CHICKEN FRIED STEAK (COUNTRY FRIED STEAK)

Crispy Oklahoma-style country fried steaks with thick white peppery gravy! A classic diner recipe you have to try at home.

3 pounds tenderized cube steak ((8 pieces))
2 cups all-purpose flour
4 tablespoons cajun seasoning
2 1/2 teaspoons baking powder
4 cups whole milk, (divided)
4 large eggs
3 tablespoons Worcestershire sauce
6 tablespoons butter
Salt and pepper
Oil for frying

Steps:

  • Preheat the oven to 200 degrees F. Pat the cube steak thoroughly dry with paper towels. Then gently stretch the steaks to make them thinner, or better yet, using a meat tenderizing hammer to pound the steaks extra thin. Be sure not to pull or pound so hard that they break. Try to reach 1/4 inch consistency throughout each steak.
  • In a medium bowl mix the flour, Cajun seasoning, and baking powder together. In another bowl, whisk together 1 1/4 cup milk, eggs, and Worcestershire sauce.
  • Dip the steaks in the flour mixture. Shake them off, then dunk the steaks in the egg mixture. Shake off the drippings, then dunk back in the flour mixture. Shake off all excess flour. (Flour that falls off into the oil will burn and turn the oil dark.) Allow them to rest on a cutting board while the oil heats.
  • Place a large skillet over medium-high heat. Add enough oil to fill the skillet 1/4 inch deep. Once the oil in the pan is between 350-375 degrees F, gently place half the steaks in the hot oil and fry for 1-2 minutes per side. Use tongs to move the steaks to a paper towel-lined plate. Add additional oil to the skillet if needed, and repeat with the remaining steaks. Place the finished steaks in the oven to keep warm.
  • Once all the steaks are fried, carefully pour the oil into a tin can for disposal. Then wipe the skillet out with a paper towel. Place it back over medium heat and add the butter. Once melted, whisk in 1/3 cup of the remaining seasoned flour. Whisk until bubbling, then whisk in 2 3/4 cups of milk. Continue to whisk the gravy until it is thick. Taste, then season with salt and pepper as needed. Remove the gravy from heat. If the gravy starts to thicken too much, whisk in an additional 1/2 cup of milk.
  • Serve the steaks warm with gravy over the top.

1/2 cup Original Bisquick™ mix
1/2 cup buttermilk
1/2 cup Progresso™ garlic-herb bread crumbs
4 beef cube steaks (4 oz each)
1/3 cup canola or vegetable oil
1 cup thinly sliced onions
3 tablespoons Original Bisquick™ mix
2 cups half-and-half
2 tablespoons chopped fresh parsley

Steps:

  • In shallow dish, place 1/2 cup Bisquick mix. Into small bowl, pour buttermilk. In another shallow dish, place bread crumbs. Coat beef steaks with Bisquick mix. Dip each coated steak into buttermilk, then coat with bread crumbs.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add steaks; cook 6 to 8 minutes, turning once, until thoroughly cooked. Remove from skillet; cover with foil to keep warm.
  • In same skillet, cook onions over medium heat 5 to 7 minutes, stirring occasionally, until tender.
  • In tightly covered container, shake 3 tablespoons Bisquick mix and the half-and-half until blended. Pour into onions in skillet. Cook over low heat 2 to 3 minutes, stirring occasionally, until gravy is thickened. Pour gravy over steaks; sprinkle with parsley.

I received this recipe from a co-worker about 5 years ago. This is by far the best chicken fried steak I've ever had. I've made this numerous times for my picky eater son and my southern-raised better half, as well as other family and friends. I get nothing but rave reviews each time.

4 (1/2 pound) beef cube steaks
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon black pepper
¾ teaspoon salt
1 ½ cups buttermilk
1 egg
1 tablespoon hot pepper sauce (e.g. Tabasco™)
2 cloves garlic, minced
3 cups vegetable shortening for deep frying
¼ cup all-purpose flour
4 cups milk
kosher salt and ground black pepper to taste

Steps:

  • Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.
  • Heat the shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drain the fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible.
  • Return the skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with kosher salt and pepper. Spoon the gravy over the steaks to serve.

EDITED TO ADD recipe for Country Gravy that I found courtesy of RecipeLink.com. (I haven't tried this one yet, but it looks very easy and it was posted for someone who was in search of a copycat Denny's Country Gravy recipe.)

4 cube steaks
2 tablespoons corn oil
seasoning salt
2 -3 tablespoons red wine
2 cups Bisquick
1/4 lb butter, melted
1/3 cup cooking oil
salt and pepper, to taste
1 tablespoon butter
1 tablespoon flour
1 cup whole milk
1/2 teaspoon beef bouillon granules
1/8 teaspoon pepper
salt, to taste

Steps:

  • The night before, put the steaks in a single layer on a dish. Brush them on both sides with an even coating of corn oil. Dust them on both sides with a generous amount of seasoning salt. Drizzle each steak with wine.
  • Seal the dish in foil or plastic wrap and refrigerate it for about 24 hours prior to preparing the final dish.
  • Remove the steaks from the fridge and coat both sides well in the Bisquick. Season with salt and pepper, to taste.
  • Preheat the oven to 375°F.
  • Combine the butter with the oil in a large skillet until melted. Place the steaks in the skillet. Brown both sides of each steak, until crispy.
  • Transfer to a baking dish and seal in foil. Bake at 375 F for about 30 minutes.
  • Top each steak with prepared country gravy.
  • FOR COUNTRY GRAVY: Melt butter in medium saucepan over medium heat. Whisk in flour until well blended, cooking 1 minute.
  • Gradually whisk in the milk. Bring to a boil. Boil for 1 minute, whisking constantly.
  • Reduce heat to medium-low. Add bouillon granules, pepper and salt.
  • Simmer for 2 to 3 minutes, stirring occasionally.
