FLUFFY CORNMEAL PANCAKES

1 cup finely ground cornmeal ((5 ounces cornmeal; 142 grams))
1 cup all-purpose flour ((4 ½ ounces; 127 grams))
3 tablespoons granulated sugar ((1 ⅓ ounces 38 grams))
1 tablespoon baking powder
½ teaspoon salt
2 large eggs ((out of shell: about 4 ounces; 113 grams))
1 cup milk ((8 ounces; 226 grams))
¼ cup vegetable oil
Nonstick cooking spray or vegetable oil for greasing the griddle
Butter
Maple syrup

Steps:

  • Make the Batter. Whisk cornmeal, flour, granulated sugar, baking powder, and salt together in a medium mixing bowl. Add the eggs, milk, and vegetable oil. Whisk until smooth.
  • Heat the Griddle. Lightly oil a nonstick griddle. Heat griddle over medium-high heat. P
  • Cook the Pancakes. Pour batter, approximately ¼ cup, onto griddle. Batter should sizzle when it hits the pan. Cook for approximately 3 minutes. Flip pancakes when bubbles appear all over the surface of the pancake and begin to pop. The pancake should begin to look almost dry. Flip and cook another 1 to 1 ½ minutes.
  • Serve. Serve with butter and syrup, if desired.
  • Keep Pancakes Warm: To keep warm, preheat oven to 200 degrees F. Place cooked pancakes on a parchment-lined baking sheet.

1/3 cup yellow cornmeal
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 egg
1 1/4 cups milk
1 tablespoon bacon fat, melted
2 slices bacon, cooked and crumbled

Steps:

  • Mix together cornmeal, flour, salt, and baking powder.
  • In a separate bowl, beat the egg, add milk, then bacon fat.
  • Stir this mixture in with the dry ingredients, mixing well. The batter should be fairly thin; add more milk if necessary. Finally, mix in bacon.
  • Cook pancakes in a skillet or griddle and serve with butter and maple syrup.

Make pancakes with cornmeal! It tastes amazing and was originally made by my great-grandma Mary who made them when she couldn't afford anything more than cornmeal.

½ cup white sugar
½ cup oil
2 large eggs
2 cups all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup milk, or more as needed
1 tablespoon vegetable oil

Steps:

  • Combine sugar, 1/2 cup oil, and eggs in a bowl. Stir in flour, cornmeal, baking powder, baking soda, and salt. Stir in 1/2 cup milk. Add more milk, 1 tablespoon at a time, and stir to desired thickness.
  • Heat vegetable oil in a large skillet over medium-low heat. Working in batches, spoon 1/4 cupfuls of batter onto the hot skillet; cook until bubbly on top and golden brown on the bottom, about 3 minutes. Flip and cook until golden on the bottom, 2 to 3 more minutes. Remove to a plate and repeat to make remaining pancakes.

I remember my Gramma making something like this when I was small. It tasted like a mix of pancake with cornbread, I remember best part was the bits of bacon. This may not be Gramma's mix, but it sure sounds good.

1 1/4 - cup milk (approx.)
1 tbs - melted bacon fat
2 - strips bacon cooked and crumbled

Steps:

  • Mix together cornmeal, flour, salt, baking powder. Beat the egg; add milk, then add the bacon fat.
  • Stir this mixture slowly into dry ingredients, mixing well. The batter should be fairly thin. Mix in bacon. Cook in skillet or on a griddle. Serve with butter and your choice of syrup.
  • Recipe may be doubled & more bacon added to taste.
