Number Of Ingredients 13

2 lbs ground beef (93% lean)
1/2 lb pork sausage (any style/flavor)
2 slices bread (wheat or white)
3/4 cup seasoned stuffing mix (dry)
1/2 cup milk
2 eggs
1/2 onion, chopped
salt
pepper
sage
garlic powder
red pepper flakes
parsley flakes

Steps:

  • Preheat oven to 350F degrees.
  • Tear bread into small pieces& place into large mixing bowl.
  • Add dry stuffing mix& milk.
  • Let sit until all or most of milk is absorbed.
  • Add ground beef, sausage, onion& seasonings.
  • Add eggs& combine with meat mixture.
  • Mix with hands in order to get even consistency.
  • Place meat mixture in pan,& form into one large loaf or smaller individual loaves.
  • Bake for approximately 1 hour.
  • During last 5-10 minutes, place under broiler to brown top.

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

My grandma gave me this recipe when I was a little girl. I have been making for years. The addition of cinnamon to the glaze makes it a little different. People always love this meatloaf.

2 pounds ground beef lean 80/20
2 eggs
1/2 c ketchup
1/2 onion
1/2 c dry oatmeal
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp salt
GLAZE
1 c ketchup
1/4 c brown sugar
1/2 tsp cinnamon
optional dash of red pepper flakes or cayenne

Steps:

  • 1. Heat oven to 350. Chop onion and beat eggs. Mix all meatloaf ingredients and pat into a round pan to form a whole in the middle of the meatloaf ( this is to drain the fat) so that it is shaped like a doughnut. Can also be placed on a broiler pan. Place in oven and cook for 30 minutes. In the meantime mix glaze ingredients and set aside. Mix to taste. More or less sugar and cinnamon can be added according to your tastes. You can also use Splenda for lower calorie in place of brown sugar. After 30 minutes, take meatloaf out of oven and spoon the grease that has collected in the center out of the meatloaf. Spread glaze over meatloaf and put back into the oven for 10 minutes. Note: This can also be cooked in the microwave in a microwave safe round shaped pan for 10 to 15 minutes to save time.

The sweetness of the sauce makes this recipe really special. I prepared it without the optional green chilies and jalapenos, but may give that a try next time!

Number Of Ingredients 12

1 1/2 lb lean ground beef (grass-fed preferred)
1 - 8 oz can(s) tomato sauce
1/2 sleeve ritz crackers (crushed) - do not substitute
1/2 Tbsp garlic powder
1/2 bell pepper (chopped)
1/2 onion (chopped)
4 slices sandwich cheese (cut in small pieces)
1 egg
GLAZE FOR TOP
1/2 c ketchup
1/4 c brown sugar
1 tsp prepared mustard

Steps:

  • 1. Beat egg and blend in the tomato sauce and garlic salt. Add cheese, chopped onion, bell pepper, RITZ crackers, and ground beef. Thoroughly squish together with hands (yes, it is messy) If you don't want to get your hands messy, do as my friend did - put it all in a food processor and mix.
  • 2. Spread in a 1 1/2 quart baking dish.
  • 3. Bake in preheated 350 degree oven for 50 minutes.
  • 4. Remove and drain off fat. Poke holes in the top and pour glaze on top.
  • 5. Return to oven and bake 10 minutes.
