1 - 1 1/2 lb. hamburger, ground turkey, or ground venison
1 Tbs. oil
2 cloves garlic, minced
1/4 c. onion, chopped
1/4 c. green pepper, chopped
3 cans chili beans, or you can use any beans you prefer, I like to use the mixed chili beans
1 can petite diced tomatoes
3 c. tomato juice
1 c. sliced mushrooms, optional
1 c. black olives, optional
1 - 2 Tbsp. chili powder (depending on how spicy you want it )
1 tsp. garlic salt
3/4 tsp. cumin powder
1/2 tsp. black pepper
1/4 tsp. paprika
1 tsp. sugar
1/4 tsp. salt, or as needed to suit your taste

Steps:

  • Brown, crumble and drain your hamburger.
  • Put oil in large pot, add chopped garlic, onion, and pepper. Saute for a minute or two.
  • Add the remaining ingredients. Bring to a boil.
  • Let it simmer for about 15 minutes, to get all the flavor incorporated.

1 tablespoon minced garlic
3 cups water
4 medium white potatoes, peeled and diced
1 medium onion, chopped
½ cup chopped celery
1 tablespoon dried parsley
1 teaspoon dried rosemary
1 teaspoon ground thyme
1 teaspoon dried oregano
salt and ground black pepper to taste

Steps:

  • Cook and stir beef and garlic in a large saucepan over medium-high heat until browned and crumbly, 5 to 7 minutes.
  • Pour water into the pot and add potatoes, onion, celery, parsley, rosemary, thyme, and oregano. Reduce heat and simmer until potatoes are tender, about 30 minutes. Season with salt and pepper.

3 pounds baking potatoes
1 pound lean ground beef
½ cup chopped onion
3 cloves garlic, minced
1 (15 ounce) can tomato sauce
1 (15 ounce) can chili beans
1 (1.25 ounce) package chili seasoning mix
1 cup low-sodium chicken broth
¼ cup butter
4 cups milk
1 cup buttermilk
1 teaspoon salt
½ teaspoon ground black pepper
1 ½ cups shredded white Cheddar cheese
½ cup sour cream
chopped fresh chives

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Prick potatoes with a fork. Transfer to a 10x15-inch baking pan.
  • Bake in the preheated oven, turning once, until tender, about 1 hour.
  • Meanwhile, for chili, add ground beef, onion, and garlic to a large saucepan. Cook over medium heat, stirring to break up lumps, until meat is browned and onion is tender, about 10 minutes. Drain grease.
  • Add tomato sauce, chili beans, and chili seasoning mix to saucepan. Bring to a boil. Reduce heat to low and simmer, covered, at least 10 minutes to let flavors meld.
  • When potatoes are cool enough to handle, use a spoon to scoop potato pulp into large bowl. (You should have about 4 cups pulp). Discard skins. Add broth to bowl. Mash potatoes until smooth.
  • Melt butter in a 4- to 5-quart Dutch oven over medium heat. Stir in flour and cook, whisking constantly to make a light roux, about 2 minutes. Gradually whisk in milk, 1 cup at a time. Cook, whisking constantly, until lightly thickened. Stir in potato mixture, buttermilk, salt, and pepper. Cook, stirring frequently, until heated through, 3 to 5 minutes (soup will be very thick). Remove from heat and gradually stir in 1 cup cheese.
  • Divide soup among bowls. Top with chili, sour cream, remaining 1/2 cup cheese, and chives (if using).

One taste of this soup at my grandparents' then favorite Mexican restaurant in Tucson - Molina's - and my mom (whose grandchildren called Merm) had to make her own. This is how she made hers and actually everyone liked Mom's version (made with love) better than Molina's. This is pure comfort food for my Dad and for me and we chat about memories of my beloved Mother as we eat. Serve with fresh warm flour tortillas for dipping and of course a nice Mexican beer.

4 tablespoons butter
1 medium onion, chopped
1 garlic clove, minced
4 medium potatoes, peeled and cut into 1-inch cube
1/3 cup flour
2 cups chicken broth
2 cups milk
27 ounces whole green chilies (drained and chilies diced into bite-sized pieces, Mom used canned, I use fresh roasted chilies, abou)
1/2 teaspoon salt
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese

Steps:

  • Heat butter in large dutch oven or other large soup pan over medium heat.
  • Add onion and garlic; cook until onion is tender.
  • Stir in potatoes and cook for abbout 1 minute.
  • Stir in flour until smooth and continue cooking 1 minute.
  • Slowly add broth stirring well.
  • Bring to a boil. Cover and reduce heat. Simmer 30 minutes or until potatoes are tender.
  • Stir in milk, chiles and salt.
  • Heat until simmering.
  • Add cheeses; cook and stir just until cheeses melt. Do not boil. Add pepper to taste. Serve in individual bowls. Garnish as desired.

