EASY STRAWBERRY BANANA SALAD
This recipe is so simple, it's almost not a recipe. But I absolutely LOVE it!! It's perfect as a refreshing side dish to any BBQ or summer meal. It's also great as a topping on Angel food cake or shortcake or even ice cream!! Just takes minutes to make!

Steps:
- Add strawberries to a bowl and add sugar. Stir slightly.
- Let sit to macerate for 10 minutes or until juices form. (You don't really even have to let it sit very long. Just until the sugar is dissolved.).
- Add bananas and stir gently to coat.
- Allow to sit for up to 30 minutes (but you can eat right away).

BANANA NUT SALAD

- MIX together peanut butter, honey and mayonnaise in a small bowl, until well blended.
- PEEL and slice bananas. Dip into lemon juice. Blot excess lemon juice with paper towel. Divide lettuce and bananas on two plates. Dollop salads with dressing. Sprinkle with nuts. Serve immediately.

Someone had posted a request for a recipe of this sort and it jogged my memory back to a salad my mom used to make. The mayo and coconut are certainly optional and the banana could be topped with something else.

- Slice bananas in half lengthwise.
- Spread peanut butter on 4 of the banana halves than put the top back on, like a sandwich.
- Place the lettuce leaves on 4 salad plates and put the banana/peanut butter "sandwich" on top of the lettuce.
- Spread a thin layer of mayonnaise on top of the banana.
- Sprinkle with coconut.

DRESSED BANANAS
When I was a kid I never went to a card party or gathering of any kind without seeing dressed bananas on the table. My Dad alone would go through at least a banana and a half!! People would ask my mother to make these and bring them as a dish for potluck parties, so I was in charge of smearing on the mayo. They sound odd when you read the ingredients, but just give them a try. I loved them then, and I have to admit, I make them every now and again now! Of course now I choose a healthier mayo :)

- Chop the peanuts into small pieces. They should be like the chopped peanuts you sprinkle on a sundae.
- Peel the banana, and cut into 3 pieces. Smaller bananas will make 2 sections.
- Rub the outside of the banana with a thin coat of mayo. Just enough for the peanuts to stick. Too much will just make them a goopy mess. You can use a brush for this, but I always just used my nice clean hands. It's just enough to make the banana shiny with the mayo coating. You may not use the entire 1 Tbsp of mayo, so don't worry if you have some leftover.
- Roll the banana in the chopped peanuts to completely cover. There should be an even coating of peanuts on the banana pieces, in a single layer.
- Put them on the serving plate, and wrap the plate with plastic wrap. Put them in the fridge until ready to eat. These are best if eaten the same day so the nuts stay crunchy!

- Combine Cool Whip and Miracle Whip in a bowl. Slice bananas. Line bottom of bowl with some sliced bananas. Cover with a layer of cool whip mixture, then some peanuts.Repeat this process until bowl or dish is full. End with cool whip and nuts on top. Refrigerate until ready to serve.
