HAM & CHEESE STUFFED MEATLOAF
An easy to prepare meatloaf that is a little different, even my NON-eating meatloaf daughter WILL eat this one. Very easy to prepare, great leftover for sandwiches.

Steps:
- Combine all ingredients except cheese and ham.
- Flatten meat mixture on foil-lined jelly roll pan.
- Place ham slices evenly on top of meat mixture, sprinkle with grated cheese.
- Holding one end of the foil, roll up meat like a jelly roll.
- Remove foil, slide meat roll to center of pan, pat seams closed.
- Bake at 350 for 1 hour.
- Remove from oven, and allow to sit in a warm spot for five minutes before slicing.

- Heat oven to 375ºF.
- Place first 5 ingredients in large bowl. Add half each of the cheese and barbecue sauce; mix well. Press half onto bottom of 9x5-inch loaf pan.
- Cover with half the ham, remaining cheese and remaining ham; top with remaining ground beef mixture. Shape into loaf.
- Bake 1 hour 5 min. or until done (160ºF), brushing with remaining barbecue sauce after 50 min. Let stand 5 min. before slicing.

HAM AND CHEESE LOAF

Steps:
- Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
- Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
- On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
- Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
- Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
- Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

This is a recipe that my grandmother handed down to me and now it is a family favorite! My kids love it as well as everyone that has tried it.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the ground beef, bread crumbs, eggs, and onion. Season with garlic powder, salt and pepper. Pat the meat mixture out onto a piece of waxed paper, and flatten to 1/2 inch thick. Lay slices of ham onto the flattened meat, and top with slices of cheese. Pick up the edge of the waxed paper to roll the flattened meat up into a log. Remove waxed paper, seal the ends and seam, and place the loaf into a 9x5 inch loaf pan.
- Bake for 1 hour and 15 minutes in the preheated oven, or until the loaf is no longer pink inside.

I tried this recipe years ago when I first started cooking. It's been a constant hit since then and is virtually foolproof. Unlike regular meatloaf, this one stays juicy and tender with excellent flavor. Serve with garlic mashed potatoes and steamed carrots for an old fashioned comfort food dinner.

- Preheat oven to 350 degrees F (175 degrees C). Lay a 24-inch long sheet of parchment paper down on a work surface.
- Mix together the ground beef, bread crumbs, onion soup mix, barbecue sauce, garlic, egg, flour, and black pepper in a bowl until well combined. Place the meat mixture down on the piece of parchment paper, and pat it into a rectangle shape about 10x16 inches. Lay deli ham slices down on the meat, keeping a 1-inch margin around all sides of the rectangle. Sprinkle Swiss cheese over the ham. Carefully lift up the short edge of the meat square with the parchment paper, and gently nudge and roll up the meat. Seal the edges and ends well. Place the meat roll into a 9x13-inch baking dish.
- Bake in the preheated oven for 45 minutes.
- While the roll is cooking, mix together ketchup, mustard, brown sugar, and soy sauce, stirring until sugar has dissolved. Remove the roll from the oven, and spread the ketchup mixture over the roll. Return to the oven for 15 more minutes.

- Preheat oven to 350°. Unroll dough onto a greased baking sheet; top with the ham, onions and cheeses. I saw this recipe on a TV show on Amish cooking in the 1980s, and I've adapted it to suit our tastes. The Swiss cheese and bacon make it very satisfying on cold fall and winter evenings.

- In a skillet, cook bacon over medium heat for 2 minutes on each side or until cooked but not crisp. Drain on a paper towel; set aside. , In a bowl, combine the egg, crackers, 4 tablespoons cheese, onion, garlic, salt, sage and pepper. Crumble beef over mixture and mix well. SWEET-GLAZED SPIRAL MEATLOAF W/HAM AND SWISS
This came out WONDERFUL, and I'm not big on meatloaf!! I glazed it nicely with dark brown sugar and honey mustard. It's filled with canadian bacon and swiss cheese! Surprisingly good!!!!!

Steps:
- In large bowl combine first 7 ingredients til very well mixed.
- Place mixture onto a sheet of foil.
- Press out to a flat, even 8"x10" rectangle.
- Top evenly with 6 slices canadian bacon to within 1/2" of edges.
- Do the same then with the swiss cheese.
- Roll up starting from long side, lifting and using the foil to help you roll it all up.
- Roll up tightly.
- Pinch ends and seam closed very well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
- Sprinkle with a little coarse ground pepper.
- Bake in 350º oven for 1 hour.
- Coat with glaze during last five minutes of baking time.
- Glaze: mix together honey mustard and dark brown sugar til syrupy.
- *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
- **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.