1 onion, chopped
2 cups tomato puree
1 (15 ounce) can kidney beans
4 potatoes, cubed

  • In a large saucepan over medium high heat, saute the ground beef and the onions about 5 minutes, or until the onions are almost tender. Drain the fat. Add the pureed tomatoes, kidney beans, potatoes, chili powder, salt and water.
  • Reduce heat to low and simmer about 30 minutes, or until potatoes are tender. Add another cup of water if a thinner chili is desired.

1/2 cup fresh jalapeno pepper, seeded and minced
1/4 cup fresh long green chili, roasted, peeled, seeded and finally chopped (about 3 medium)
1 cup of finely chopped onion
2 lbs potatoes, peeled and cut into 1/2 inch cubes
1/2 teaspoon salt
4 cups chicken broth
2 tablespoons butter
1/4 cup flour
3 cups milk (May use 1-1/2 cups milk and 1-1/2 cups half and half)
cheddar cheese or monterey jack cheese, shredded

Steps:

  • Combine the first 6 ingredients.
  • Bring to a boil and reduce heat, simmer 20 minutes.
  • In a separate pan, melt the butter over low heat, add flour and blend until smooth.
  • Cook the roux over low heat for 3 minutes, constantly moving it so it will not scorch.
  • Strain liquid from potato/chile mixture and reserve 3 cups of the liquid.
  • Mash half the potato/chile mixture, reserving the other half.
  • Stir the reserved cooking liquid into the roux, raise the heat and whisk with a wire whip until thickened.
  • Add milk to thickened liquid and continue to stir until it comes to a simmer.
  • Turn off the heat, add mashed and unmashed potato/chile mixture.
  • Serve topped with shredded cheese on top.

2 tablespoons olive oil
1 teaspoon garlic clove, minced
1/2 teaspoon red pepper flakes
6 very small red salad potatoes, diced small
1 small yellow onion, diced small
1 yellow bell peppers or 1 orange bell pepper, diced small
1 teaspoon chili powder
1 lb extra lean ground beef
2 large tomatoes, chopped coarsely

Steps:

  • Heat olive oil, garlic, and pepper flakes over medium-high heat.
  • Add potatoes, bell pepper, and onion. Sprinkle chili powder over vegetables. Cook until potatoes are almost soft and starting to turn translucent (about 12 minutes).
  • Add ground beef. Using the leanest ground beef will mean that you can cook everything together because you won't have to drain the beef. It saves time and tastes richer. Chop up the beef as it's cooking so that it is crumbly. Cook until it is mostly brown. You may want to add more chili powder at this point.
  • Add tomatoes and turn down heat slightly. Allow them to become soft. I like to gently mash them with a potato masher at this point. Let the whole mixture simmer for about 10 minutes.
  • Serve with corn bread. I like to get the corn bread (which takes 20 minutes) in the over right before I add the ground beef. Everything is done at about the same time.

4 medium potatoes, scrubbed unpeeled
3 cups water
1 tablespoon olive oil
1 1/2 cups chopped onions
2 garlic cloves, minced
1 1/2 cups red peppers, diced
1 1/2 cups anaheim chilies, diced
1 cup soymilk or 1 cup low-fat milk
1 teaspoon ground cumin
1 teaspoon dried basil
1 garlic clove, minced
salt
pepper
scallion, chopped (optional)
cilantro, chopped (optional)

Steps:

  • Cut cleaned and unpeeled potatoes into large cubes (about 1 to 1 1/2 inches). Bring water and potatoes to a low boil, cooking until the potatoes are tender.
  • While potatoes are cooking, place oil and onions in a skillet and cook until onions are cooked soft and translucent but not brown. Add peppers, cumin, basil and garlic and continue cooking until peppers are tender, about 6-9 minutes.
  • Place potatoes and three quarters of the water into a blender or food processor, reserving the remaining water. Blend until smooth.
  • Return processed potatoes to pot, adding peppers and milk. Use reserved water to thin the soup further if desired. Warm over low heat until it is ready to serve.
  • Garnish with scallions or cilantro if desired.
