MAUI STEAK
When I cooked this for the first time I thought I was manufacturing shoe leather - not so the steak turned out tender and very tasty. We can buy "Maui Ribs" already in the marinade but I prefer this recipe. Although there is sugar & vinegar in the marinade it does not come through as sweet & sour. Brown Sugar substitute worked well. I don't know why it's called Maui Steak! So I had a wing steak in the freezer made the marinade and let the steak sit in it for 2 days in the fridge - result lovely tasty tender steak

Steps:
- Salt& Pepper the steaks ,( what I refer to as a steak here is the 3/4" cut of the boneless short ribs), place on a rack over a baking sheet and roast in a 350F oven for 45 minutes.
- Combine the marinade ingredients Soy, oil, sugar, vinegar, ginger in a zip lock bag.
- Allow steaks to cool and then place them in the marinade.
- Place in fridge and allow then to marinate overnight or for 24 hours.
- Heat oven to 275°F.
- Place steaks and marinade in an oven proof dish, seal with foil and bake for 1 1/2 hours they should be fall apart tender.
- NOTE: if there is no marinade left add a bit of sherry or water before you seal the dish so there is some moisture in the dish with the steaks.
PHILLY CHEESE STEAK WITH MAUI ONION AND CHEESE WHIZ

Steps:
- Begin by cooking the meat on a griddle or in a large skillet until browned. Season with salt and pepper.
- Saute the onions in the same skillet until caramelized and browned, about 10 minutes.
- Heat the cheese whiz in the microwave.
- To serve, slice the rolls, place the meat in the roll, top with the caramelized onions, and spread the cheese whiz on top.
PULEHU STEAK OR PORK WITH MAUI ONION FINADENE SAUCE
Steps:
- Stir together all finadene ingredients (through chopped garlic) in a small bowl. Let stand at room temperature 1 hour.
- Set skillet to medium-high; whisk in mirin and sake until smooth. Add soy sauce, brown sugar, sherry vinegar, garlic, scallions, ginger, and peppercorns; cook, stirring often, 15 minutes. Set sauce aside for basting.
- Sprinkle steak pieces with salt and pepper. Thread steak pieces onto 8 (12-inch) skewers. Brush with basting sauce; let stand at room temperature while grill preheats.
- Preheat grill to very high [500°F and up].) Place skewers on oiled grates. Grill, uncovered, flipping and basting with sauce until steak pieces are charred in some spots and a meat thermometer registers 125°F, about 8 to 10 minutes for medium-rare.
PULEHU STEAK TIP SKEWERS WITH MAUI ONION FINADENE SAUCE
Steps:
- Stir together all finadene ingredients (onion, vinegar, soy sauce, chile, fish sauce, oilive oil, garlic) in a small bowl. Let stand at room temperature 1 hour.
- Heat skillet to medium-high; whisk in mirin and sake until smooth. Add soy sauce, brown sugar, sherry vinegar, garlic, scallions, ginger, and peppercorns; cook, stirring often, 15 minutes. Pour mixture through a fine wire-mesh strainer into a bowl; discard solids. Set sauce aside for basting.
- Sprinkle steak pieces with salt and pepper. Thread steak pieces onto 8 (12-inch) skewers. Brush with basting sauce; let stand at room temperature while grill preheats.
- Preheat grill to very high [500°F and up].) Place skewers on oiled grates. Grill, uncovered, flipping and basting with sauce until steak pieces are charred in some spots and a meat thermometer registers 125°F, about 8 to 10 minutes for medium-rare.
- Transfer skewers to a cutting board, and let steak rest 5 to 10 minutes. Serve with finadene.
