four 5-inch lengths of French bread, split horizontally leaving the halves attached
1/3 pound Saga blue cheese, softened and the rind discarded
2 cups watercress sprigs
1 pound thinly sliced rare roast beef
1/4 cup mayonnaise
1 tablespoon drained bottled horseradish, or to taste

Steps:

  • Open the bread lengths, spread the cut sides with the blue cheese, and top the cheese with the watercress and the roast beef. In a small bowl combine well the mayonnaise and the horseradish and drizzle the horseradish mayonnaise over the roast beef. Season the sandwich with salt and pepper and close them, pressing them firmly.

2 eggs
1/2 cup mayonnaise
4 -5 mashed fully ripe bananas
1/2 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
1/2 teaspoon salt
3/4 cup brown sugar
1/2 cup chopped walnuts (optional)

Steps:

  • Whisk eggs, mayonnaise and bananas until blended. Add vanilla and stir.
  • Sift flour, baking soda, baking powder, cinnamon, nutmeg and salt in separate bowl.
  • Stir brown sugar into dry ingredients until blended.
  • Combine dry ingredients into banana mixture and stir until just moistened (important to not overstir!).
  • Fold in walnuts.
  • Bake 1 hr - 1hr 15 minutes Or until toothpick inserted in centre comes out clean.

3 tablespoons sour cream

Accompaniment: toasted French bread

Steps:

  • With a mortar and pestle or in an electric spice grinder grind caraway seeds fine and in a small bowl stir together with mayonnaise, sour cream, dill, and Cognac.

This idea popped into my head a few days ago, and I am still experimenting with it. But this is the basic recipe.....my family really enjoyed it.

3/4 c water, warm
2 tsp active dry yeast
1 tsp salt
4 Tbsp mayonnaise
1/2 c milk
3 1/2 c bread flour

Steps:

  • 1. In a medium sized bowl, add warm water. Add the sugar, make sure it dissolves, add the yeast, and make sure it dissolves. Let stand for 10 minutes, until it is creamy in color and foamy.
  • 2. Add salt, mayonnaise, milk, and 2 cups of the bread flour. Start adding flour 1 tbsp at a time, until the dough chases the spoon around the bowl. Turn dough onto floured surface, and knead for 6 to 8 minutes.
  • 3. Place dough into a greased bowl. Cover with a damp dish towel, or plastic wrap, let rise in a warm area for 1 hour. Punch dough down, knead again for 2 minutes. Place in a greased 9 x 5 loaf pan. Let rise again for another 40 to 45 minutes. Bake for 35 minutes at 375 degrees.

CUCUMBER, SWEET ONION, AND MINT WITH CURRIED MAYONNAISE ON PEASANT BREAD

1/2 cup mayonnaise
1 teaspoon curry powder, or to taste
8 slices of peasant or country-style bread
1 cucumber, peeled if desired and sliced thin diagonally
1 sweet onion, such as Vidalia, sliced thin
1/2 cup fresh mint leaves

Steps:

  • In a small bowl combine well the mayonnaise and the curry powder and spread the curried mayonnaise on one side of each slice of bread. Layer half the bread slices with the cucumber, the onion, and the mint, sprinkle the mixture with salt and pepper to taste, and top the sandwiches with the remaining bread slices, pressing them firmly.
