MARMALADE NUT BREAD
This is a very good quick bread. This is the recipe as I got it but I really prefer ginger marmalade in this. When I use the ginger marmalade I do not add the orange rind.

Steps:
- Sift together dry ingredients.
- Stir in remaining ingredients, except cream cheese, just until dry ingredients are moistened.
- Spoon mix into a greased 9 x 5-inch loaf pan.
- Bake at 350 degrees F. for 1 hour.
- Cool in pan 10 minutes.
- Remove from pan and cool completely on wire rack.
- Serve with cream cheese, if desired.

MARMALADE-NUT BREAD
This recipe was a mystery to me. I handwrote it on notebook paper, many years ago. It was in with many more recipes in my closet. I have no clue, where it came from. And, I have never made it, but it sounds yummy! I'd say, I need to make it soon!

- Preheat oven to 350°F. Spray 2 loaf pans (8 1/2 x 4 1/2 x 2 1/2 inches) with cooking spray.
- In a large mixing bowl, thoroughly stir together flour, sugar, baking powder, and salt. Add walnuts; toss to coat evenly.
- In a medium bowl, beat egg slightly; stir in marmalade, orange juice, and vegetable oil. Add flour mixture to egg mixture. Stir only, until dry ingredients are moistened. Divide batter, evenly, between the 2 prepared loaf pans.
- Bake loaves 1 hour, or until tests clean with wooden pick, inserted in centers. Cool in pans on rack for 10 minutes; remove from pans; cool thoroughly on rack. Wrap loaves tightly in foil. Allow flavors to mellow overnight, before serving.
