Number Of Ingredients 8

1 c fine corn meal
1 c sifted flour
3/4 c brown sugar
1/2 tsp salt
3/8 tsp baking soda
1 beaten egg
1/2 c buttermilk (or sour milk)
1/3 c sour cream

Steps:

  • 1. Heat the oven to 425 degrees F. Grease 12 medium sized muffin pans, or a sheet pan about 7" X 12".
  • 2. Sift together corn meal, flour, salt and soda into your mixing bowl. Stir in the brown sugar.
  • 3. Beat the egg and mix with milk and cream. Pour into dry ingredients and stir until flour is dampened.
  • 4. Turn into pan and bake in 425 degree oven. Muffins require about 15 minutes; sheet pan about 20 minutes.

1 cup cornmeal
½ cup milk
½ cup shortening
½ cup white sugar
1 ⅓ cups cake flour
2 ½ teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease thoroughly an 8 inch square cake pan.
  • Combine cornmeal and milk. Sift flour, baking powder, and salt. Stir together the egg and milk.
  • Cream shortening, and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture alternately. Blend in cornmeal mixture.
  • Bake for 40 to 45 minutes. Serve hot, with maple syrup.

Ingredients:
vegetable oil cooking spray
1 cup unbleached white flour
3/4 cup stone-ground yellow cornmeal
1/3 cup sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 egg
1 cup milk
3 tablespoons butter, melted

Steps:

  • Directions: Preheat oven to 425 degrees F. Spray an 8-inch square baking pan with oil. Sift together the flour, cornmeal, sugar, baking powder and salt into a medium bowl. Break the egg into a second bowl and whisk it well. Whisk in the milk and melted butter. Combine the wet and dry ingredients with as few strokes as possible and transfer batter to prepared pan. Bake until golden brown, about 20 to 25 minutes.

Yield Makes 8 to 10

Number Of Ingredients 5

1 cup stone-ground white cornmeal
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups boiling water
Unsalted butter, for griddle

Steps:

  • Preheat an electric griddle to 380 degrees. or place a griddle pan or large skillet over medium-high heat.
  • In a medium bowl, whisk together cornmeal, sugar, and salt. Add boiling water, and mix to combine. The batter will be thick. Using a tablespoon, drop the batter onto the griddle 2 inches apart for each johnny cake. Let cook for 6 minutes, turn and cook 5 minutes more.

These cakes are found on many street corners in Belize, often deep fried. They are originally believed to be called Journey Cakes as they are suitable for trips, keeping for weeks. This is not the crumbly cornmeal version often found in the southern states. This baked version is from Africa Bites and uses coconut milk. Enjoy!

Number Of Ingredients 6

3 cups all-purpose flour
1 teaspoon salt
1 1/4 cups coconut milk (plus extra to brush on to)
3 teaspoons baking powder
4 tablespoons shortening or 4 tablespoons unsalted butter
2 tablespoons sugar (optional)

Steps:

  • Preheat the oven to 375°F.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt; add shortening or butter, and, using your fingers, rub into flour mixture to form pea-size crumbles.
  • Gently stir in coconut milk into dry ingredients until all is moistened and holds together (like a ball).
  • Place on a floured board and knead for about a minute.Divide dough into about 12 pieces and roughly shape into ball.
  • Flatten each ball to ½ inch thick, place on cookie sheet and lightly poke the top of each ball with a fork, until covered with tiny holes. Brush with coconut milk.
  • Bake at 375° for 15-18 minutes or until lightly browned.
  • Remove and serve warm.

A favorite recipe from my Grandmother's recipe box. Raised in western Micjigan, I always thought that cornbread should be sweet. I found, when I settled in the South, that it 'taint always so. But I still like it better that way!

1 cup cornmeal
1 cup milk
1 teaspoon salt
1 egg
3 teaspoons baking powder
3 tablespoons honey
3 tablespoons cooking oil

Steps:

  • Sift together flour, cornmeal, baking powder and salt.
  • Beat egg.
  • Add sugar.
  • Heat milk to lukewarm.
  • Add honey to milk.
  • Add the beaten egg and oil.
  • Add the dry ingredients; mix until smooth.
  • Bake in greased muffin pan at 400 degrees for 20 minutes.
  • Can also be baked in a 9x9" pan.
