Steps:
- Heat vegetable oil in a large stock pot over medium heat. Add onion and garlic; cook and stir until brown and tender, about 5 minutes. Stir in 2 cans of chicken broth and canned tomatoes. Add fresh tomatoes.
- Mix Anaheim chile peppers, jalapeno pepper, cumin, chili powder, and pepper into the pot. Stir in chicken. Bring to a boil; reduce heat to medium and simmer soup until flavors combine, about 20 minutes.
- Ladle soup into serving bowls; twist 1 lime wedge into each bowl. Top with corn chips, sour cream, Cheddar cheese, avocado slices, and cilantro.

MARRIOTT'S WORLD FAMOUS TORTILLA SOUP
This recipe was obtained from the Marriott Hotel on the world famous San Antonio RiverWalk, San Antonio,TX one year while at a conference. It is good and easy to make. The best part is it will not cost $10.95 a bowl when you cook and serve it at home.

- Bring the chicken to a boil in the chicken stock. Once the chicken is cooked, remove it from the chicken stock and add the tomatoes, onion, picante sauce, salt, pepper, and cumin. Let broth simmer for 10-15 minutes. Dice up the cooked chicken and add to broth. Simmer for another 10-15 minutes. One your tortilla soup is done put in bowls and top with Corn tortilla strips, guacamole and cheese. Serve and enjoy!
- Note: You can make corn tortilla strips like the Marriott's by cutting corn tortillas in strips and deep frying in olive oil until crispy, but I usually just use the store bought tortilla chips and crunch them up into the bowl.
THE MANSION'S CHICKEN TORTILLA SOUP
This soup is almost addictive! Tried to find something to match the Puerto Vallarta but I think this may be better! LOVE IT!!!!

- Heat oil in a large saucepan over medium heat. Saute tortillas with garlic and epazote over medium heat until tortillas are soft.
- Add onion and fresh tomato puree and bring to a boil. Add cumin, chili powder, bay leaves, canned tomato puree and chicken stock. Bring to a boil again, then reduce heat to simmer. Add salt and cayenne pepper to taste, and cook stirring frequently for 30 minutes. Skim fat from surface, if necessary.
- Strain and pour into warm soup bowls. Garnish with an equal portion of chicken breast, avocado, shredded cheese and crisp tortilla strips. Serve Immediately.

DIONICIA'S FAMOUS CHICKEN TORTILLA SOUP
This is simply the BEST of the BEST!! The recipe comes from Ernesto's Restaurant in Puerto Vallarta, Mexico. If you find a better recipe, I sure would like to know about it.

Steps:
- Boil tomatoes 10 minutes.
- Place tomatoes and next 8 ingredients in blender and blend for 4 minutes.
- Saute onion in oil and add blender contents by pouring through a mesh strainer.
- Add one quart of water to strainer and swirl.
- Put leftover ingredients from strainer in 1/2 cup of water, blend well and strain into pot.
- Add one more quart of water.
- Add chicken bouillon and chicken pieces and boil until chicken is cooked.
- Fry tortilla strips in oil until crispy.
- Heat 8-10 oz. of stock for each serving. Place one piece of chicken in stock to heat and then debone.
- Fill bowl with a handful of chips, 3-4 avocado slices, meat of one piece of chicken, cover with mozzarella cheese.
- Pour boiling broth over ingredients in bowl and serve.
