½ small Head Red Cabbage ((4 cups finely sliced))
1 Small Onion (, thinly sliced, see note 1)
1 Large Carrot ((1 cup shredded))
1 Large Celery Stalk ((1/2 cup finely diced))
¾ cup Mayonnaise
½ teaspoon Celery Salt (, see note 2)
¼ teaspoon Black Pepper
1 tablespoon Apple Cider Vinegar (, see note 3)
2 tablespoons Fresh Lemon Juice (, or to taste)

Steps:

  • In a large mixing bowl, combine all the ingredients and give everything a good mix.
  • You can enjoy it right away or chill it before serving (see note 4).

3 to 4 cups shredded cabbage
1 cup shredded carrots
1 cup thinly sliced green pepper
1/2 cup mayonnaise
1/4 cup lemon juice
1 to 2 tablespoons sugar
1 tablespoon prepared mustard
1 teaspoon celery seed
1 teaspoon salt

Steps:

  • In a large salad bowl, toss the cabbage, carrots and green pepper. In a small bowl, whisk the remaining ingredients. Pour over cabbage mixture and toss to coat. Chill for at least 2-3 hours.

2 teaspoons celery salt
1/2 to 1 teaspoon red pepper flakes
1 tablespoon dried Mexican oregano crushed
2/3 cup olive oil
1/3 cup red wine vinegar

  • Combine all of the ingredients in a large bowl. Stir and toss well. Can be stored in the refrigerator 2 days.

This is a delicious coleslaw served at Zehnders Restaurant in Frankenmouth, Michigan. It is taken from "The Flavours of Frankenmouth" written by Chef John Zhender. It is Zehnder's Most Requested Recipe.

6 ounces half-and-half (You can also substitute sour cream for half and half if you desire a thicker dressing)
1 1/2 cups salad dressing
7 ounces white vinegar
1 1/2 cups sugar
1/2 tablespoon Zenders chicken seasoning poultry seasoning
1 head cabbage, finely shredded
1/4 cup carrot, shredded,per lb of cabbage
1/4 cup onion, finely chopped,per lb. of cabbage
1/4 cup red cabbage, shredded,per lb. of cabbage
1/4 cup green pepper, finely chopped,per lb. of cabbage (I also sometimes use red pepper too)

Steps:

  • Mix first 5 ingredients until smooth.
  • (Zender's seasoning can be purchased at the restaurant or by mail order.) It contains garlic and paprika along with some other spices.
  • I use the Zender's seasoning.
  • Store in refrigerator.
  • Chill before using.
  • Shred cabbage.
  • Add carrots, onions, red cabbage and green peppers.
  • Add dressing until it coats the cabbage but doesn't make it soggy.
  • Recipe may be halved as it makes a large quantity, otherwise.

MARY'S "DELI SLAW"



Mary's

I got a newsletter, that had a simple "3" ingredient slaw recipe in it. It went like this: 4 to 5 cups finely chopped or shredded Cabbage (approximately 1 whole small head) 1 cup white vinegar and 1 cup sugar. Mix together well in a bowl, put a lid on it and chill overnight. I suggested to a friend, we could try the same method as Helene Mulvihill for her "Deli Mac Salad". She boils the vinegar and sugar until the sugar dissolves into the vinegar. My friends, Mary, said, "Hey Cin I make this slaw all the time 'except' I use a few more ingredients". I call it: Mary's "Deli Slaw"

FOR DRESSING:
1 cup(s) white vinegar
1 cup(s) sugar
1/2 teaspoon(s) salt
1 teaspoon(s) mustard seed
1 teaspoon(s) celery seed
SLAW INGREDIENTS:
1 small head of cabbage (chopped or shredded)
2 stick(s) carrot (finely chop or julienne)
1/2 cup(s) sweet onion (finely chopped or grated)
1/2 cup(s) green bell pepper (diced)

Steps:

  • Chopped, shred, julienne, grate or dice....your cabbage, carrots, onion, green bell pepper and place in a bowl that has a tight fitting lid.
  • In a heavy bottom saucepan heat vinegar and sugar over medium until sugar totally dissolves.
  • Add in salt, mustard and celery seeds. Remove from heat and let cool completely.
  • Then pour over slaw mixture, mix thoroughly and store in container, (glass covered bowl will do).
  • Place in refrigerator to chill, stir when ready to serve.
  • This will last a long time in the refrigerator, and is a good alternative slaw to take on a summer picnic because it does not have any mayonnaise in it.
  • It's great just as a side dish or can be put on any kind of barbecued sandwiches, such as pork or beef.
  • It taste much better the next day, or make it early that morning and enjoy for supper.
