (can't remember where) and it is wonderful and full of flavor and incredibly easy to make! I'm not a huge meat loaf fan, but this I love!

- Knead first 3 ingredients together and then mix in egg.
- Press into greased loaf pan.
- Spoon on several tablespoons of tomato sauce on top of meatloaf.

PESTO FILLED SPIRAL MEATLOAF
This meatloaf is much better the second day. Makes a great sandwich with rye bread and ketchup. I have made this meatloaf at least 20 times and always to rave reviews!

- Preheat the oven to 350 degrees.
- Cover the inside of a 13x9x2-inch baking pan with aluminum foil.
- In a mixing bowl, thoroughly combine the ground chuck, sausage, bread crumbs, beaten eggs, salt, nutmeg, and pepper.
- In a separate bowl, combine the pesto, 1 cup of the Cheddar cheese, the crumbled bacon,a nd the hard-cooked eggs.
- Place the meat mixture between 2 sheets of waxed paper and roll into a rectangular shape about 1/3 inch thick.
- Remove the top sheet of waxed paper and spread the pesto mixture all over the top of the flattened meat.
- Roll up the meat like a jelly roll, peeling back the remaining waxed paper as you go.
- Shape the ends of the roll, as needed, with your hands to form a neat cylindrical shape, entirely enclosing the pesto.
- Place the meat loaf, seam side down, in the prepared baking pan.
- Sprinkle the meat loaf with the remaining 1/2 cup Cheddar cheese.
- Bake until cooked through and browned, 1 hour.
- Pesto: Place the garlic and half of the olive oil in a food processor.
- Process until the garlic is pureed.
- Add the remaining oil, the basil, pine nuts, and Parmesan.
- Process to a smooth paste.
- The pesto should be fairly dry for the meat loaf.
- If the puree is too wet, blot it with paper towels to remove excess oil.

- Preheat oven to 400 degrees.
- Put the pork in a mixing bowl. Add salt and pepper.
- Heat the oil in a small skillet. Add the garlic and cook, stirring, until it is wilted. Add to the pork.
- Add the bread crumbs, pine nuts, basil, parsley, Parmesan cheese and egg. Blend well.
- Put the mixture into a standard six-cup loaf pan. Pack it down and smooth over the top. Place in the oven and bake about one hour or until the internal temperature registers 165 degrees. Remove from the oven and let the meat loaf stand about 15 minutes before slicing and serving with the tomato sauce.

MARSHALL FIELD'S MEATLOAF WITH RED PEPPER SAUCE
Another favorite of mine from Dayton's/Marshall Field's/Macy's. The pine nuts, spinach and red pepper sauce give it a different flair. Good with skin-on mashed potatoes

Steps:
- Meatloaf:.
- Preheat oven to 350 degrees.
- Finely crush croutons and combine with broth in small bowl. Let stand 10 minutes.
- Heat oil in skillet. Add onions and cook over medium heat 8 to 10 minutes or until soft. Set aside.
- In large bowl, beat eggs. Mix in pesto, pine nuts, Worcestershire sauce, seasoned salt and pepper.
- Add meat, spinach, cooked onion and crouton mixture. Mix well.
- Place mixture in bread pan and bake 1 hour and 15 minutes. Let stand 10 minutes before slicing.
- Remove from pan and slice.
- Serve topped with sauce.
- Sauce:.
- Rub saucepan with garlic. Discard clove.
- Melt 4 tablespoons butter over low heat.
- Add flour and stir until blended. Stir in beef broth.
- Stirring constantly, cook sauce until it comes to boil. Add salt, pepper and Worcestershire sauce.
- Remove from heat, stir.
- Melt remaining 2 tablespoons butter in medium skillet.
- Add bell pepper and cook over medium heat 5 minutes or until it begins to soften.
- Add to reserved brown sauce.
- Adjust seasonings as needed and heat through.
