FLUFFY CRANBERRY DELIGHT

This was originally my daughter's recipe, and she or I will make it for one or more of our holiday get-togethers. It can be served as a fruit salad along with the meal or as a light dessert. It's particularly pretty in a cut-glass bowl on a buffet. -Ruth Bolduc, Conway, New Hampshire

4 cups cranberries
1-1/2 cups sugar
3/4 cup water
1 envelope unflavored gelatin
1/4 cup lemon juice
2 tablespoons orange juice
1-1/2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. Chill until set.

Cranberry Celebration Salad: Copycat Krogers Recipe image

15 oz. pineapple, crushed
1 can (15 oz) cranberry sauce with whole cranberries
½ cup cranberry juice
2 tabelspoon lemon juice
1 package (3 oz) raspberry (or cherry) JELL-O gelatin
½ cup walnuts, chopped medium fine

Steps:

  • Drain the pineapple and reserve juice.
  • In a pot, blend pineapple juice, cranberry juice and lemon juice together. Bring to a boil and add Jell-O powder, stirring thoroughly!
  • Add the can of cranberry sauce and combine well
  • Transfer to a bowl and set in the fridge for approximately 1.5 hours or until the mixture begins to set.
  • Add walnuts and pineapple. Stir well.
  • Return to the fridge to set. The mixture will not set up as firm as regular gelatin does.
  • Before serving, give mixture a good stir.

1 (12 ounce) package frozen cranberries
1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 (10 ounce) package miniature marshmallows
1 cup sugar
1 pint heavy whipping cream

Steps:

  • Put cranberries in a food processor and blend until well chopped. Transfer cranberries to a large bowl, and mix in pineapple, pecans, marshmallows and sugar.
  • In a medium bowl, beat cream with an electric mixer until stiff peaks form. Fold whipped cream into cranberry mixture. Chill until ready to serve. (Or, freeze for 2 hours before serving.)

1 (4 ounce) can crushed pineapple
2 (3 ounce) packages strawberry Jell-O gelatin dessert
1 (16 ounce) can canned whole cranberry sauce
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1 cup evaporated milk
1 teaspoon vanilla
1 tablespoon unflavored gelatin
1/4 cup cold water

Steps:

  • Drain pineapple, reserving syrup; add water to syrup to make 2 1/2 cups. Place 1 1/4 cups of syrup mixture in saucepan and bring to a boil. dissolve 1 package of jello in boiling syrup mixture. Add 1/2 drained pineapple and 1/2 cranberry sauce. Mix well and pour into a 9 x 13 dish. Chill until firm.
  • Beat cream cheese with sugar until smooth. Gradually beat in evaporated milk and vanilla. Soften unflavored gelatin in the cold water and heat to dissolve. Blend gelatin into cheese mixture, pour over firm Jello layer. Chill until firm.
  • Boil remaining 1 1/4 cup syrup mixture, dissolve remaining package of jello, add remaining crushed pineapple and cranberry sauce. Chill until room temperature. Pour very gently over cheese layer and chill until firm. Cut into squares.

1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise (regular or light)
2 tablespoons granulated sugar
1 (16 ounce) can whole berry cranberry sauce
1 (8 ounce) can crushed pineapple (undrained)
3/4 cup pecans, chopped
1 cup heavy cream (whipped)

Steps:

  • In a large mixing bowl, combine cream cheese, mayonnaise and sugar; mix well. Stir in cranberry sauce, pineapple with its juice, and pecans. Fold in whipped cream. Pour mixture into an 8x8x2 inch pan. Freeze until firm. Let thaw 5 minutes before serving.

1 bag (1 lb.) fresh cranberries
1 cup sugar
1 cup water
1 package (3 oz.) Jell-O Raspberry Gelatin
1 can (15 oz.) crushed pineapple, drained
2 Tablespoons lemon juice
1 cup finely chopped celery
1 cup chopped English walnuts

Steps:

  • Boil fresh cranberries with sugar in 1 cup water until they pop and a syrup is produced. Let cool.
  • Drain 1 cup of the cranberry syrup/juice from the cranberries. Mix this cup of syrup with the Raspberry Jell-O over low heat until dissolved. Remove from heat. Cool a bit.
  • Then stir in the rest of the cranberries and syrup into the cooled Jell-O mixture. Add the crushed pineapple and lemon juice. Cool.
  • Add the chopped celery and chopped walnuts. Store in refrigerator. It won't setup like Jell-O but the sauce will be thick. Serve as a side compliment to chicken or turkey dishes.

6 - oz raspberry jello
1 1/2 - C boiling water
20 - oz undrained crushed pineapple
16 - oz cranberry sauce
3/4 - C orange juice
1 - C chopped pecans(I omit)
8 - oz cream cheese
1 - C sour cream (I use non-fat)

Steps:

  • Dissolve jello in water. Add next three ingredients. Chill until thickens. Fold in pecans(I omit) and place in a 9x13 dish. Chill. Whip cheese and sour cream. Spread over the top. Serves 10
