MEXICAN MEAT LOAF ROLL

Steps:
- In a large bowl, combine eggs, oats, Worcestershire sauce and pepper. Add ground beef and mix well. On a piece of waxed paper, pat meat mixture to an 18x9-in. rectangle. Combine cream cheese and chilies; spread over meat to within 1 in. of outer edges. Roll meat mixture, jelly-roll style, starting at narrow end. Place seam side down in a 13x9-in. baking dish. , Bake at 350° for 50 minutes. Drain excess fat. Top with salsa and bake another 10-15 minutes. Let stand 10 minutes before serving.

- 1. Combine meat, oats, eggs, worcestershire sauce and pepper; mix well.
- 2. On wax paper, press meat mixture into 20x10 1/2-inch rectangle.
- 3. Combine cream cheese and chiles; mix well.
- 4. Spread cream cheese mixture over meat mixture to within 1 inch of outer edge.
- 5. Roll, jelly roll fashion, starting at narrow end.
- 6. Place in 12x8 inch baking dish.
- 7. Bake at 350, 40 minutes.
- 8. Top with salsa; continue baking for 10 minutes.
- 9. Let stand 10 minutes before serving.

Steps:
- 350 degrees for 1 1/4 hours. Rinse frozen broccoli under running cold water to separate, drain. Mix hamburger, eggs, bread crumbs, catsup, milk, 1/2 tsp salt, pepper and oregano. Pat hamburger mixture into rectangle 12x10 on foil. Arrange broccoli on hamburger mixture within 1/2 inches from edges. Sprinkle with 1 tsp. salt. Arrange ham on broccoli. Roll up and seal. Place on rack in shallow roasting pan.

These meaty roll-ups are a treat even for the hungriest diner! They're very filling and ideal for pre-plating at a dinner party.

Steps:
- 1. Mix together hamburger,onion,cracker crumbs,salt, pepper, beaten egg. Make into 4-6 patties. Add about a spoonful of stuffing. Roll up and tuck in sides.
- 2. Cover with 1 can of mushroom soup diluted with 3/4 can of water mixed with 1 tsp soy sauce & ketchup. Bake in shallow pan 40 minutes at 350.
- 3. Serve with mashed potatoes, noodles or rice with a nice side salad. So Yummy!
